LUSCIOUS LEMON FRUIT DIP
Rich, creamy fruit dip. Perfect to serve at showers and lucheons. I found this recipe in Taste Of Home magazine. I have not tried this recipe, but I'm posting it for safe keeping. I plan to use Splenda for the sugar.

Steps:
- In a large heavy saucepan, combine the sugar and cornstarch. Gradually whisk in water until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer. Remove from the heat.
- Stir a small amount of hot mixture into eggs; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Remove from the heat. Gently stir in lemon juice and vanilla.
- Transfer to a bowl. Cool to room temperature without stirring. Cover surface of mixture with waxed paper; refrigerate until cooled. Fold in whipped cream. Serve with fresh fruit.
SIMPLE LEMON FRUIT DIP

LEMONY DELICIOUS LEMON CURD & YOGURT FRUIT DIP
Whip this lemony delicious dip up in minutes, and serve with your favorite fresh fruit! Only three ingredients are used, plus your favorite fresh fruits (such as strawberries, bananas, grapes, cantaloupe, pineapple, or kiwi)... I've been known to crumble in a meringue cookie or macaron, as well. Top with a dollop of fresh whipped cream and zest, candied ginger or a sprig of mint, as desired-- also fabulous with a drizzle of Limoncello! LUSCIOUS LEMON CREAM
This Lemon Cream does not contain yogurt or pudding or sour cream. It is simply the best lemon cream ever! You can use this to dip any fruit or top a cheesecake with it. Its use is limited only by your imagination. I LOVE this stuff!

Steps:
- In a mixing bowl beat together eggs, 1/2 cup of the sugar and the lemon juice. Set aside.
- In a medium saucepan, combine remaining 1/2 cup sugar and cornstarch; stir in water and cook over medium heat until thickened stirring constantly; remove from heat.
- Gradually stir in the egg mixture and mix together.
- Return pan to heat and cook on low, stirring mixture until it thickens slightly; remove from heat.
- Add vanilla and mix together.
- Cool in refrigerator until chilled; then fold in the whipped cream when ready to serve.
- Serve with fresh fruit like pineapple, bananas, strawberries, grapes, kiwi, anything you like. Enjoy!
- Refrigerate leftovers.
- Use on french toast the next day if you have any left. Yum!
