LOW-FAT CREAM OF CELERY SOUP
De-'light'-ful blend of celery, creamy base, and seasonings for a warming low-fat version of cream of celery soup. You can substitute beef broth for the chicken broth.

Steps:
- Heat olive oil in a saucepan over medium heat. Cook and stir celery and onion in hot oil until celery is almost completely tender, about 5 minutes. Add chicken broth, garlic salt, butter flavoring, parsley, celery seed, and black pepper. Bring to a boil, reduce heat to low, cover the saucepan with a lid, and simmer until celery is completely soft, 5 to 10 minutes more. Remove from heat.
- Pour milk and potato flakes into a jar, cover the jar with a lid, and shake until flakes and milk are completely combined.
- Pour celery mixture into a blender no more than half full. Cover and hold lid down; pulse a few times before leaving on to blend. Puree in batches until smooth. Return pureed celery soup to saucepan.
- Heat soup in the saucepan over low heat; stir milk-potato flake mixture into soup until completely incorporated and hot, 3 to 5 minutes.

CREAMY CELERY SOUP (VEGAN)
The ingredients for vegan celery soup are minimal and easily accessible making this a perfect vegan soup for an easy weeknight dinner or whenever you want a quick meal ready in 30 minutes.

Steps:
- Heat butter/oil/water over medium heat, add the celery, leek/onion, potatoes, garlic, and generous pinch of salt, saute for 8 - 10 minutes stirring frequently.
- Add the liquids, bring to a boil, reduce heat to medium low and cook at a gentle boil for 10 minutes, or until potatoes are just fork tender.
- Remove from heat, add the dill and parsley, give a good stir. Enjoy as is or continue to next step.
- Puree the soup using an immersion blender or transfer the soup to a blender and blend until creamy.
- Serve warm or chilled topped with a few chopped celery leaves and parsley. Great with drizzle of Vegan Cream!
- Soup pairs well with homemade Artisan Bread, Naan Bread or a slice of toasted Dave's Killer Bread with vegan butter. For gluten free, try this chickpea flour Socca Flatbread, it's not as bready but it's still delicious!
- Serves 4 - about 1 1/2 cups per serving.
- Leftovers will keep for 5 - 6 days in the refrigerator, stored covered. For longer storage, this soup can be stored in the freezer for 2 months in freezer safe containers or baggies.

- Heat the oil in a large saucepan over a medium heat, tip in the celery, garlic and potatoes and coat in the oil. Add a splash of water and a big pinch of salt and cook, stirring regularly for 15 mins, adding a little more water if the veg begins to stick.
- Pour in the vegetable stock and bring to the boil, then turn the heat down and simmer for 20 mins further, until the potatoes are falling apart and the celery is soft. Use a stick blender to purée the soup, then pour in the milk and blitz again. Season to taste. Serve with crusty bread.

CREAM OF CELERY SOUP

- Melt the butter with the olive oil in a large pot or Dutch oven over medium-high heat. Add the onion, season with 1/2 teaspoon salt and cook, stirring occasionally, until softened but not browned, about 4 minutes. Add the celery, celery root and 1 teaspoon salt. Cook, stirring occasionally, until the celery is tender, about 7 minutes.
- Add the bay leaf, chicken broth and 2 cups water and bring to a boil. Reduce the heat to medium low and cook until the celery root is very soft, about 20 minutes. Discard the bay leaf. Add the heavy cream and return to a simmer, then remove from the heat and let cool slightly.
- Working in batches, transfer the soup to a blender and puree until smooth, adding some herbs to each batch; return to the pot and reheat if needed. Stir in the celery salt and serve with toppings.
TIM PERRY'S SOUP (CREAMY CURRY CAULIFLOWER AND BROCCOLI SOUP)
My boss brought this soup to the office one fine day and I was hooked on it from the first taste. It is a snap to make and the flavors are mild, yet very distinct. My kids loved it the first time I made it at home and it instantly became known as 'Tim Perry's Soup.' You might like a stronger curry flavour or a creamier soup, so adjust the seasonings to your taste. It's ready within the hour, but the longer it simmers the better the flavor. Serve with crusty bread and butter.

LOW-FAT CREAM OF CELERY SOUP WITH GARLIC, CURRY & HERBS
This is my adaptation of a recipe from one of my favorite cookbooks: "Fabulous Fat Free Cooking" by Lynn Fischer. The original recipe is pretty basic and we found it to be a bit blasé (especially if you have a cold or the flu and your tastebuds aren't working for you as well as they should - I've added onion, garlic, curry and some herbs to bring in a bit more flavor. We seem to enjoy it and I hope you will too.

- In a medium non-stick saucepan, combine celery, onions, garlic and vegetable broth.
- Bring to a near boil over medium-high heat; reduce to medium-low, cover and cook 12 to 15 minutes, or until celery becomes tender.
- Meanwhile, place the cornstarch in a small bowl and gradually whisk in the milk until well blended.
- Whisk milk mixture into the saucepan.
- Whisk in the fat-free liquid creamer.
- Pour the soup into a blender or food processor and process for several minutes until pureed or to your desired consistency.
- Return the soup to saucepan and add bay leaf, thyme and curry; cook over medium heat, stirring constantly 4 to 5 minutes, or until soup thickens.
- Season to taste with salt and freshly ground black pepper.

- First put the butter in a pan and melt, then add the celery, onions, leeks and garlic. Cook on a medium heat for about 5 minutes, till veg softens.
- Next add salt and pepper to taste, with 500 ml of veg or chicken stock to the pan.
- Now leave to simmer on a low heat for about 20 minutes.
- Finally add the milk and garlic and herb cream cheese, till dissolved.
- Blend soup to the consistancy that you want, (i prefere it a little chunky) and serve. Enjoy.....

- Prepare celery root by trimming off ends and outer layer of the root. Carefully chop into large cubes. Note: celery root requires are firm hand and a sharp knife.
