Number Of Ingredients 11

2 cups flour
1/3 cup sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 (3 1/2 ounce) jar salted roasted chopped macadamia nuts (about 1 cup)
2/3 cup flaked coconut
1/2 cup chopped dried pineapple
3/4 cup milk
1/2 cup melted & cooled butter or 1/2 cup margarine
1 lightly beaten egg
1 teaspoon vanilla

Steps:

  • In a bowl combine first 4 dry ingredients.
  • Stir in rest of dry ingredients; mixing to coat.
  • In another bowl mix together the wet mix ingredients.
  • Add wet mix ingredients to dry ingredients until just combined.
  • Spoon batter into prepared pans and bake at 400ºF for 15-20 minutes or until tests clean.
  • Makes 12.
  • These muffins freeze well.

2 1/4 cups self-raising flour, sifted
1/2 cup raw sugar, plus
1 tablespoon raw sugar, extra
1 cup chopped macadamia nuts
125 g unsalted butter, softened
2 tablespoons honey, plus extra to serve
1 cup buttermilk
440 g canned crushed pineapple in juice, well-drained
1 egg, lightly beaten
low-fat yogurt, to serve

Steps:

  • Preheat oven to 190°C (not fan-forced).
  • Line a 12-hole muffin pan with paper cases.
  • Place flour and sugar in a large bowl with half the macadamias, then set aside.
  • Melt butter with honey in a small saucepan over low heat. When melted, remove from heat and add the buttermilk and pineapple.
  • Stir to combine, then add egg. Make a well in centre of dry ingredients and pour in buttermilk mixture. Fold in to just combine, then pour mixture into muffin pan.
  • Combine remaining nuts with extra tablespoon of raw sugar and sprinkle over the muffins. Bake for 20-25 minutes, until golden and cooked through.
  • Remove from the oven and allow to cool for 5 minutes.
  • Serve warm with extra honey and yoghurt, or dust with icing sugar if desired.

Number Of Ingredients 12

3 cups all-purpose flour
2 cups sugar
2 teaspoons ground cinnamon
1 teaspoon baking soda
1 teaspoon salt
3 large eggs, room temperature
1 cup canola oil
1 teaspoon vanilla extract
3 medium ripe bananas, mashed
1 cup sweetened shredded coconut
1 can (8 ounces) crushed pineapple, drained
1 cup macadamia nuts, coarsely chopped

Steps:

  • Preheat oven at 375°. In a large bowl, combine the first 5 ingredients. In another bowl, combine the eggs, oil and vanilla. Stir into dry ingredients until just moistened. Fold in the bananas, coconut and pineapple. , Fill greased or paper-lined muffin cups two-thirds full. Sprinkle with nuts. Bake for 18-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks. Freeze option: Freeze cooled muffins in airtight containers. To use, thaw at room temperature or, if desired, microwave each muffin on high until heated through, 20-30 seconds.

2/3 cup dried pineapple
2/3 cup boiling water
1 1/2 cups flour
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup unsalted butter, softened
1 1/4 cups sugar
3 large eggs
1/2 cup milk
1 tablespoon dark rum
1 teaspoon vanilla extract
3/4 cup coarsely chopped macadamia nuts

Steps:

  • Combine dried pineapple and boiling water in a small bowl; let stand 15 minutes; drain thoroughly and blot dry.
  • If pineapple pieces are large, cut them into 1/2-inch pieces.
  • Heat oven to 325°.
  • Sift together flour, baking powder and salt; set aside.
  • Beat butter and sugar with an electric mixer on high speed until light, 3 minutes; add eggs one at a time, mixing well after each addition; reduce mixer to low speed; add milk, rum, and vanilla; add flour mixture, mix just until combined; fold in pineapple and nuts with a spatula.
  • Grease and flour an 8 1/2" x 4 1'2" loaf pan; transfer batter to pan; bake until a wooden pick inserted in the center comes out clean, about 1 1/2 hours.
  • Cool in the pan 10 minutes; loosen cake from the sides of the pan with a flexible knife; invert onto a wire rack and cool completely before slicing.

