I developed this one-skillet spaghetti and meatball dish to cut down on cooking time for busy nights. The beans, artichokes and tomatoes bump up the nutrition factor, while the lemon and parsley make it pop with brightness. -Roxanne Chan, Albany, California

12 ounces frozen fully cooked Italian turkey meatballs
1 tablespoon olive oil
1 can (28 ounces) whole tomatoes, undrained, broken up
1 can (15 ounces) cannellini beans, rinsed and drained
1 can (14 ounces) water-packed quartered artichoke hearts, drained
1/2 teaspoon Italian seasoning
1 can (14-1/2 ounces) reduced-sodium chicken broth
4 ounces uncooked spaghetti, broken into 2-inch pieces (about 1-1/3 cups)
1/4 cup chopped fresh parsley
1 tablespoon lemon juice
Grated Parmesan cheese

Steps:

  • In a large skillet, heat oil over medium heat; add meatballs and cook until browned slightly, turning occasionally., Add tomatoes, beans, artichoke hearts, Italian seasoning and broth; bring to a boil. Stir in spaghetti; return to a boil. Reduce heat; simmer, covered, until spaghetti is tender, 10-12 minutes, stirring occasionally., Stir in parsley and lemon juice. Serve with cheese.

1 pound lean ground beef
1 cup chopped onions
½ cup chopped green bell peppers
1 cup sliced mushrooms
1 (28 ounce) can whole peeled tomatoes, with liquid
12 ounces spaghetti, broken into pieces
1 cup water
1 ½ teaspoons Italian seasoning
salt and pepper to taste
1 cup shredded mozzarella cheese

Steps:

  • In a skillet over medium heat, brown the ground beef with onions until no pink shows on the beef; drain. Mix in green pepper and mushrooms and cook for a few minutes. Add tomatoes with juice, spaghetti and water; stir. Add Italian seasoning, salt and pepper. Cook about 15 minutes or until spaghetti is tender, stirring occasionally. Add cheese and stir until melted

This is super quick, super simple and a real kid-pleaser. Being that these are ingredients that I practically always have on hand, this is my dinner-in-a-pinch recipe of choice!

1 lb lean ground beef
1 cup chopped onion
1 cup water
1 (26 1/2 ounce) can spaghetti sauce
1 1/2 cups uncooked elbow macaroni
1 cup shredded cheddar cheese

Steps:

  • Brown meat and onion over medium-high heat in a skillet; drain. Season with salt and pepper, if desired.
  • Add spaghetti sauce and 1 cup water; bring to boil.
  • Stir in macaroni. cover and simmer 10-15 minutes or until pasta is tender.
  • Stir in cheese. Garnish with sliced green onions, if desired.

Comforting and crave-worthy, macaroni and cheese is hard to improve. But we think we've done it with our Skillet Macaroni and Cheese. Try this one-pot version, and four tempting variations: Mushroom-Fontina Mac, Jalapeno Mac, Bacon Mac, and Primavera Mac.

6 tablespoons unsalted butter
1 cup fresh breadcrumbs
1/4 cup grated Parmesan
1 small yellow onion, diced small
1/2 cup unbleached all-purpose flour
6 cups 2-percent milk
3/4 pound elbow macaroni
3 cups grated sharp white cheddar
1 cup grated Gruyere
1 teaspoon Dijon mustard
Kosher salt and freshly ground pepper

Steps:

  • Heat broiler. In a large straight-sided, oven-safe skillet, melt butter. Remove 1 tablespoon butter and combine with breadcrumbs and Parmesan.
  • Add onion to skillet and cook until softened. Whisk in flour and cook, stirring, 1 minute. Very gradually whisk in milk and bring to a simmer. Add macaroni and cook, stirring constantly and scraping bottom of pan, until tender, about 6 minutes. Remove from heat, stir in remaining cheese and the mustard, and season with salt and pepper. Top with breadcrumb mixture and broil until golden brown, 1 to 2 minutes.
