APPLE RAISIN NUT SPICE CAKE

Around the Holidays ( Easter, Thanksgiving or Christmas ) this is one of my family's favorites. We hope you like it too!

Number Of Ingredients 15

1 cup all-purpose flour
2 cups wheat flour (or use 3 cups of All Purpose)
1 teaspoon baking soda
1 teaspoon salt
2 teaspoons cinnamon
2 teaspoons nutmeg
1 teaspoon allspice
1 1/2 cups sugar
2 large eggs
1/2 cup molasses or 1/2 cup dark corn syrup
1 cup applesauce
1/2 cup raisins (soak in Orange juice)
1 1/2 cups diced fuji apples
1/2 cup orange juice
1/2 cup chopped pecans (optional) or 1/2 cup walnuts (optional)

Steps:

  • Preheat oven to 375* next Grease and flour a Bundt pan.
  • Except for the Sugar, Sift Dry Ingredients together into a large mixing bowl. Add Sugar, beaten Eggs, Applesauce, Molasses, Orange juice, Raisins, Apples and Nuts. Batter should be thick.
  • Pour Batter into the bundt pan and Bake for 45 minutes or until toothpick inserted comes out clean.
  • Let cake cool, remove from pan and sprinkle with powdered sugar or make a glaze.

cake ingredients:
2 cups bread flour
1 cup granulated sugar
1 tablespoon baking powder
1/4 teaspoon salt
1 tablespoon finely grated orange peel
1 6 ounce jar of pear baby food
3/4 cup skim milk (i used 2%)
1/4 cup fresh orange juice
1/2 teaspoon orange extract
4 egg whites, at room temperature
2 tablespoons granulated sugar

orange frosting:
2 tablespoons light margarine
2 cups powdered sugar
2 tablespoons fresh orange juice
1 teaspoon finely grated orange peel
1 teaspoon orange extract
1 cup powdered sugar

Steps:

  • 1. Important Note: Do not omit or substitute the pear baby food. There is a reason it is in the cake.
  • 2. MAKE THE CAKE: Preheat the oven to 350 degrees. Using Pam kitchen spray, spray two 8 inch cake pans.
  • 3. Combine flour, 1 cup granulated sugar, baking powder, salt and orange peel in a large mixing bowl. Set aside.
  • 4. In a small bowl, combine pears, milk, 1/4 cup orange juice, and 1/2 teaspoon orange extract and blend well.
  • 5. In a small mixing bowl with an electric mixer on medium speed, beat the egg whites until soft peaks form. Add 2 tablespoons granulated sugar and beat egg whites until stiff peaks form but are not dry. Add the orange juice mixture to the egg whites, and beat on moderately low speed until well blended.
  • 6. Now add the egg white mixture to the dry ingredients BY HAND and quickly mix with a rubber spatula to quickly fold in. Don't overmix.
  • 7. Pour batter into two 8 inch prepared pans. Bake at 350 for 25 minutes to 30 minutes. Do not overcook! Cake will start to pull away from the sides and will be done when you do the toothpick test and it comes out clean. Cake will only be light brown. Remove from oven, cover with wax paper, and put on a rack to cool before removing from pans.
  • 8. MAKE THE FROSTING: In a medium bowl, and using the hand mixer, beat margarine until smooth. Add 2 cups powdered sugar, 2 tablespoons orange juice, orange peel, and 1 teaspoon orange extract and beat until blended. Add 1 cup powdered sugar and beat until orange frosting is light and fluffy. If it gets too thick, add a tiny splash of orange juice to thin and beat before frosting.
  • 9. FROST THE CAKE! Place 3 strips of wax paper on your cake serving plate. Set the first layer on the wax paper. Spread frosting on the top of the first layer, and then add the second layer on top and frost top and sides of cake. Slip the waxed paper strips out from under the cake, and your dish is clean. Refrigerate the cake for 2 or 3 hours. serve slightly chilled.
  • 10. What To Expect: This was delicious! The frosting is to die for, and I cannot believe it is lowfat! The cake has a medium dense full-bodied texture. We liked it. Very satisfying. It was great with a cup of mocha or milk. About Substitutes: Can you use Splenda? I have no idea. I have only made the recipe exactly as written, and for us it was sensational. If you do use Splenda with good results, please let us know!

1/2 cup orange juice
2 egg whites
1/4 cup applesauce
1 cup flour
1/2 cup whole wheat flour
1/2 cup sugar
1 teaspoon baking powder
1 teaspoon baking soda

1/2 cup raisins
1/2 cup chopped nuts, any kind you like

Steps:

  • Cut orange into pieces.
  • Put the WHOLE orange (in pieces) orange juice, egg and applesauce into blender.
  • Blend or process until smooth.
  • Add flours, sugar, baking powder, baking soda and salt, blend or process.
  • Add raisins and nuts, blend or process just until mixed.
  • Pour into 9 x 9 square pan, lightly greased, and bake at 375° in a preheated oven for about 30 minutes.
  • Check at 30 minutes to see if it is cooked.
  • Cut into squares and enjoy this, or the original#32086.

I adore cakes with orange flavours and this cake is so moist and flavorful. You would be amazed how good it tastes. I found this recipe on net--I don't remember where I got this from, but I guess it's from allrecipes.com.

2 cups flour
1 1/2 cups sugar
1 cup butter
1/4 teaspoon salt
1 1/2 teaspoons baking powder
1/2 cup chopped walnuts (or toasted almonds)
4 eggs
1/2 cup raisins
1/2 cup orange juice
1 teaspoon vanilla extract
1 teaspoon flour

Steps:

  • Sieve flour salt and baking powder together.
  • In a separate bowl, mix chopped nuts and raisins. Coat them together with a tsp of flour to avoid them sinking to the bottom of the cake pan.
  • In a large bowl, cream butter and sugar. Add eggs one at a time; beat for 1-2 minutes on a slow speed mixer.
  • Stir in vanilla.
  • Add the flour mixture to the butter mixture alternating with the orange juice.
  • Mix well.
  • Add nuts and raisins; mix with a wooden spoon.
  • Pour in greased dish and bake at 175°c for about 60 minutes.
  • Let cool well before serving
  • (My cake usually cooks even before one hour and at times takes longer to brown, however keep checking and don't overcook or else it would loose its moistness).

4 eggs

1 orange, rind of, grated
2 cups mashed ripe bananas
1 cup strong brewed coffee
4 cups flour
1 teaspoon salt
1/2 teaspoon baking soda
3 teaspoons baking powder
1/2 teaspoon nutmeg

1 cup raisins
1 cup chopped walnuts

Steps:

  • Set oven to 350 degrees.
  • Grease two 8 x 4-inch loaf pans.
  • In a bowl beat melted butter with brown sugar for 2 minutes (or until no sugar granules remain).
  • Add in eggs, vanilla, almond extract and the rind from 1 orange.
  • Mash 2 cups bananas in 1 cup brewed coffee; add to the creamed mixture; mix to combine.
