Easy No-Bake Cheesecake Parfaits image

When it comes to digging your spoon into a tall glass of deliciousness, there's no party quite like a cheesecake parfait party. Sweeten up the deal by bypassing the oven in favor of this 15-minute no-bake cheesecake.

Two (8-ounce) packages cream cheese, at room temperature
1 cup plus 3 tablespoons chilled heavy cream
1/2 cup (8 tablespoons) sugar
1 tablespoon plus 1 teaspoon vanilla extract
1 tablespoon fresh lemon juice
2 teaspoons lemon zest
1/4 cup sour cream
1 1/2 cups crushed graham crackers
1 1/2 cups fresh fruit, such as strawberries, blueberries or raspberries

Steps:

  • Beat the cream cheese, 3 tablespoons heavy cream and 5 tablespoons sugar in a stand mixer fitted with the paddle attachment until smooth. Add 1 tablespoon vanilla extract and the lemon juice and zest. Beat until light and creamy, about 3 minutes.
  • Whisk together the remaining 1 cup heavy cream, 3 tablespoons sugar, 1 teaspoon vanilla extract and the sour cream in a large bowl with a handheld electric mixer (or a stand mixer fitted with the whisk attachment) on high speed until soft peaks form.
  • Add a layer of crushed graham crackers to the bottom of each parfait glass. Top the graham crackers with a layer of the cheesecake, then a layer of fruit (see Cook's Note). Top each parfait with a dollop of the whipped cream and serve.

I took a cooking class many, many years ago when I got my food processor. This recipe is one of the gems that I got from that class. It was initially called a pie, but didn't have a crust. So I changed the presentation and called it a parfait. Don't let the cottage cheese in the recipe scare you. I absolutely hate cottage cheese, but this is a keeper. The name shown on the recipe is Helen Thorkelson. Cook time is chilling time.

1 (16 ounce) can red sour cherries (NOT pie filling)
2 teaspoons cornstarch
9 packets equal low calorie sweetener
1/8 teaspoon almond extract
2 teaspoons unflavored gelatin
2 tablespoons cold water
2 2/3 cups low fat cottage cheese
1 teaspoon vanilla extract

Steps:

  • Drain cherries, reserving liquid.
  • Combine constarch and reserved cherry liquid in a small saucepan.
  • Cook over medium heat, stirring constantly until very thick.
  • Remove from heat and add cherries.
  • Stir in 3 packets of sweetener and almond extract, then set aside.
  • Soften gelatine in cold water, then cook over low heat until dissolved.
  • In a food processor, process cottage cheese and vanilla extract until smooth.
  • Add gelatine and remaining 6 packets of sweetener.
  • Put a layer of gelatin in each of 8 parfait glasses, then add a layer of cherries.
  • Repeat layers one more time.
  • Chill at least 3 hours.
  • Each serving is one fruit exchange and 1/2 serving protein.

1 package (16 ounces) frozen pitted tart cherries, thawed
2 tablespoons sugar
1 tablespoon cornstarch
2 teaspoons lemon juice
PARFAIT:
1 carton (15 ounces) reduced-fat ricotta cheese
1 package (8 ounces) fat-free cream cheese
1/4 cup sugar
2 tablespoons maple syrup
2 teaspoons lemon juice
2 teaspoons vanilla extract
2 cups reduced-fat whipped topping
1/3 cup miniature semisweet chocolate chips
20 chocolate wafers, crushed

Steps:

  • Drain cherries, reserving liquid in a 1-cup measuring cup. Add enough water to measure 1/3 cup; set aside., In a small saucepan, combine sugar and cornstarch; stir in reserved cherry juice mixture until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in cherries and lemon juice. Cool., Place the ricotta, cream cheese and sugar in a food processor; cover and process until smooth. Add the syrup, lemon juice and vanilla; process until combined. Gently fold in whipped topping and chocolate chips., Place 1 tablespoon crushed wafers in each of eight parfait glasses. Top with 1/3 cup cheese mixture and a heaping tablespoonful of cherry sauce. Repeat layers. Refrigerate for at least 2 hours before serving.,

I made this about like the recipe for parfaits. Again with the jars which I think is a great idea. Take them about anywhere and not worry about them. Course you can use parfait glasses too. These are good and seem to be filling too.

2 (3 ounce) boxes Jello gelatin, any flavors
1 1/2 cups boiling water
1 1/2 cups cold water
2 (6 ounce) cartons yoplait thick and creamy vanilla yogurt
9 graham crackers, crushed fine

Steps:

  • Mix both packages of jell-o with the boiling water and stir till jell-o is disolved.
  • Add cold water and stir.
  • Refrigerate about 4 hours or until jell-o is firm.
  • Put half of the jell-o into mixing bowl and add 1 container of yogurt.
  • Set mixer on a medium -low setting and blend until blended but not creamy.
  • put about 2 teaspoons gramham cracker crumbs in the bottom of 6 half pint canning jars.
  • Followed by about 2 tablespoons jell-o mixture.
  • Follow with about 2 teaspoons graham cracker crumbs.
  • Followed by about 2 tablespoons plain jell-o.
  • Next 2 tablespoons of vanilla yogurt.
  • Repeat layers until all ingreditents are gone.
  • Wipe rims, add lids and refrigerate.
  • Really I don't think the order matters.
  • Just put graham crackers between each layer.

8 graham crackers (3-by-5 inch)
1 tablespoon vegetable oil, such as safflower
3 cups low-fat (1%) cottage cheese
8 ounces reduced-fat bar cream cheese, room temperature
3/4 cup plus 2 tablespoons sugar
1/2 cup reduced-fat sour cream
4 large eggs
2 tablespoons all-purpose flour
1 teaspoon pure vanilla extract
1/2 teaspoon salt
2 bags (12 ounces each) frozen cherries

Steps:

  • Preheat oven to 325 degrees, with rack set in lower third. Assemble a 9-inch springform pan with the rimmed side of the pan facing down. Coat pan with cooking spray; line side with a long strip of waxed or parchment paper.
  • In a food processor, grind graham crackers until fine crumbs form. Add oil, and pulse to moisten. Transfer crumbs to prepared pan, and press firmly into the bottom. Place pan on a rimmed baking sheet; bake until crust is lightly browned, about 15 minutes.
  • Meanwhile, wipe bowl and blade of food processor. Blend cottage cheese and cream cheese until very smooth and glossy, scraping down bowl as necessary, 4 to 5 minutes. Add 3/4 cup sugar, sour cream, eggs, flour, vanilla, and salt; blend just until filling is smooth.
  • Pour filling onto crust (crust can be hot or warm). Bake until barely set in center, about 1 hour. Turn oven off; let cake cool in oven 1 hour. Transfer to a wire rack, and let cool to room temperature, about 2 hours. Refrigerate until firm, at least 3 hours and up to 2 days.
  • Make topping: In a large skillet, combine cherries and remaining 2 tablespoons sugar. Boil over high heat until liquid is thick and syrupy, 10 to 15 minutes. Cool, and refrigerate for at least 2 hours and up to 2 days.
  • To serve, unmold cheesecake (peel off and discard paper). Transfer to a serving platter; top with cherry topping.
