1 bay leaf
2 cans (6 oz. each) tomato paste
1/4 cup fat-free reduced-sodium chicken broth
3 cloves garlic, minced
1 tsp. dried basil leaves
1 tsp. dried oregano leaves
1/4 tsp. black pepper
1 pkg. (8 oz.) sliced fresh mushrooms
4 cups rotini pasta, uncooked
1 cup KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese
1/3 cup chopped fresh parsley

Steps:

  • Place onions in slow cooker; top with chicken and bay leaf. Mix next 6 ingredients in medium bowl. Add mushrooms; stir to evenly coat. Spoon over chicken; cover with lid.
  • Cook on LOW 7 to 9 hours (or on HIGH 4 to 5 hours). About 15 min. before ready to serve, cook pasta as directed on package, omitting salt.
  • Drain pasta. Remove bay leaf from chicken mixture; discard. Spoon chicken mixture over pasta; top with cheese and parsley.

½ teaspoon kosher salt
1 large package boneless skinless chicken thighs (about 1.5 pounds)
2 teaspoons olive oil
½ cup marinara sauce
½ cup chicken stock
½ red onion (sliced)
1 clove galirc (thinly iced)
1 green or red bell pepper (sliced)
Fresh basil
Red pepper flakes and Parmesan cheese for serving (optional)

Steps:

  • Place flour and salt in a large resealable back. Add chicken and toss to coat.
  • Heat oil in a skillet or slow cooker with a browning function.
  • Shake excess flour from chicken and brown on both sides (it takes about 2 to 3 minutes per side).
  • Add marinara, chicken broth, onion garlic, and pepper.
  • Cover and cook on LOW for 8 hours or HIGH for 4 hours.

The first time I had chicken cacciatore in a restaurant, it was made with skin-on, bone-in chicken. The skin was so yucky and the bones were hard to deal with through the sauce. This recipe uses bite size, skinless, boneless pieces so there is nothing to fight with or yuck up the sauce. All the veggies in the sauce give it a wonderful texture and flavor. This recipe would probably work in a crock pot, but I haven't tried it that way yet.

1 teaspoon olive oil
5 garlic cloves, minced
2 1/2 lbs boneless skinless chicken thighs, trimmed of fat and cut into bite sized pieces
8 ounces white button mushrooms, sliced
1 tablespoon oregano
1 teaspoon black pepper
1 teaspoon salt
1/4 teaspoon crushed red pepper flakes
7 stalks celery, diced
1 red pepper, seeded and diced (not the spicy kind)
1 large tomatoes, chopped
1 onion, diced
1 bunch green onion, chopped
1 (23 ounce) can hunts italian spaghetti sauce or 1 (23 ounce) can similar spaghetti sauce
1 (6 ounce) can tomato paste

Steps:

  • Heat the olive oil in a (very) large non-stick sauce pan or pot.
  • Add the garlic and cook for a minute or two at a medium heat.
  • Add the chicken, stirring until the outside is no longer pink.
  • Add the mushrooms and cook for several minutes.
  • Add the oregano, black pepper, salt and crushed red peppers and stir well.
  • Add the remaining ingredients, mix well and bring to a boil.
  • Simmer, stirring occasionally over medium to low heat for 35-45 minutes until the chicken is very tender.
  • Serve over rice or pasta.

1 onion, diced
2 cloves garlic, minced
1 cup carrots, diced

2 cups diced tomato with juice (sub nomato sauce for AIP)
1/2 cup chicken broth
1-2 tsp capers (adjust to taste)
1 tbsp parsley, chopped

Steps:

  • Add the chicken to the bottom of the slow cooker and season well with salt, pepper, and oregano.
  • Add the onion, garlic, carrots, and mushrooms over the chicken and mix well.
  • Pour the broth and tomato over the top of the chicken and mushooms and mix well to combine.

Nonstick spray for slow cooker bottom
1.5 pound and a half of chicken thighs boneless skinless
2 cups of tomato sauce
One cup of water
Half a teaspoon of salt
¼ tsp of coarse pepper
⅛ tsp red pepper flakes
Teaspoon of granulated garlic
3.8 ounce sliced right olives black
3 peppers sliced
1 onion sliced
2 carrots sliced
1 tablespoon of dried parsley
Half a tablespoon of dried basil

Steps:

  • Prep and cut all the vegetables. Cut the 3 peppers into slices. The thinner you cut the slices, the quicker it will soften. Slice the onions. Then, cut two carrots into strips.
  • Spray the slow cooker with nonstick spray to help it the chicken cacciatore not to stick during the cooking process.
  • Then, add the tomato sauce first. Add parsley, basil, salt, pepper, and granulated garlic. If you want it a little spicy, add 1/8 tsp red pepper flakes.
  • Add veggies, carrots, onions, peppers, and olives to the top of the tomato sauce. Stir the food into the sauce. Add 1 cup of water if it looks too dry.
  • Lay the chicken thighs on top of the tomato sauce mix and press down into the sauce. Make sure the chicken thighs are covered with a little bit of tomato sauce. Add the lid and cook in the slow cooker for 6 hours on low. Keep an eye on it to make sure it does not burn. Stirring every hour or so works just fine.
  • Twenty minutes before it finishes, cook the gluten-free (or regular) pasta or rice. Set aside.
  • After the slow cooker is finished, take it out and serve it on a bed of gluten-free pasta or rice if you want.

