Ingredients

¾ cup olive oil
2 cups chopped onions
1 clove garlic, minced
2 pounds fresh green beans, rinsed and trimmed
3 large tomatoes, diced
2 teaspoons sugar
salt to taste

Steps:

Heat the olive oil in a large skillet over medium heat. Cook and stir the onions and garlic in the skillet until tender.
Mix the green beans, tomatoes, sugar, and salt into the skillet. Reduce heat to low, and continue cooking 45 minutes, or until beans are soft.

1/4 cup extra-virgin olive oil
1/2 cup thinly sliced red onion
1 cup thinly sliced fennel
3 cloves garlic, thinly sliced
Kosher salt and finely ground black pepper
2 tablespoons tomato paste
1 bunch Swiss chard leaves, sliced 3 inches wide
1 bunch collard greens, stemmed and sliced 3 inches wide
1 bunch lacinato kale, stemmed and sliced 3 inches wide
2 tablespoons finely chopped fresh dill
Juice of 1 lemon

Steps:

Set up a grill for cooking with indirect heat. If using a charcoal grill, build the coals on one side only. If using a gas grill, heat one side only. Place a heavy-bottomed enameled cast-iron pan over the direct heat side of the grill and add the olive oil.
Add the onions, fennel and garlic with a pinch of salt and allow to begin to soften, 2 to 3 minutes. Stir in the tomato paste and cook until rusty, 2 to 3 minutes.
Deglaze the pan with 1 cup water, scraping the bottom for any brown bits. Add all of the greens and season with salt and pepper.
Cover the pan with a lid.
Move the pan to the indirect-heat side of the grill, then close the lid and cook until the greens are wilted, 5 to 7 minutes. Remove from the grill and stir in the dill and lemon juice. Serve.

My favorite green beans! My Greek mother and grandmother made these with roast lamb since I can remember. It's surprising how just four ingredients can taste so Greek! added my picture where I used a pound of frozen French sliced green beans and diced tomatoes.

1 large onion, chopped
1 can(s) tomato sauce or diced tomatoes
- cinnamon, just a sprinkle
1 pound(s) string beans or frozen green beans, your choice
- olive oil or vegetable oil

Steps:

Clean the green beans or defrost frozen green beans.
Heat 1/4 inch oil in a large pan, add onions.
Cook until onions are just about to brown. Sprinkle with a little cinnamon. (this is how I was taught)
Add the tomato sauce or diced tomatoes, which I prefer. Bring to a boil.
Add the green beans and simmer for 20-25 minutes, covered.

2 tablespoons frozen crushed garlic
1 dash salt
75 g margarine
100 g slivered almonds

Steps:

Fill saucepan with water, when boiling, add green beans and cook for about 2 minutes, until just crunchy.
Rinse immediately under cold water.
Alternately, you can cook the beans in the microwave for a few minutes until heated through.
Put margarine in pan and melt, add slivered almonds and toast, as the almonds begin to turn brown add lots of garlic.
Add green beans and toss quickly.

To prepare this traditional Greek green beans recipe, start by washing thoroughly the green beans. Drain them in a colander and set aside.
Heat half the olive oil in a large skillet over medium heat. Add the chopped onions and sauté until transculent and tender. Stir in the garlic, the grated tomatoes, the rest of the olive oil and a pinch of sugar and bring to the boil. The traditional recipe for Greek green beans calls for fresh ripe tomatoes, but if you like you can substitute with canned chopped tomatoes, or Passata tomato juice.
Add the green beans and blend well, so that the green beans are coated with the olive oil and the tomatoes. Turn the heat down, cover with the lid and simmer for 40- 45 minutes, until the beans are soft and most the juices have evaporated. During cooking, check out if the pan appears to be getting dry and add a little bit hot water if needed.
