Steps:
- Cook the macaroni in a large pot of boiling salted water until done, about 5 to 7 minutes. Drain and toss it with 2 tablespoons butter; set aside.
- Heat the oven to 350 degrees F.
- Coat a large baking dish with 1 tablespoon butter and set it aside. Put the milk into a saucepan and add the clove studded onion, garlic, bay leaf, thyme, and mustard. Warm over medium low heat until the milk starts to steam, about 10 minutes. Remove from the heat and let the flavors infuse while you make the roux. In a large pot over medium heat add 2 tablespoons butter and the flour. Cook, stirring, for about 2 to 3 minutes; don't let the roux color. Strain the infused milk onto the roux, whisking constantly to avoid lumps. Cook, stirring often, for about 5 minutes until the sauce is thick. Remove from the heat and add 1/2 the grated Cheddar and 1/2 the Parmesan; stir until it is melted and smooth. Taste and adjust seasoning with salt and pepper. Pour this over the macaroni, add the chunks of Cheddar, and mix until well blended; put this into the prepared baking dish. Sprinkle the remaining Cheddar and Parmesan cheeses evenly over the top. Bake until the top is golden and crusty, about 25 to 30 minutes.

- Heat Smart Balance butter spread in pan over medium heat until melted. Add flour all at once, whisking until smooth. Cook, stirring occasionally, over medium heat until flour mixture is cooked, about 3 minutes.
- Gradually stir in milk. Cook over medium heat, stirring constantly, until mixture begins to thicken, at least 5 minutes. Stir in salt and Tabasco.
- Add parmesan and mozzarella to sauce, reserving a little of both to sprinkle on top later. Stir until cheese is melted.
- Meanwhile, cook Dreamfields pasta according to directions on box and drain.
- Layer cheese sauce and macaroni in oven safe casserole dish. Sprinkle reserved parmesan and mozzarella on top of macaroni and top with S&P as desired. Bake at 350 for 30 minutes or until cheese is bubbly and brown.
- Suggestions: if you like a spicy version of macaroni and cheese, add 1 tsp of chili powder and extra dashes of Tabasco to white sauce as it is cooking.

- Preheat oven to 350°F
- Butter a 13x9 inch pan.
- Cook macaroni until it is al dente, about 8-10 minutes.
- In a small bowl, combine milk and cream.
- In a pan on medium heat, melt only 1/2 pound butter.
- Cook onions and garlic until clear, about 6 minutes.
- Add flour and cook/stir for 3 minutes.
- Add cream mixture and mix until smooth.
- Boil, stirring occasionally, about 8-10 minutes.
- Stir in 4 cups of Cheddar cheese, American cheese, and 1 cup of Parmesan cheese.
- Stir until melted.
- It will be thick and creamy --
- Season with salt and pepper.
- Stir sauce in pasta.
- Pour in a 13x9 inch pan.
- Sprinkle with remaining Cheddar, Parmesan and bread crumbs.
- Bake uncovered, middle shelf for 20 minutes until bubbling and browned on top.

- To make the Parmesan Cups: Put a small nonstick pan on stove over medium heat. Lay tart molds upside down on flat surface. Place 1 tablespoon of cheese in a small pile about the size of a quarter in the pan. Cook until cheese melts and starts to bubble. Flip the cheese and continue cooking until golden brown. Drape cheese over tart mold and press down with another tart mold to form cup shape. Let cool. Remove from molds and trim off excess cheese after cheese has cooled.
- To make Macaroni and Cheese: Put the onion, herbs, garlic and cream in a heavy saucepan and bring to a boil, reduce heat and simmer until cream is reduced by half. Strain and put cream back in pan on low heat. Whisk in the cheese. Add cooked macaroni to cheese mixture. Season, to taste, with salt and pepper.
- To assemble: Spoon mixture into each Parmesan cup and garnish with chopped parsley.

- Heat a medium, deep skillet over medium heat. Add oil and butter. When butter melts into the oil, add flour and combine. Gently cook, whisking flour and butter together, until smooth and flour has had a chance to cook, about 3 minutes. Slowly add milk while continuing to whisk. Gently bring milk to a bubble while stirring frequently. Allow the milk to thicken a bit, then stir in 2 cups of shredded Cheddar cheese a handful at a time. Season sauce with nutmeg and cayenne. Taste and add a little salt, if you like. Add cooked pasta to sauce and coat completely by turning over and over in the cheese sauce. - Preheat oven to 400 degrees Fahrenheit.
- Bring water to a boil; cook macaroni to al dente stage according to package directions.
- Drain well.
- Melt butter in a saucepan over medium-low heat.
- Whisk in flour and cook, stirring constantly, for 2 minutes.
- Whisk in milk and continue cooking, stirring constantly, until sauce thickens, about 5 minutes.
- Stir in salt, pepper and paprika and remove from heat.
- Stir in 1/4 cup of the cheese.
- Spread half the macaroni over the bottom of a lightly greased 1 quart baking dish.
- Spread half the remaining cheese over the macaroni.
- Top with remaining macaroni.
- Pour sauce over the macaroni.
- Top with the remaining cheese.

- Butter 2 quart casserole dish.
- Cook macaroni, drain, rinse under cold water, and drain again.
- Add macaroni to casserole dish.
- Sauté onions in butter, over medium heat, until translucent and tender.

- Preheat oven to 350°F. and butter a 3- to 4-quart gratin dish or other shallow baking dish.
- In a heavy saucepan melt 6 tablespoons butter over moderately low heat. Add flour and cook roux, whisking, 3 minutes. Add milk in a stream, whisking, and bring to a boil, whisking. - Preheat oven to 350°F.
- Cook macaroni pasta per package instructions. Drain and set aside.
- In a medium saucepan on medium heat, add butter and cook until melted.
- Remove saucepan from heat and add flour. Whisk constantly for 1 minute.
- Return saucepan to medium heat and add milk and stir to combine.
- Heat mixture until Milk is hot but not boiling.
- Chop white cheddar cheese into smaller squares (you can also grate cheese) and add to milk mixture.
