OVEN-ROASTED CHIPS

Try these oven-roasted chips, far less fatty than their fried cousins

6 large floury potatoes, such as Maris Piper, King Edward, Desirée (about 1.6kg)
2 tbsp olive oil
1 tsp celery salt
sea salt, to serve

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Peel the potatoes and cut them into long chip shapes - the thickness is entirely up to you, though the width of a finger is ideal. Rinse under the cold tap and pat dry with a tea towel.
  • Spread the chips on a large non-stick baking tray and toss with the olive oil and celery salt. Lie them flat in a single layer - use two trays rather than overcrowd one.
  • Roast for 45-50 mins, turning now and then. When cooked they should be golden brown and crisp with a light fluffy centre. Scatter on sea salt to serve.

750 g potatoes ( about 4 medium potatoes. Floury varieties are best eg Maris Piper, King Edward or Russet)
3 tbs rapeseed / Canola oil
1 tbs cornmeal
1 tsp paprika
½ tsp salt
¼ tsp black pepper

Steps:

  • Preheat oven: 230℃ / 220℃ fan / 450℉ / Gas mark 8
  • Peel and cut your potatoes into 1cm slices and then into 1cm x 1cm sticks.
  • Rinse in cold water and drain.
  • Place your drained chips in a large microwaveable bowl. Microwave on full power for 5 minutes and drain.
  • Add 2 tablespoons of rapeseed oil to the chips and coat well.
  • Mix together the cornmeal, paprika, salt and pepper. Coat the oiled chips with your seasoned cornmeal.
  • Grease your roasting tray with a little oil and place your chips evenly on the tin. Allow plenty of room for air circulation so your chips can crisp and brown.
  • Place in pre-heated oven. Turn the chips over after 15 minutes and pop back in the oven for 10 minutes.
  • Serve straightaway with a sprinkling of salt.

2 sprigs rosemary, leaves finely chopped
2 tablespoons grill seasoning

Steps:

  • Heat the oven to 500 degrees F.
  • Thinly slice the potatoes lengthwise 1/8-inch thick. Arrange potatoes in a single layer on nonstick baking sheet. Brush the potatoes with extra-virgin olive oil, rosemary and grill seasoning. Bake potatoes turning once 25 minutes until crisp.

groundnut oil, for drizzling
sea salt and freshly ground black pepper

Steps:

  • Heat oven to its highest setting, ideally 250C/fan 230C/gas 9. Cut each potato into 1cm-wide slices, then into 1cm-thick sticks. Blanch in a large pan of boiling water for 3 mins, then drain well.
  • Shake the potatoes out onto a roasting pan, drizzle with oil, ensuring each chip is evenly coated, then season well. Bake for about 15-20 mins, turning the potatoes at least twice, until golden brown and crisp.

1 large potato, scrubbed clean and sliced wafer thin
1/2 teaspoon olive oil
salt or seasoning

Steps:

  • Pour oil in a plastic Ziploc baggie, along with whatever seasoning or spice preferred.
  • Put potato slices in bag.
  • Blow up the bag and quickly seal it shut.
  • Shake vigorously until all the slices are coated.
  • Arrange slices in a circle on a microwave-proof plate.
  • Microwave on high for 4 minutes.
  • Turn chips over and re-arrange them so they cook evenly.
  • Microwave again for 2 minutes.
  • Turn.
  • Watch them carefully and microwave again for about 2 minutes or until they start to brown.
  • They must brown a little in places or they will not crisp up.
  • Remove and let cool.
  • The chips crisp when cooling.

700 g potatoes
1 3/4 pints meat stock or 1 3/4 pints vegetable stock
2 tablespoons vegetable oil

Steps:

  • Pre-heat the oven to 220 degrees.
  • Cut the potatoes into thick chips.
  • Heat the stock in a large pan,when boiling,plunge the potatoes into it and cook approx 5 mins or until just tender.
  • Drain the potatoes and cool slightly-reserve the stock for making chips on another day!
  • Put the oil in a large ziplock bag and carefully toss the chips in it-at this point you can freeze them for use another day.
  • Transfer the chips to a non-stick baking tray and bake for approx 15 mins,turning them once or twice, until golden and crisp (if cooking from frozen allow a little longer!).
  • Sprinkle with paprika or if you're like me and can't live without it some spicy chicken salt.

2 tbsp olive oil
50g fresh breadcrumb
zest 1 lemon
2 tbsp chopped flat-leaf parsley
4 x 140g/5oz thick sustainable white fish fillets
200g/ 7oz cherry tomato

Steps:

  • Heat oven to 220C/200C fan/gas 7. Pat chips dry on kitchen paper, then lay in a single layer on a large baking tray. Drizzle with half the olive oil and season with salt. Cook for 40 mins, turning after 20 mins, so they cook evenly.
  • Mix the breadcrumbs with the lemon zest and parsley, then season well. Top the cod evenly with the breadcrumb mixture, then drizzle .0with the remaining oil. Put in a roasting tin with the cherry tomatoes, then bake in the oven for the final 10 mins of the chips' cooking time.

450g floury potatoes, such as King Edward potato or Maris Piper
2 garlic cloves , sliced
4 fresh rosemary sprigs or 1 tsp dried
2 tbsp olive oil
2 eggs

Steps:

  • Preheat the oven to 220C/gas 7/ fan 200C.Without peeling, cut the potatoes into thick chips. Tip them into a roasting tin (non-stick is best) and scatter over the garlic. Strip the rosemary leaves from the sprigs and sprinkle them, or the dried rosemary, over too. Drizzle with the oil, season well, then toss the chips to coat them in oil and flavourings.
  • Oven-roast the chips for 35-40 minutes until just cooked and golden, shaking the tin at half time.
  • Make two gaps in the chips and break an egg into each gap. Return to the oven for 3-5 minutes until the eggs are cooked to your liking.

Best ever oven chips image

Make your own crispy, golden oven chips and save yourself some money. They're also much easier to cook than their fried counterparts

1kg large Maris Piper potatoes , peeled
1 tbsp white or malt vinegar
75ml vegetable oil
2 tsp plain flour
2 tsp cornflour or potato flour
½ tsp baking powder
small pinch cayenne

Steps:

  • Trim all the rounded edges off the potatoes to make a rectangular block, then cut this into thick batons (save any offcuts to make mash). Drop into a pan of cold salted water with the vinegar and bring to the boil. Simmer for 6-8 mins until the potatoes are just cooked and tender - test with the tip of a knife. Drain carefully, trying not to break any of the chips, and leave to cool completely. Can be prepared up to two days ahead and chilled until needed.
  • Heat the oven to 220C/200C fan/gas 9. Pour the oil into a sturdy, rimmed baking tray or shallow roasting tin and heat in the oven. Mix the flours with the baking powder, cayenne and some salt in a shallow dish and gently toss the chips in the floury mixture to coat, then leave in the mixture until needed.
  • Carefully remove the pan from the oven - the oil should be shimmering - and lay the chips in a single layer in the pan. Use a thin, flexible spatula to gently turn the chips so they are all coated, then roast for 20 mins. Turn the chips again, then roast for another 10 minutes. Turn one final time, then cook for a futher 10 minutes until crisp and deep golden all over. Drain the chips onto kitchen paper and serve straight away.
