MAC & CHEESE WITH SAUSAGE MEATBALLS

Kosher salt
12 ounces cavatappi or other corkscrew pasta
1 cup crushed cheese crackers
2 1/4 cups whole milk
10 ounces bulk sweet Italian sausage
3 tablespoons grated Parmesan cheese
2 tablespoons all-purpose flour
8 ounces sharp cheddar cheese, shredded
2 ounces processed cheese (such as Velveeta), cut into 1/2-inch cubes
1/2 teaspoon Dijon mustard

Steps:

  • Preheat the oven to 425˚ F. Line a baking sheet with parchment paper; set aside. Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs for al dente. Reserve 1/2 cup cooking water, then drain. Reserve the pot.
  • Meanwhile, combine 1/2 cup crushed cheese crackers and 1/4 cup milk in a medium bowl; let sit until slightly softened, about 10 minutes. Add the sausage and 2 tablespoons Parmesan and mix well to combine. Form the sausage mixture into 1-inch meatballs (about 28); arrange on the prepared pan. Bake until golden and cooked through, 6 to 8 minutes.
  • Add the flour and the remaining 2 cups milk to the reserved pot and whisk until smooth. Bring to a simmer over medium-high heat and cook, whisking, until slightly thickened, 8 to 10 minutes. Remove from the heat, add the cheddar and processed cheese and stir until smooth. Stir in 3/4 teaspoon salt and the mustard.
  • Add the pasta and 1/4 cup of the reserved cooking water to the cheese sauce and stir to coat. Add the meatballs and stir to coat; thin with the remaining 1/4 cup cooking water, 1 tablespoon at a time, if needed.
  • Combine the remaining 1/2 cup crushed cheese crackers and 1 tablespoon Parmesan in a small bowl. Divide the mac and cheese among bowls and sprinkle with the cracker mixture.

Breaded meatballs in a shelled out bread loaf topped with sauce and cheese. Yummy! I made this recipe out of scraps around the kitchen and it turned out pretty good! I made this by eyeballing all the ingredients so measurements are approximates, adjust as what fits your taste.

1/2 lb ground meat (I use buffalo, but beef will work just as well)
1 garlic clove, crushed
1 1/2 tablespoons pizza seasoning
1/2 cup flour
1 egg
1/2 cup milk
1/2 cup breadcrumbs (I use flavored, garlic)
1/2 cup grated parmesan cheese
2 slices cheddar cheese, cut into small cubes
2 tablespoons vegetable oil
2 cups spaghetti sauce (I use www.recipezaar.com/227060)
1 -2 cup shredded mozzarella cheese
1 loaf of uncut bread (I use sourdough)

Steps:

  • Heat oven to 350.
  • Mix garlic, ground meat, and pizza seasonings.
  • Form small meatballs, about 8-10.
  • Poke a small hole into the middle of the meatball with your pinkie and stuff 1-2 cheese cubes inside. Make sure to close your meatball securely around cheese so that it doesn't ooze out.
  • Put flour on one small dish. Mix egg and milk in a small bowl. Mix breadcrumbs and Parmesan cheese in another small dish.
  • Roll each meatball in the flour until well coated. Dip into the egg/milk mixture until the whole meatball is wet. Roll in the breadcrumb mixture until well coated.
  • Heat the oil in a medium skillet. When heated drop the meatballs in and cook until brown on the outside and done in the center. Make sure to turn the meatballs so they don't burn on one side.
  • Heat up the spaghetti sauce in a separate pan.
  • While meatballs are cooking, cut the top 1/4 of bread off. Hollow out the inside of the loaf ( I save these and put them in the oven and they make good dipping bread). Put loaf on a baking sheet.
  • When meatballs are done, put them inside the hollowed out loaf of bread. Cover with the spaghetti sauce. Top with most of the mozzarella cheese. Put the top of the loaf next to sub on baking sheet, sprinkle this with the remaining mozzarella.
  • Place sub in oven and cook for 5-10 minutes until cheese is melted and bubbly.
  • Cut into 2 - 4 pieces and enjoy!
  • This can be a little messy - but it's worth it!

When our boys were young, a very long time ago, I would let them choose a meal whenever my husband and I were going out for dinner. Their all time favourite was Kraft mac and cheese. This is the stay at home, family supper version.

1 lb frozen cooked italian meatballs
2 (7 1/4 ounce) boxes macaroni & cheese dinner mix (I use Kraft)
1 1/2-2 cups milk
8 ounces sour cream
2 medium tomatoes, thinly sliced
2 -3 tablespoons grated parmesan cheese

Steps:

  • Preheat oven to 350°.
  • Place meatballs on a foil lined baking sheet and bake 15-20 minutes or according to package directions.
  • Cook macaroni according to package directions, drain.
  • Add milk, cheese sauce packets and sour cream, stir to combine.
  • Place meatballs in the bottom of an oven proof casserole, top with macaroni, cover with tomato slices sprinkled with parmesan.
  • Bake uncovered 25-30 minutes.

This is a Paula Deen recipe and supper delish, very versitile. You can use seasoned sausage and omit seasonings to make it even easier!! I love to use the leftovers to make meatball sandwiches!

1 lb ground beef
1 lb ground pork
4 tablespoons fresh parmesan cheese, grated
1 -1 1/2 cup seasoned dry bread crumb
3 large eggs
1 teaspoon salt
1/2 teaspoon pepper
2 garlic cloves, finely minced
1 tablespoon fresh basil, finely chopped
1/4 cup fresh parsley, chopped
1/2 teaspoon dried oregano
4 ounces fresh mozzarella cheese, divided into 12 pieces
3 tablespoons olive oil
2 (24 ounce) jars pasta sauce
2 lbs cooked spaghetti

Steps:

  • In a large mixing bowl combine ground beef, ground pork, parmesan cheese, eggs, salt, pepper, garlic, basil, parsley and oregano.
  • Add bread crumbs 1/2 cup at a time until mixture is not too wet and can be formed into balls easily.
  • Form mixture into 12 balls using your thumb to press a hole into the center (You can also use a cookie scooper to make uniformed balls).
  • Insert a piece of mozzerella into the hole and close the hole by pinching the meat mixture together around it.
  • Heat a large saute pan over medium heat and drizzle olive oil into pan. Add meatballs and cook until just browned. Using a slotted spoon, transfer meatballs into a slow cooker. (If prefered you can bake meatballs in a deeper cookie sheet at 350 for about 30 min).
  • Pour red sauce over the meatballs and cook on LOW for approximately 5 hours.
  • Serve meatballs and sauce over spaghetti.