4 eggs
1/2 cup vegetable oil
3/4 cup pineapple juice
1/2 cup crushed pineapple
1 tablespoon baking powder
3 cups all-purpose flour
1 cup white sugar

Steps:

  • Preheat oven to 350 degrees.
  • Lightly grease a 9x5 inch loaf pan.
  • In a large bowl, combine sugar, eggs, oil, pineapple juice and pineapple.
  • Mix well.
  • Sift together baking powder and flour.
  • Stir flour mixture into pineapple mixture.
  • Fold in Macadamia nuts.
  • Pour batter into greased pan.

1/2 cup canola oil (not quite)
1 1/2 cups ricotta cheese
1 cup crushed pineapple, well drained
2 cups flour
1/2 cup sugar
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt

Steps:

  • In a measuring cup, place the egg and add enough oil to make 1/2 cup.
  • Add egg and oil mixture to the ricotta cheese in a large bowl and mix until smooth and add crushed pineapple.
  • In a separate bowl combine flour, sugar, baking powder, baking soda, and salt.
  • Add to wet ingredients and blend gently (the dough is pretty stiff).
  • fill greased muffin tins 2/3 full and bake at 400 F for 25 minutes.

DADDY'S LOW-SODIUM PINEAPPLE MUFFINS



Daddy's Low-Sodium Pineapple Muffins image

Make these fresh and warm for a weekend breakfast, or try them with a ham dinner, or even with chicken or turkey. Apparently not too many folks have thought about putting pineapple in a muffin. I know I hadn't until I tasted these at my parents' house. I don't know where my Dad got this recipe, but I do know he made some changes to it, so this is his version. He made these moist and not-too-sweet muffins often. I can still picture him dumping them out on the counter right after taking them out of the oven. It was funny, he just took the pan out with potholders and practically threw them on the counter! When you use 2 1/2-inch muffin tins, this recipe will make 18 muffins with 106 calories and 3 grams fat each. If you want to use a different size muffin pan, you will have to adjust the baking time accordingly: less time for smaller muffins (maybe start checking them after 15 minutes?) and more time for larger muffins. And of course, as ovens vary, some of you may find that the temperature of the oven will also need to be adjusted, so that the outside of the muffin does not get overbrown before the inside gets done. Now, listen: I tried using paper muffin cups with this recipe, even though Dad told me it wouldn't work, but I hate washing the muffin pans, so........ok, he was right (again) Too much of the muffin sticks to the paper, I think because these are so low fat. Dad was diabetic and a heart patient, so they are also low in sugar, and sodium. Just remember, no paper liners in the muffin tins, okay?

2 cups flour (Dad used 2 1/2 cups, which seems to work better)
4 teaspoons baking powder
3 tablespoons sugar
2 egg whites
1 1/2 teaspoons vanilla extract
1/4 cup canola oil or 1/4 cup other mild oil (olive oil is NOT suggested)
1 (20 ounce) can crushed pineapple with juice, do not drain

Steps:

  • Preheat oven to 425 degrees F.
  • Combine dry ingredients.
  • In another bowl, combine egg, vanilla and oil, beat lightly with fork or whisk, then add pineapple& juice; mix.
  • Add wet ingredients to the flour mixture, stirring JUST until combined.
  • This is very important!
  • I learned the hard way: if you overmix muffins they come out tough and chewy, and people will realize you don't know the first thing about baking.
  • So- DON'T BEAT THE MUFFIN BATTER, and they'll never know you just figured out how to turn the oven on yesterday.
  • Spray (approximately) 18 muffin cups (2 1/2") with Pam (or Donna, or Julie, or Fred- or whatever you call your no-stick spray) DO NOT USE PAPER MUFFIN CUPS!
  • (see above) Fill cups 2/3 full.
  • Bake until golden brown (25 min).
  • They may seem soft and undercooked, but they do firm up as they stand.
  • If they don't come out moist, you baked them too long.
  • Make a note of it for next time.
  • Cool slightly then remove from pan.
  • Dad had this in his recipe but he never did it!
