CHEF JOHN'S FRENCH FRIES

Chef John's French Fries image

I don't think most people realize that any decent French fry needs to be twice fried. The first frying in done at a lower temperature, which softens the potato and prepares the starchy surface for the second frying's crispification.

EASY CRISPY OVEN FRIES (LOW FAT, LOW CAL)

Easy Crispy Oven Fries (Low Fat, Low Cal) image

This is a delicious lower fat, lower calorie baked french fry--evidently soaking the potatoes in the salt-sugar solution draws out some of their water. This way they brown and crisp instead of steam. So yummy! (to me, these taste like the fry-daddy type french fries my mom made me when I was a kid!) My non-dieter husband also deemed these delicious. 159 calories/5 g. fat, 0 mg. cholesterol/28 g. carbs/3 g fiber Weight Watchers Points per serving: 3 This came from a WW book, but I'm not sure which one.

Yield 4 serving(s)

Number Of Ingredients 5

1 1/4 lbs baking potatoes, peeled and cut into 1/2-inch strips
1/2 teaspoon sugar
4 teaspoons oil
1 teaspoon paprika
3/4 teaspoon salt

Steps:

  • Preheat oven to 450 degrees. Spray a non-stick baking sheet w/ non-stick cooking spray.
  • In a lg. bowl, combine potatoes, 1/4 teaspoons of the salt and all of sugar w/ cold water to cover. Soak 15 min, drain and blot dry.
  • In another lg. bowl, toss potatoes w/ oil and paprika. Place in a single layer on the baking sheet.
  • Bake, turning potatoes over as they brown, until cooked through and crisp. (Could take anywhere from 25-45 min., depending on how you cut your potatoes and your oven. My fries only took about 25 minute I checked on my potatoes and turned them about every 5 minute or so. You will see them browning and hear them sizzling.) Sprinkle w/ the remaining 1/2 teaspoons of salt.

ITALIAN SEASONED FRIES (LOW FAT)

Italian Seasoned Fries (Low Fat) image

One of the great things about making your own fries (in addition to being much less fattening than those you eat out) is that you can tailor them to your preference using herbs and seasonings. Feeling like some garlic fries today? Simply sprinkle them with some garlic, salt (or garlic salt) and a touch of parsley. Add some Parmesan and crushed red pepper flakes and you have these Italian fries. Lake spicy Cajun fries? Hit them up with some Cajun seasoning. Or sprinkle them with some fresh garlic and rosemary and you'll be in for a different treat. The important think to remember is that you need only a touch of olive oil to create the perfect fries. LOW FAT " MC DONALD'S" FRENCH FRIES

I got this from Devin Alexander's cookbook, Fast Food Fix. They are wonderful! They taste very close to a full fat version of McDonald's fries. Enjoy!

Number Of Ingredients 3

1 3/4 teaspoons salt, divided
1 -2 russet potato
1 teaspoon extra virgin olive oil

Steps:

  • Bring water to boil in a saucepan over high heat. Add one teaspoon of salt.
  • Preheat oven to 400°F.
  • Peel potatoes and slice into 1/4 inch fries.
  • Weigh the potatoes and measure out 9 ounces.
  • Transfer potatoes to boiling water and cook exactly 2 1/2 minutes.
  • Drain in colander and let cool (about 5 minutes).
  • Transfer cooled potatoes to a mixing bowl and add oil and 1/2 teaspoon of salt.

FRENCH FRIES

French fries image

Perfect French fries with our easy recipe - you'll end up with lightly golden, crisp fries. They're great as a snack or side dish to a Friday night feast

Provided by Adam Bush

Categories     Side dish

Time 30m

Yield Serves 4 as a side

Number Of Ingredients 2

1kg Maris Piper or King Edward potatoes
vegetable oil, for deep frying

Steps:

  • Peel the potatoes and cut into 1cm-thick batons. Put into a bowl of cold water and leave to soak for at least 2 hrs to remove the starch from the potatoes - this will help them crisp while frying.
  • Drain the potatoes well and pat dry with kitchen paper. Fill a deep pan no more than a third full with oil and heat to 140C, or until a cube of bread dropped in browns in 60 seconds. Fry the French fries in batches for 6 mins per batch until golden straw-coloured, cooked through and lightly crisp. Drain well on kitchen paper.
  • Turn the heat up until the oil reaches 180C, or a cube of bread browns in 30 seconds. Fry the French fries again for 2-3 mins per batch until lightly golden and really crisp. Drain on kitchen paper and immediately season with sea salt.

LOW FAT TATERS (BREADED FRENCH FRIES)

Low Fat Taters (Breaded French Fries) image

You should really experiment with the seasonings... it's a great way of changing up the flavours. Try and use Hebamare in most recipes rather than just plain salt, and in this recipe I always try and use Hebamare Spicy. Try it with extra garlic or onion powder sometime as well. This is an adaptation of an adaptation, but just fantastic all the same! Original recipe was in the "Kitchen With Rosie" book, or so I am told.

Categories     Potato

Time 1h

Yield 1-2 serving(s)

Number Of Ingredients 7

2 large russet potatoes
1 egg white
1 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon curry powder (or other hot seasoning)
1 teaspoon fresh ground pepper
1/2 cup flour

Steps:

  • Wash the potatoes, scrubbing well to remove all of the dirt; don't bother skinning them.
  • Cut the potatoes into wedges and let soak in water for at least 15 minutes, preferably longer. Change the water once if desired, but note that while changing the water gets rid of more starch, it can impact flavour as well.
  • Combine egg white and seasonings (excluding flour) in a large bowl.
  • Drain the potatoes, pat dry and put them in the bowl with the egg mixture.
  • Coat all fries with the egg white and seasoning mix, ensuring a good coverage.
  • Coat the fries with a light coating of flour, rotating and mixing as needed to try and make it an even coat.
  • Prep a baking sheet with a light coating of vegetable oil, and spread the fries out as evenly as possible.
  • Coat the top of the fries with vegetable spray and bake for 35 to 45 minutes or until golden brown.