1 1/2 pounds chicken breasts
1 (28 ounce) can crushed tomatoes
1 (6 ounce) can tomato paste
2 garlic cloves, minced
1 large green bell pepper, seeded and diced
1 small yellow onion, peeled and diced (can mince if preferred)
2 teaspoons Italian seasoning

Steps:

  • In a large skillet, heat the olive oil over medium high heat. Add the chicken and season tops with salt and pepper to taste. Sear for about 2-3 minutes until lightly browned. Flip the chicken over and sprinkle more salt and pepper. Brown the other side of each piece of chicken for another 2-3 minutes. Remove from heat.
  • In a slow cooker, pour in the crushed tomatoes and tomato paste, stir to combine. Then stir in the garlic, chopped vegetables, and Italian seasoning. Add the chicken. Cover and cook on low for 3-3 1/2 hours until the chicken is fork tender. Season with salt to taste.
  • To make the polenta, bring the water and the milk to a light boil in a saucepan over medium high heat. Stir in the polenta and cook for about 10-15 minutes, whisking frequently, until the liquid is absorbed and the polenta is cooked. Remove the pan from the heat. Stir in the butter and Parmesan cheese. Add salt and pepper to taste. Serve with the cooked chicken cacciatore.

4 chicken thighs
2 chicken breasts with skin and backbone, halved crosswise
2 teaspoons salt, plus more to taste
1 teaspoon freshly ground black pepper, plus more to taste
1/2 cup all purpose flour, for dredging
3 tablespoons olive oil
1 large red bell pepper, chopped
1 onion, chopped
3 garlic cloves, finely chopped
3/4 cup dry white wine
1 ( 28-ounce) can diced tomatoes with juice
3/4 cup reduced-sodium chicken broth
3 tablespoons drained capers
1 1/2 teaspoons dried oregano leaves
1/4 cup coarsely chopped fresh basil leaves

Steps:

  • Sprinkle the chicken pieces with 1 teaspoon of each salt and pepper. Dredge the chicken pieces in the flour to coat lightly.
  • In a large heavy saute pan, heat the oil over a medium-high flame. Add the chicken pieces to the pan and saute just until brown, about 5 minutes per side. If all the chicken does not fit in the pan, saute it in 2 batches. Transfer the chicken to a plate and set aside. Add the bell pepper, onion and garlic to the same pan and saute over medium heat until the onion is tender, about 5 minutes. Season with salt and pepper. Add the wine and simmer until reduced by half, about 3 minutes. Add the tomatoes with their juice, broth, capers and oregano. Return the chicken pieces to the pan and turn them to coat in the sauce. Bring the sauce to a simmer. Continue simmering over medium-low heat until the chicken is just cooked through, about 30 minutes for the breast pieces, and 20 minutes for the thighs.
  • Using tongs, transfer the chicken to a platter. If necessary, boil the sauce until it thickens slightly, about 3 minutes. Spoon off any excess fat from atop the sauce. Spoon the sauce over the chicken, then sprinkle with the basil and serve.

Steps:

  • Combine vegetables and garlic in slow cooker sprayed with cooking spray; top with chicken.
  • Mix broth, dressing, tapioca and seasonings until blended; pour over chicken. Cover with lid.
  • Cook on LOW 6 to 7 hours (or on HIGH 3 to 3-1/2 hours).

1 1/2 pounds skinless, boneless chicken thighs
1 carrot, finely chopped
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground pepper
3 cloves garlic, minced
2 sprigs fresh basil, plus torn leaves for topping
1 14.5-ounce can stewed tomatoes, crushed by hand
1/2 cup dry red wine
1/4 cup all-purpose flour
2 tablespoons tomato paste
1 cup white rice

Steps:

  • Soak the mushrooms in 2/3 cup hot water, 10 minutes. Strain through a paper towel-lined sieve, reserving the liquid. Rinse the mushrooms and finely chop.
  • Meanwhile, toss the chicken and carrot with the olive oil in a 6- to 8-quart slow cooker; season with salt and pepper. Top with the chopped mushrooms, garlic and basil sprigs, then pour in the tomatoes and their juices. Whisk the red wine with the flour, tomato paste and reserved mushroom liquid in a bowl until smooth; add to the slow cooker. Cover and cook on low, 7 hours.
  • About 10 minutes before the chicken is done, cook the rice as the label directs. Uncover the slow cooker and stir, breaking up the chicken into chunks; let stand, uncovered, until the sauce is thickened, about 15 minutes. Discard the basil sprigs and season with salt and pepper. Serve the chicken with the rice; top with torn basil.
