This is adapted from the low-sodium cookbook Lite Up Your Life by Waynell Harris & Sherry Whitehurst, but with a couple of alterations in seasonings (the changes don't add sodium). Harris & Whitehurst call this 12 servings, but I'd say it's more like 6 (it depends on how much other stuff you serve with it, I guess).

1 (1 1/2 lb) eggplants, unpeeled,cubed
1/2 lb zucchini, unpeeled,cubed
1 medium onion, cut in wedges
1 lb fresh tomato, peeled and cut in wedges
1/2 teaspoon salt-free Italian herb seasoning, to taste
1/4 teaspoon instant minced garlic or 1/4 teaspoon garlic powder
1 tablespoon extra virgin olive oil
3/4 teaspoon sugar
2 teaspoons grated parmesan cheese

Steps:

  • Combine eggplant through garlic in an ovenproof casserole.
  • Drizzle oil over top& toss vegetables lightly to coat.
  • Sprinkle sugar and parmesan over top.
  • Bake, uncovered, at 375°F about 1¼ hours until vegetables are tender.

  • Heat 1 tablespoon oil in a Dutch oven over medium heat. Add onions and bell peppers; cook, stirring occasionally, until the vegetables begin to brown, 8 to 10 minutes. Add garlic and fennel seeds; cook, stirring, until fragrant, about 1 minute more. Transfer the vegetables to a large bowl.
  • Add 1 1/2 teaspoons oil to the pot. Add eggplant and cook, stirring frequently, until browned in places, 7 to 8 minutes. Transfer to the bowl with the vegetables.
  • Add the remaining 1 1/2 teaspoons oil to the pot. Add zucchini and cook, stirring frequently, until browned in places, about 5 minutes. Add tomatoes, basil, thyme and the reserved vegetables and bring to a simmer. Cover the pot and transfer to the oven.

  • Preheat oven to 425 degrees F with rack in middle position. Toss together eggplant, zucchini, bell peppers, onion, and garlic in a large bowl. Place tomatoes on a baking sheet and spread in an even layer. Place eggplant mixture on a separate baking sheet and spread in an even layer. Drizzle vegetables evenly with oil; sprinkle with salt.
  • Place baking sheets on middle rack in preheated oven; roast until vegetables are browned and softened, 40 to 45 minutes, tossing once halfway through the bake time.
  • Transfer vegetables from baking sheets to a large bowl; toss gently to combine. Spoon mixture evenly into 4 bowls. Drizzle evenly with balsamic glaze; sprinkle with goat cheese and basil.
