CHOCOLATE-BANANA SNACK CAKE

- Preheat oven to 350°. In a bowl, combine flour and baking soda. In another bowl, whisk brown sugar, water, banana, oil and vanilla. Stir into dry ingredients just until moistened. Transfer to a greased 8-in. square baking pan., Bake until a toothpick inserted in the center comes out clean, 30-35 minutes. Cool on a wire rack. Dust with confectioners' sugar.

LOWER FAT BANANA BREAD I
A wonderful banana bread that is lower in fat and calories than most other banana bread recipes.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Spray one 9x5x3 inch loaf pan with a non-stick cooking spray.
- In a medium bowl, beat the white sugar and margarine or butter until smooth and creamy. Beat in the eggs, water and bananas with the sugar mixture until it is well blended.
- Mix in the flour, baking soda, salt and baking powder just until the mixture is moistened. Be sure to scrape the sides of the bowl to blend all ingredients.
- Bake at 350 degrees F (175 degree C) for about 60 minutes. Bread is done when the top is firm to the touch and a golden brown color. Time will vary according to loaf size and oven type. When bread is removed from oven, allow it to cool on it's side for 10 minutes, then remove from pan and let cool on a rack. This bread is also excellent if you add mini chocolate chips or small fruit pieces to the mix just before baking.

- Heat oven to 425°F. Grease bottom and sides of 9-inch square pan with shortening or cooking spray.
- In large bowl, stir Bisquick mix, 1/2 cup flour, 1/2 cup brown sugar, the bananas, milk and vanilla. Gently fold in chocolate chips. Pour into pan.
- In medium bowl, mix 1/4 cup brown sugar, 1/4 cup flour and the cinnamon. Cut in butter, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until mixture is crumbly. Sprinkle topping evenly over batter in pan.
- Bake 17 to 20 minutes or until toothpick inserted in center comes out clean. Cool on cooling rack.

- Mix first six ingredients together, then add the last three. Mix Well.
- Pour the batter into a greased 8X8 pan and bake for 25 minutes at 350 degrees. Check after 20 minutes. The top will be a lovely golden brown colour.
- For a bit of fun, add some chocolate chips!

LOW FAT BANANA CAKE
This is a spin off of Kittencal's (that genius girl) extreme low fat banana-blueberry muffins. But it was different enough ( I made the muffins a while back), that I decided to post the difference. This cake was wonderful! No one would guess it was low fat with little sugar except the fruit! You can use nonfat sourcream for the yogurt, but I haven't tried that.

- Mash bananas and mix wet ingredients in a seperate bowl.
- Combine wet and dry until dry ingredients are just wet and mixed. Don't overmix.
- Bake at 350 in a 9 x 13 nonstick pan sprayed with Pam for 15 minutes.
