LUCY'S BAKED FISH IN FOIL
My friend, Lucy and I, describe ourselves as fishing widows. It can be challenging to come up with new ways to prepare fish, but Lucy recently came up with this. My family fell in love with it, so I thought I should share it.

Steps:
- Make 2-3 deep slashes on both sides of the fish and lay out a double layer of foil.
- Combine coconut cream, garlic, ginger, soy sauce, chili powder and lemon juice.
- Spread 1/3 of the coconut cream mixture on the foil and lay the (cleaned) fish on top of the coconut cream mixture.
- Spread some of the coconut cream mixture inside the cavity of the fish and pour the rest of the coconut cream mixture over the fish and seal parcel making sure there is no air around the fish.
- Bake at 180°C for 12- 15 minutes per 500 grams or until the fish flakes at the thickest part- only way to tell is to open the package every now and then.
- Remove from oven and leave to stand for approximately ten minutes, or until cool enough to handle.
- Discard the head, tail and fins; then peel away skin.
- Flake the fish onto a clean piece of foil and pour any cooking juices over the flesh.
- Check seasoning and add salt and pepper if needed.
- Serve with fresh bread and a green leafy salad.
CATFISH BAKED IN FOIL

- Preheat the oven to 425 degrees F. Lay a 2 1/2-foot-long sheet of aluminum foil on a baking sheet, letting the ends hang off. Lay another sheet of foil perpendicular on top. Rinse the couscous in a fine-mesh sieve under cold water. Mix the olive oil, paprika and 3/4 teaspoon each salt and pepper in a small bowl. Pile the couscous in the center of the foil; toss with 1/2 tablespoon of the seasoned oil and spread in an 8-inch-square layer.
- Brush the fish fillets on both sides with 1 tablespoon of the seasoned oil and arrange side by side on top of the couscous. Toss the lemon slices, parsley, red onion, tomatoes, garlic and the remaining 1/2 tablespoon seasoned oil in a bowl, then scatter evenly over the fish and couscous. Drizzle with 2/3 cup water, then bring the opposite ends of the foil together, fold over and crimp closed to make a sealed packet. Transfer the foil packet (on the baking sheet) to the oven and bake 25 minutes.
- Open the foil packet; divide the fish among plates. Toss the couscous and vegetables; serve with the fish. Sprinkle with the lemon juice.

SIMPLE BAKED FISH IN FOIL WW
This is so simple, I can't believe I couldn't find it anywhere on zaar. The onion keeps the fish from drying out and gives a lovely mild flavor. We especially like Telipia, but any white fish can be used, as well as any of your favorite fish seasonings. We like lemon pepper or Dominant One (an all seasoning mix from hubby's Indiana hometown spice factory www.marionkay.com). Fresh fish from a camping trip is good also, in fact this method is great for outdoors, as it can be cooked on the grill for 20 min, clean up is a snap, just toss the foil.

- Place sliced onion rings on aluminum foil, place filets on top, drizzle with oil and butter and sprinkle on seasoniing, top with lemon slices (if using).

- Heat oven to 400ºF.
- Mix cream cheese, dressing and lemon zest until blended.
- Spoon 1/3 cup rice medley onto center of each of 4 large sheets heavy-duty foil sprayed with cooking spray. Turn up sides of foil; slowly pour 1/3 cup broth over rice medley on each foil sheet. Top with beans and fish.
- Spread fish with cream cheese mixture; top with tomatoes. Fold foil to make 4 packets; place in single layer on baking sheet.
- Bake 15 min. Let stand 5 min. or until all the broth is absorbed and fish flakes easily with fork. Cut slits in foil to release steam before carefully opening packets.

MEDITERRANEAN FISH POUCHES IN FOIL OVER COUSCOUS
This dish is a wonderful easy dish, made in foil pouches either in the oven or on the grill. You can use parchment pouches in the oven which work just as well if you prefer that. No clean up and it makes dinner easy. There are a few ingredients, but it doesn't take long at all. Great mediterranean flavor and with either some grilled pita, or a simple box of pita, which takes 6 minutes, this really is a quick dish. I happen to catch fresh mangrove snapper, my favorite, but red snapper is equally good and even tilapia would work for this dish.

- Vegetables -- Ok, first thing lets prepare your vegetables. In a saute pan, add the eggplant and onion and cook a minute. Now add the zucchini, olives, capers, tomatoes, seasoning (go light on the salt) and just simmer for a few minutes. It will continue to cook in the pouches.
- Fish -- Get a nice sheet of foil about 10 x 10 (for each fillet) so you can fold it up basically like a present so you can add liquid without it leaking. Now, spray in inside of the foil with a little of the pam and place the fish fillet and season with a little salt and pepper if you want (not necessary).
- Topping -- top with fish fillet with a lemon slice, then the tomato vegetable mixture, then pour a little of the white wine on top of the tomatoes. Just wrap up and place on a cookie sheet for the oven or the grill.
- Bake -- 425 middle shelf for 30 minutes. Grill same timing. Depending on the thickness of your fish and the amount of filling it can take 30-40 minutes.
- Couscous -- I like to use broth to cook, but water will be fine. Just in the microwave in the bowl you are serving it in, garnish with a little parsley if you want and olive oil.

FISH IN FOIL
The 'no smell' fish recipe that is the ONLY one I make for my family (I hate fish, they LOVE it!). Take foil packets to table for service, and keep them around for the discarding of bones and skin. Then when dinner's done, haul those babies to the outside trash.

- Preheat oven to 400 degrees F (200 degrees C). Rinse fish, and pat dry.
- Rub fillets with olive oil, and season with garlic salt and black pepper. Place each fillet on a large sheet of aluminum foil. Top with jalapeno slices, and squeeze the juice from the ends of the lemons over the fish. Arrange lemon slices on top of fillets. Carefully seal all edges of the foil to form enclosed packets. Place packets on baking sheet.
- Bake in preheated oven for 15 to 20 minutes, depending on the size of fish. Fish is done when it flakes easily with a fork.

SASSY SPICY FOIL-BAKED FISH FOR ONE
Super easy, light but super satisfying way to incorporate a nice whitefish fillet, some colorful veggies, and lots and lots of flavor. Feel free to substitute, add, or subtract any of your favorite veggies!

- Preheat oven to 450 degrees.
- Rinse and dry your fish, and rub each side with some olive oil. Season each side with cajun seasoning.
- Place fish in the center of a very long piece of foil on a cookie sheet.
- Toss veggies, garlic, pepper flakes, cajun seasoning and remaining olive oil in a bowl until everything is sufficiently coated.
- Spread veggie mixture over fish fillet.
- Squeeze juice of lemon over veggies and fish. I put the rest of the lemon on top of the mixture while it bakes for extra lemon flavor, but you don't have to.
- Fold foil around fish and vegetables so that a packet is formed.
- Bake at 450 for 15 minutes.
- Open foil, place on plate, and dig in!
