SUNNY'S PERFECT SCRAMBLED CHEESY EGGS

Steps:
- In a large nonstick pan with sloped sides (even a wok shape works), melt the butter over medium-low heat, being careful to not brown the butter. If it begins to bubble, the heat is too high, so lower the heat to cook the eggs properly. (Slow and low like BBQ is the way to go with eggs.)
- Meanwhile, in a large bowl, add the eggs and 1 teaspoon cold water. Vigorously whisk until frothy and smooth. Swirl the pan around to coat the butter on the bottom and up the sides. Pour the eggs into the pan and let sit for a few seconds. When the eggs begin to lightly set on the bottom, use the whisk to gently beat the eggs, then allow them to sit for just a few seconds between beating them again. Curds will begin to form and increase throughout the cooking time. Repeat this process of whisking then resting the eggs for a few seconds until about 50 percent of the eggs are set and the rest are still wet. At this point, sprinkle the eggs with a pinch of salt and pepper and continue to whisk and rest alternately. Once the eggs are 75 percent done, add the cheese and from this moment, continue to whisk the eggs until done. This entire process from pouring in the eggs to them being finished should take 8 to 12 minutes; this isn't a race, only a journey to the best scrambled eggs ever. Remove from the heat and continue to scramble in the last seconds. Serve warm.

This is one of my aunt's recipes and one of my favorite dishes. I love the way this dish is easy to make and is a different twist to pasta.

Steps:
- In a large pot, bring water to a rolling boil. Add 1.5 tsp of salt and 2 tsp of oil.
- Add elbows and stir. Without reducing flame or covering cook for about 8-9 minutes. COOK FOR NO MORE THAN 9 MINS!
- Drain the pasta and add butter/margarine and set aside.
- In another pan, heat remaining oil. When hot, add mustard and let it burst. Then add urad dal and channa dal.
- When urad dal and channa dal are browned, add onions and sautee till translucent. Add green chillies, turmeric powder, ginger-garlic paste and rest of salt.
- Add eggs and keep stirring to make eggs scrambled.
- Now, add the eggs to the pasta and mix well. Serve hot!
- Tips: The pasta doesn't necessarily have to be elbows- other kinds of pasta can be used. Preferably not angel hair or noodles. If you want to use more egg yolks you can- if you do, you can reduce the amount of Turmeric powder.

- Bring a large pot of salted water to a boil over high heat. Stir in elbow macaroni then cook 6–8 minutes, or 2 fewer minutes than the box indicates. Drain pasta in a colander, rinse under cool water to stop the cooking process then set aside.
- Preheat the oven to 350 degrees, coat a 9" x 13" casserole dish with cooking spray then set aside. Place a skillet over medium heat to fry cubed bacon. Stir frequently until crispy—approximately 10 minutes. While bacon is frying, whisk eggs, milk, salt and pepper together in a medium-sized bowl then set aside. When the bacon is nice and crispy, drain on a paper towel-lined plate and discard the bacon grease. Wipe skillet clean, return it to the heat then add 1 Tbsp butter. When the butter has melted, add eggs to the skillet and stir constantly 6–8 minutes, or until lightly scrambled. Remove from heat and dollop scrambled eggs in ¼ cup portions randomly around the bottom of the baking dish.
- Wipe the skillet clean once again and return it to the stove to melt 4 Tbsp butter. Once the butter has melted, sprinkle evenly with flour using a whisk to combine. Cook the flour, stirring constantly for 1 minute then add salt and mustard. Stir to combine. Slowly whisk in milk and allow the mixture to come to a bubble, stirring constantly. Reduce heat to low then simmer 3 minutes, stirring frequently to avoid scorching.
- Add grated cheeses ½ cup at a time, allowing each addition to completely melt before adding the next. Once all the cheese is incorporated, stir in the macaroni and bacon then pour the mixture around the dollops of scrambled eggs in the casserole dish.
