PEANUT CHICKEN LETTUCE WRAPS

- To make the peanut sauce, whisk together peanut butter, soy sauce, lime juice, brown sugar, chili garlic sauce and ginger in a small bowl. Whisk in 2-3 tablespoons water until desired consistency is reached; set aside. Heat vegetable oil and sesame oil in a large skillet over medium high heat. Add ground chicken, mushrooms, carrot and shallot. Cook until browned, about 5-7 minutes, making sure to crumble the chicken as it cooks; drain excess fat. Stir in garlic and ginger until fragrant, about 1 minute. Stir in hoisin sauce, chili garlic sauce and fish sauce until heated through, about 30 seconds. Remove from heat; stir in cilantro. To serve, spoon several tablespoons of the chicken mixture into the center of a lettuce leaf, taco-style, drizzled with peanut sauce.
THAI CHICKEN WRAP WITH SPICY PEANUT SAUCE

- Heat a grill pan over high heat. Toss chicken with soy and oil and grill 6 minutes on each side.
- Combine cucumber, sprouts, carrots, scallions, basil, mint and sesame with a generous sprinkle of sugar and vinegar. Season salad with salt, to taste.
- Whisk peanut butter, soy sauce, vinegar and cayenne together. Stream in vegetable oil.
- Slice cooked chicken on an angle. Toss with veggies and herbs.
- In a very hot nonstick skillet or over a gas burner heat tortillas 15 seconds on each side.
- Pile chicken and veggies in wraps and drizzle liberally with spicy peanut sauce before wrapping and rolling.

- Use 1 tsp olive oil to coat a large saucepan or wok and put on high heat. Chop chicken breast into bite sized pieces. Chop onions and cabbage into medium strips. Finely chop garlic. Grate carrot with a peeler into thick strips.
- Add chicken, onions and carrots carefully to hot pan and heat until onions begin to brown. Add cabbage, snap peas, and water chestnuts. Add bean sprouts LAST, waiting until all other vegetables are mostly cooked.
- As vegetables cook add salt, pepper, and cayenne pepper to taste. If pan gets a bit dry, instead of adding oil, use a half cup of water. When vegetables are mostly cooked, add peanut butter and a 1/4 cup of water, mix well and reduce. Remove pan from heat and let sit one or two minutes.
- Chop one head of lettuce in half. Discard outer leaves and remove hard stalk. Pull leaves from the head, and try your hardest to keep them intact. Use lettuce leaves like a tortilla, filling them with hot chicken and vegetables.
- Meal is complete when served with brown rice. Meal is also great when made vegetarian style.

They'll love the combination of crisp, cold lettuce with the warm, flavorful filling. And it's a low-calorie, low-fat treat that's also very nutritious. Lettuce wraps make a great party food!

- Place oil in a wok or large frying pan over medium-high heat. Add garlic, galangal (or ginger), chilli, and shallots. Stir-fry one minute, or until fragrant. Stir-frying tip: add a tablespoons water whenever the wok/pan gets too dry instead of more oil.
- Add tofu (or meat/shrimp), carrot, shiitake mushrooms, cabbage, and spring onions.
- As you stir-fry, add the lime juice, soy sauce, fish sauce, and oyster sauce. Stir-fry about 1 minute.
- Push ingredients to the side of the wok or pan, and crack in the egg. Stir-fry the egg quickly, breaking the yolk. Mix in with the other ingredients.
- Add the bean sprouts and stir-fry briefly (to mix). Remove from heat and do a taste test for salt, adding 1 Tbsp more fish sauce if not salty enough.
- Cut off the stem part of the iceburg lettuce so it's easier to separate the leaves. Now place the lettuce, the sir-fried filling, and the toppings on your table, allowing family or guests to make their own wraps.
- To assemble wraps, take a whole lettuce leaf and place 1-2 heaping tablespoons of filling in the center. Top with a sprinkling of fresh basil and peanuts. Then wrap it up and eat. (For those who like it extra spicy, Thai chilli sauce can be added as another topping.).

- Combine chicken, ginger , garlic and red pepper flakes in a medium size bowl. Blend soy sauce and cornstarch in a small bowl until smooth.
- Heat wok or large skillet over med heat. Add oil heat until hot. Add chicken mixture and stir fry 2 to 3 minutes or until chicken is cooked through.
- Stir soy sauce mixture and add to wok. Stir fry 30 seconds ur until sauce boils and thickens. Add water chestnuts, onions and peanuts, heat through.
- Divide filling evenly among lettuce leaves and roll up. Secure with tooth pics and serve warm. Serve with hoisen sauce or you can put the hoisen sauce in the lettuce leave mixture as you roll it up.
- You can also just place the lettuce, the cooked chicken mixture and the hoisen sauce on the table and let the individuals roll as desired.

- SAUCE: To a small powerful blender jar (I use a mini Blendtec/twister jar) add 1/4 cup creamy peanut butter, 3 tablespoons honey (See Note 1), 2 tablespoons olive oil, 1 tablespoon + 2 teaspoons water, 1 and 1/2 tablespoons rice vinegar, 1 and 1/2 tablespoons low sodium soy sauce, 1/8 teaspoon pepper, 1/8 teaspoon cayenne pepper (optional, depending on your preference for heat), and 1/4 teaspoon salt. Blend until smooth and refrigerate while preparing everything else.
- CHICKEN: Remove fat and halve breasts lengthwise if they are thick. Pound chicken to get the pieces uniformly thick throughout. You can pound them with a meat mallet or the bottom of a heavy frying pan. Pat both sides of the chicken with paper towels. On one side of the chicken, drizzle 1/2 tablespoon olive oil and rub it in. Sprinkle on half of the salt, half of the pepper, half of the turmeric, and half of the cumin. Gently press in the spices and then flip the chicken to the other side. Drizzle remaining 1/2 tablespoon olive oil and the remaining half of all the spices.
- CHICKEN CONT.: Preheat an indoor or outdoor grill for medium-high heat (400-450 degrees F on an outdoor grill) and generously oil the grates (Note 2). Cook on the preheated grill until the chicken is golden and no longer pink in the center, about 4-5 minutes per side (or until chicken registers 165 degrees F). Remove, cover with foil, and let stand for 5-10 minutes. When cooled slightly, dice the chicken into bite-sized pieces. To saute the chicken instead see Note 3.
- VEGGIES: Prep veggies while chicken is cooking: slice a bell pepper into small matchstick-sized pieces, cut matchstick carrots use prepared matchstick carrots. Cut the cucumber(s) into matchstick pieces. If you aren't using salted nuts, add a pinch of salt to the veggies. Finely chop the peanuts.
