- Barbacoa. In Central Mexico, barbacoa is traditionally served only for special occasions and at markets on weekends, but can now be found 7 days a week.
- Tamales. This portable food of the gods dates all the way back over 10,000 years to the Olmecs that called them tamalii which means wrapped food. To this day the tamale still plays an important role in the daily lives of the people and the culinary landscape in Mexico.
- Huaraches. To make huaraches, masa is flattened using a tortilla press into a long oval and placed onto a hot comal to cook. Beans are then scooped into the middle running lengthwise and then it is topped with either red or green salsa.
- Tlacoyos. These fat masa ovals are stuffed inside to the brim with all kinds of fillings including chicharron, beans, queso, meats, and fava beans. The best part is the chew of the masa that gives way to either a soft filling or to the stretch and pull of the cheese.
- Quesadillas. You might be surprised when you order a quesadilla in Mexico City. The versions made in Mexico City are mostly made without cheese. I know this doesn’t make much sense as the word queso meaning cheese is in the name of the dish.
- Chiles en Nogada. This relative of the Chile Relleno is a seasonal dish from Puebla that is popular during the region’s walnut and pomegranate harvest in August and September.
- Pozole. The origins of this hearty soup go all the way back to pre-colonial times where it was only eaten by the Aztec elite. Many historians believe that these early versions were made of the flesh of sacrificed humans.
- Mole Poblano. Oaxaca may get all the hype for being the mole capital of Mexico, but it is mole poblano from Puebla that is considered the country’s national dish.
- Chalupas a la Poblana. These crispy but still soft inside thick tortillas are fried in lard and then topped traditionally with either red or green salsa, onion, chicken or pork, and sometimes cheese.
- Tortas. The name translates to English as cake or pie but it is really an all-encompassing term used for all sandwiches in Mexico. The reality is, anything that can be stuffed into either a telera or bolillo roll is considered a torta.
