LOW FAT BUT CREAMY COLESLAW
Homemade Creamy Coleslaw, a delicious low-fat salad option to a popular side dish, using fresh ingredients. Ideal for BBQ's, parties and burgers!

Steps:
- All you need to do is thinly shred everything like in the photo and then add to a mixing bowl.
- I used a grater with big holes for the carrots and used a regular knife to finely shred the cabbage and the onion. You can use a processor, but I find this makes the carrots too fine, and the onion turns to watery mush, so use a knife!
- Add the salt & pepper, lemon juice and then using a large spoon, stir everything and start adding 2 tablespoons of yoghurt at a time (you can add more or less for creaminess) Keep stirring and taste it. If it needs more sweetness, add some of the honey. If it needs more creaminess, add some more yoghurt. Everybody has different tastes so you add as much or as little of one ingredient as you wish.
- Then refrigerate until ready to serve.
- You can keep it refrigerated for a couple of days. Just give it a stir before you are ready to serve it.

CREAMY SKINNY COLESLAW RECIPE

- In a large mixing bowl, combine Greek yogurt, vinegar, lemon juice, sugar, celery seed, salt and pepper. Whisk until a dressing forms.
- Add coleslaw mix, red onion, and green onions. Toss to combine, making sure all the coleslaw is coated.
- Cover and refrigerate for at least 1 hour before serving. Taste and adjust salt and pepper seasoning.

- In a large bowl, toss together the cabbage, tomatoes, onion, chiles, salt, sugar and peanut powder until evenly combined.
- In a small saute pan, heat the clarified butter over medium heat. Add the cumin and stir until toasted. Remove from heat, pour over the salad mixture and gently mix together. Chill until serving, and serve garnished with cilantro.

CREAMY CABBAGE SALAD
This is a delicious coleslaw served at Zehnders Restaurant in Frankenmouth, Michigan. It is taken from "The Flavours of Frankenmouth" written by Chef John Zhender. It is Zehnder's Most Requested Recipe.

Steps:
- Mix first 5 ingredients until smooth.
- (Zender's seasoning can be purchased at the restaurant or by mail order.) It contains garlic and paprika along with some other spices.
- I use the Zender's seasoning.
- Store in refrigerator.
- Chill before using.
- Shred cabbage.
- Add carrots, onions, red cabbage and green peppers.
- Add dressing until it coats the cabbage but doesn't make it soggy.
- Recipe may be halved as it makes a large quantity, otherwise.

- Heat the oil in a casserole pot over a low heat. Add the onion, celery and carrot, along with a generous pinch of salt, and fry gently for 15 mins, or until the veg begins to soften. If you're using pancetta, add it to the pan, turn up the heat and fry for a few mins more until turning golden brown. Tip in the cabbage and fry for 5 mins, then stir through the garlic, paprika and rosemary and cook for 1 min more.
- Tip the chopped tomatoes and stock into the pan. Bring to a simmer, then cook, uncovered, for 30 mins, adding the chickpeas for the final 10 mins. Season generously with salt and black pepper.
- Ladle the soup into six deep bowls. Serve with the shaved parmesan and crusty bread, if you like.

CABBAGE AND ONION SALAD
I have had this recipe at many church functions and cookouts. This particular recipe is from my "Farm Journals Country Cookbook", originally published in 1958. This is from the 1972 edition. If using green cabbage, use white onions and if using white cabbage, use red onions. Cooking time is the chill time. It is very good. Hope you enjoy!

- Alternate layering cabbage and onions in a bowl, with onions for the top layer.
- Combine sugar, vinegar, salt, celery seeds, mustard and pepper in a saucepan.
- Bring to a boil.
- Remove from heat, add salad oil.
- Drip hot mixture over the cabbage and onions, do not stir.
- Cover and refrigerate for 24 hours.

- Pull off any tough outer leaves from the cabbage and discard. Cut in half, then remove the hard inner core. Rinse the leaves, then shred as finely as you can. Cut the carrots into fine, thin strips or grate in the food processor.
- Bring a pan of water to the boil and add the cabbage and carrots. Boil for 6 mins until just tender, then drain. Return to the hot pan and add the butter and cream. Season with pepper, and salt if you like, add the nutmeg and stir well to coat. Pile into a serving dish and serve immediately.
