LOW CARB CHICKEN PARMESAN
While on the South Beach diet, this dish satisfies my craving for the standard chicken parmesan dish.....but this recipe is missing the breadcrumbs. But it's so good you won't miss the breadcrumbs! In the world of low carb dieting, I like to serve this with a green veggie and/or tossed salad.

Steps:
- Preheat oven to 375 degrees.
- Spray a shallow, small baking dish with non-stick cooking spray.
- Season each side of breast with garlic salt and Italian seasoning to your liking; place in casserole dish.
- Spoon pasta sauce equally over top of each breast.
- Bake for about 45 minutes; sprinkle equally with cheeses and bake an additional 5 minutes or until cheese are melted.

LOW CARB CHICKEN CASSEROLE
My SO is doing low carb, and even those not doing low carb know that pasta is a big no - no. But sometimes even " low carbers " crave a casserole that's full of cheesy goodness. ;) So, I decided to try to come up with a recipe that was low in carbs and still fit the bill for cheesiness.For the chicken seasoning, I used Weber's Grill Creations " Kick' N Chicken " seasoning. But you can use whatever chicken seasoning you have on hand.And as always with my recipes, you can adjust the amount of seasoning as you like. Submitted to " ZAAR " on May 21st, 2009.

Steps:
- Preheat oven to 350 degrees.
- In a skillet large enough to hold chicken, melt margarine over medium heat.
- Add chicken and sprinkle with chicken seasoning, stirring well to coat.
- Cook chicken until no longer pink and slightly browned, set aside.
- To make the Cheese Sauce:.
- In a medium sized sauce pan, melt margarine over medium/low heat.
- Add flour and cook until lightly browned, and stir in milk a little at a time until slightly thickened.
- Stir 1 1/2 cups cheese into milk, to get desired thickness or thinness you might want to add a bit more milk .
- Then add salt and pepper to taste.
- In a large bowl, add cauliflower,chicken, and cheese sauce.
- In a greased 2 quart baking dish, add the cauliflower mixture.
- Sprinkle with remaining cheese,and bake at 350 degrees for 35 minutes.
LOW CARB MEXI BAKED CHICKEN
Another personal South Beach Diet friendly favorite of mine. It's flavorful and easy to throw together, bakes in less than 1 hour. I serve this with a side of my Mexican Jumping Beans. For the taco seasoning, I like to make my own (no sugar added; there are plenty of taco seasoning Zaar recipes to choose from, if you would like to make your own.

- Take the pork skins and crush them until they are like bread crumbs. (I use my food processor) Add the Mrs. Dash garlic herb, onion powder, Italian season, black pepper, sea salt into a zip-lock bag and set aside. Then mix the mayo, whipping cream and egg in a bowl. Rinse the chicken and then coat it with the mayo whipping cream and egg mixture. Take each piece and place in the zip lock bag and shake. Take it from the bag and place it on a well greased pan. You can grease the pan with bacon drippings or use 0 carb cooking spray. Bake at 375 until golden brown. Make sure you cook all chicken well done. Enjoy.

LOW CARB COATING FOR PORK, CHICKEN OR VEGGIES, NO PORK RINDS
Made this up to put on chicken breasts to make a "mock" chicken parmesan. Loved the results. Can use for pork chops, veggies, etc. Good with sweet potatoes.

Steps:
- In a shallow dish combine soy flour, salt, pepper, and garlic powder; mix well.
- In another shallow dish, mix beaten egg and milk together.
- In yet another shallow dish, mix parmesan cheese and parsley.
- STEP ONE: Dredge your meat in the soy flour mixture, knocking off all "excess" flour.
- STEP TWO: Dunk meat with soy flour mixture on it into the egg mixture, make sure there is egg on the whole thing.
- STEP THREE: Roll meat in the parmesan cheese mixture.
- Place on a foil covered baking sheet, make sure not to crowd it and place in the oven according to what kind of meat you're cooking.
- Chicken breasts--about 20-25 minutes; pork chops--about 30 minutes, depending upon thickness.
- Veggies are variable.
