These are great served hot with salsa or pizza sauce. They take a little effort but are worth it!! The coating is made with finely crushed cornflakes cereal, lightly spiced.

4 cups cornflakes cereal
½ teaspoon dried oregano
1 teaspoon garlic salt
¼ cup all-purpose flour
2 egg whites
2 tablespoons water
1 (8 ounce) package mozzarella cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease a medium baking pan lined with foil.
  • In a large, shallow bowl, crush the corn cereal to 1 cup. Mix together the corn cereal, oregano and garlic salt.
  • Place the flour in a small bowl.
  • In another small bowl, thoroughly beat the egg whites and water.
  • Cut the mozzarella cheese into 12 sticks approximately 2 3/4 inches in length. Dip the cheese sticks in the flour, then the egg mixture, then the cereal mixture. Repeat dipping in the egg and cereal mixture to ensure a complete coating. Arrange cheese sticks on the baking pan. Allow the sticks to set for 30 minutes.
  • Bake in the preheated oven about 8 minutes until cheese is soft and sticks are lightly browned.

10 whole-grain Melba toasts
1/3 cup whole wheat breadcrumbs
1 tablespoon minced fresh oregano
Kosher salt and freshly ground black pepper
Large pinch ground cayenne, optional
2 large egg whites
1 large egg
1 clove garlic, minced
1/3 cup whole wheat pastry flour or unbleached all-purpose flour
8 sticks part-skim mozzarella string cheese, halved crosswise
Olive oil cooking spray, for coating the cheese sticks
1/3 cup store-bought marinara sauce, warmed, for serving

Steps:

  • Pulse the melba toasts in a food processor to make semi-coarse crumbs; transfer to a medium bowl or dish. Mix in the breadcrumbs, oregano, 1/4 teaspoon each salt and pepper and the cayenne if using.
  • Whisk together the egg whites, whole egg, garlic and 1/4 teaspoon each salt and pepper in another bowl.
  • Put the flour and 1/4 teaspoon salt in a resealable plastic bag. Add the cheese pieces to the bag, close and shake to coat. Dip one piece of the cheese at a time in the egg mixture first, and then roll firmly in the breadcrumb mixture; then dip the same piece again in the egg mixture followed by the breadcrumb mixture. (Note: Use one hand with the dry mixture and the other with the wet mixture.) Place on a parchment paper-lined plate or baking sheet. Freeze for 15 minutes, or up to overnight.
  • Preheat the oven to 475 degrees F. Transfer the frozen cheese sticks to another baking sheet. Fully coat the cheese sticks with the olive oil cooking spray. Bake until golden, about 12 minutes. Sprinkle with additional salt and pepper to taste.
  • Serve immediately with the warm marinara sauce.

Steps:

  • Preheat oven to 350 degrees F.
  • Mix flour, salt and peppers in a medium bowl (or in a food processor). Cut in margarine and cheese with a pastry blender (or pulse in food processor until crumbly). Gradually add milk, stirring with a fork to form a soft dough (or process until dough forms a ball).
  • Turn onto a lightly floured surface and roll into an 6 x 16 rectangle about 1/4 inch thick. Cut into 6 x 1/4 inch strips. Twist strips several times and arrange close together on baking sheets coated with cooking spray.

6 pieces string cheese
1 large eggs (beaten)
1/4 cup almond flour
1/4 cup Parmesan cheese (the powdered kind in a can)
1 tablespoon coconut flour
1 teaspoon Italian seasoning
1/2 teaspoon garlic powder
1/2 teaspoon salt (coarse Kosher salt works best)

Steps:

  • Cut string cheese in half crosswise.
  • Beat 1 egg in small bowl. Set aside.
  • Place almond flour, Parmesan cheese, coconut flour, Italian seasoning, garlic powder, and salt in zipper sandwich bag. Shake bag to blend.
  • Dip each piece of mozzarella into the beaten egg and then coat by shaking in the sandwich bag. Freeze for at least one hour.
  • Heat oil in small frying pan to at least half inch high. Temperature of oil should be about 325-375°F. Higher temperatures tend to brown too quickly with cheese melting out. Air frying works too using a temperature of about 370 to 400°F for about 5 to 7 minutes.
  • Cook each coated piece of mozzarella in the hot oil until browned on all sides. Enjoy!

2 tablespoons grated Parmesan cheese
12 (1 ounce) sticks string cheese, halved and frozen

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Beat egg in a small bowl. Place flour in a separate small bowl. Toss bread crumbs and Parmesan cheese together in a another separate bowl.
  • Gently press each cheese stick into flour to coat and shake off excess flour. Dip into egg, then press into bread crumb mixture. 2/3 cup grated Parmesan cheese (the kind sold in the pasta aisle not the fresh grated kind)
1/2 tsp dried basil
1/4 tsp garlic powder

Steps:

  • Cut the cheese sticks in half. Then crack the egg into a small bowl and beat it until it is all mixed together. Measure out the Parmesan cheese into another bowl. Add the basil and garlic powder to the Parmesan cheese and whisk together to combine.
  • Dip your cut mozzarella piece into the Parmesan mixture first, then into the egg, and then again into the Parmesan. Place the dipped mozzarella stick onto a baking sheet lined with parchment paper. Repeat until you've dipped all the mozzarella pieces. Put the baking sheets into the freezer for an hour.

1 1/2 cups ground pork rinds

Steps:

  • Cut each mozzarella string cheese stick in half. Set aside.
  • Using three shallow bowls, add almond flour to one bowl. Whisk 2 eggs in the second bowl. Add ground pork rinds to the third bowl.
  • Working with one halved cheese stick at a time, first dust with almond flour.
  • Then dip in egg wash.
  • Next dredge in ground pork rinds. Repeat with remaining cheese sticks. Do a second dip in the egg wash and dredge in ground pork rinds for each cheese stick.

  • Cut the string cheese in half ( which makes 16 pieces) and place in the freezer for 30-45 minutes. Beat egg in a small and set aside. In a separate bowl mix the Parmesan cheese and breadcrumbs and set aside.
  • Dip 1 string cheese in breadcrumb mixture than in egg mixture and than back in breadcrumb mixture. Repeat this for all the pieces. Place sticks on a greased foil or pan. Return the cheese stick back to the freezer for at LEAST 30-45 minutes ( Do not skip this step because the cheese will melt if they are not frozen).
  • After the cheese is finished freezing heat oven t0 375 degrees. Spray the cheese lightly with cooking spray and place in the oven. After 4 minutes flip the cheese sticks and continue baking for another 3- minutes or until they are golden. Do not overbake because the cheese will melt. Serve Hot with your favorite marinara sauce.
