Categories     Pie

Time 30m

Yield 8 serving(s)

Number Of Ingredients 12

2 1/2 cups milk, separated
1 1/3 cups granulated sugar
1/4 cup unsweetened cocoa
1 tablespoon butter
7 tablespoons cornstarch
6 tablespoons water
3 extra-large egg yolks
1 teaspoon vanilla
1 cup miniature marshmallow
1 9-inch baked pie crust
sweetened whipped cream (I use Cool Whip)
chocolate curls or chocolate shavings

Steps:

  • In medium saucepan, combine 2 cups milk, sugar, cocoa, and butter.
  • Bring to a boil over medium heat.
  • In a medium mixing bowl, mix cornstarch and water until cornstarch is completely dissolved.
  • Stir in remaining 1/2 cup milk.
  • Whisk in egg yolks and vanilla until well blended.
  • Gradually add cornstarch mixture to mixture in saucepan, stirring constantly with a whisk.
  • Cook, stirring constantly, for about 2 minutes or until mixture is thickened and smooth.
  • Add mashmallows and stir until marshmallows are melted and mixture is smooth.
  • Pour into pie shell.
  • Press plastic wrap diretly onto filling.
  • (This prevents the formation of a tough, dry"skin" while cooling).
  • Refrigerate at least 2 hours.
  • Remove plastic wrap and top with whipped cream.
  • Garnish with chocolate curls.
  • ~NOTE~to make chocolate curls, shave from a chocolate candy bar using a pototo peeler.

LEMON ICEBOX PIE

Lemon Icebox Pie image

A graham cracker crust cradles the sweet-tart filling of this dreamy lemon icebox pie, which gets it's smooth texture from sweetened condensed milk.

Categories     Summer     dessert

Time 3h15m

Yield 8 servings

Number Of Ingredients 10

1 1/2 c. graham cracker crumbs
2 tbsp. granulated sugar
7 tbsp. salted butter, melted
2 14-oz. cans sweetened condensed milk
1 c. fresh lemon juice (from about 6 lemons)
5 large egg yolks
1 tbsp. lemon zest
1 c. heavy cream
2 tbsp. powdered sugar
1/2 tsp. vanilla extract

Steps:

  • For the crust: Preheat the oven to 350°. Combine the cracker crumbs, sugar, and butter in a medium bowl. Mix with a fork until the crumbs are well coated and stick together when pinched. Press the mixture into the bottom and up the sides of a 9-inch pie plate. Bake until set, about 10 minutes. Set aside to cool slightly, about 10 minutes.
  • For the filling: Whisk together the condensed milk, lemon juice, egg yolks, and lemon zest in a medium bowl until combined. Pour the filling into the crust and bake until the center is set but still slightly jiggly, about 15 minutes. Let cool for 30 minutes, then refrigerate until chilled, about 2 hours.
  • Before serving, beat the heavy cream, powdered sugar, and vanilla in a large bowl with a mixer on medium speed until soft peaks form. Dollop on the center of the pie and serve.

Time 10m

1 (8 ounce) package cream cheese, at room temperature
1 (14 ounce) can sweetened condensed milk
1/2 cup lemon juice (can be fresh or bottled)
1 teaspoon vanilla extract
1 large prepared graham cracker crust

  • NOTE: Keebler is the only brand I have seen that serves the large graham cracker crust. It will have the note '2 extra servings' on the label.
  • NOTE: If you do not have enough time to let the cream cheese get to room temperature, I sometimes will microwave it 10 seconds at a time until it is fairly soft.
