2 quarts water
1 bottle (12 ounces) beer
2 tablespoons seafood seasoning
1-1/2 teaspoons salt
4 medium red potatoes, cut into wedges
1 medium sweet onion, cut into wedges
4 medium ears sweet corn, cut in half
1/3 pound smoked chorizo or kielbasa, cut into 1-inch slices
3 tablespoons olive oil
6 large garlic cloves, minced
1 tablespoon ground cumin
1 tablespoon minced fresh cilantro
1/2 teaspoon paprika
1/2 teaspoon pepper
1 pound uncooked large shrimp, deveined
1 pound uncooked snow crab legs
Optional condiments: seafood cocktail sauce, lemon wedges and melted butter

Steps:

  • In a Dutch oven, combine the water, beer, seafood seasoning and salt; add potatoes and onion. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. Add corn and chorizo; simmer until potatoes and corn are tender, 10-12 minutes longer., Meanwhile, in a small skillet, heat oil. Add the garlic, cumin, cilantro, paprika and pepper. Cook and stir over medium heat for 1 minute., Stir the shrimp, crab legs and garlic mixture into the stockpot; cook until shrimp and crab turn pink, 4-6 minutes. Drain; transfer seafood mixture to a large serving bowl. Serve with condiments of your choice.

2 tablespoons olive oil
1 teaspoon salt, divided
1 teaspoon garlic powder, divided
1 teaspoon seafood seasoning, divided
12 small red potatoes, quartered
1/3 cup butter, melted
1 pound smoked kielbasa or Polish sausage
3 medium ears sweet corn, cut in half
1-1/2 pounds uncooked medium shrimp, peeled and deveined

Steps:

  • In a large bowl, combine the oil with 1/4 teaspoon each of salt, garlic powder and seafood seasoning. Add potatoes; toss to coat. Spoon onto a greased double thickness of heavy-duty foil (about 18 in. square). , Fold foil around potatoes and seal tightly. Grill, covered, over medium heat for 30-35 minutes or until tender, turning once. Set aside and keep warm., In a small bowl, combine the butter with remaining salt, garlic powder and seafood seasoning. Grill kielbasa and corn, covered, over medium heat for 10-12 minutes or until kielbasa is heated through and corn is tender, turning occasionally and basting corn with half of the butter mixture. Keep warm., Thread shrimp onto six metal or soaked wooden skewers; grill, covered, over medium heat for 3-4 minutes on each side or until shrimp turn pink, basting with remaining butter mixture. Slice kielbasa into six pieces before serving. Carefully open foil from the potatoes to allow steam to escape.

1/2 cup old bay seasoning ((or seafood boil seasoning))
2-3 lemons ((quartered))
1 lb baby potatoes
1 large yellow onion ((cut into 1-inch chunks))
6 cloves garlic ((smashed))
1 lb smoked sausage ((cut into 1/4-inch pieces))
4 ears corn ((husked and cut into pieces))
2 lb raw large shrimp ((shell-on and deveined))
butter
chopped parsley

Steps:

  • Fill a large pot with about 4 quarts of water. Add old bay seasoning, quartered lemons, smashed garlic, potatoes, and onions. Then bring to a boil.
  • Boil for about 10 minutes or until potatoes are just beginning to become tender.
  • Add the corn and sausage. Cook for 4-5 more minutes.
  • Add the shrimp and cook for about 2 minutes until the shrimp becomes pink and opaque.
  • Turn off the heat and reserve 1 cup of the broth.
  • Drain the liquid, and transfer the shrimp and vegetables to a platter or dump onto newspaper.
  • Serve with reserved broth, optional melted butter, and chopped parsly.

1 cup chopped pecans
1/2 cup 3 tablespoons milk
1 egg
1 cup sugar
12 tablespoons plus 4 tablespoons butter
1 (16 oz) box graham crackers
1 cup (or 3 1/2 oz cans) shredded coconut
2 cups powdered sugar
1 teaspoon vanilla

Steps:

  • Line a 13 x 9-inch pan with whole graham crackers. Melt butter in saucepan and add sugar. Beat egg and milk together; add to butter mixture. Bring to a boil, stirring constantly. Remove from heat. Add nuts, coconut, and 1 cup graham cracker crumbs. Pour over crackers in pan. Cover with another layer of whole graham crackers. Prepare topping.
  • Topping:
  • Beat together the 3 Tbsp milk, 2 cups powdered sugar, 1 tsp vanilla, and 4 Tbsp butter and spread over top layer of crackers. Chill. Cut into squares.

The hot, boiled dressing softens the cabbage and pickles it slightly. The result is a salad that stays delicious even when it sits outside on a picnic table for a few hours. The amount of vegetables can vary, and a finely chopped jalapeño can be added for a little extra heat.

5 cups chopped green cabbage (½-inch pieces)
2 cups chopped purple cabbage (½-inch pieces)
1/2 heaping cup chopped Vidalia or other sweet onion
1/2 cup finely diced carrot
1/2 cup finely diced red bell or other sweet pepper
1 large clove garlic
1/2 tablespoon salt, more to taste
1 tablespoon minced ginger
1/3 cup rice wine vinegar
1/2 cup olive oil
Juice of 1 freshly squeezed lime
Salt and freshly ground pepper

Steps:

  • Make the slaw: Put the chopped and diced vegetables in a bowl or other container that will fit in the refrigerator.
  • Make the dressing: Crush the garlic, and with the side of a knife work the salt into the clove until it makes a rough paste. Add the garlic paste, ginger, vinegar, oil and 1/3 cup water to a saucepan and bring to a low boil. Cook for 3 or 4 minutes, stirring now and then. Remove from heat. Allow to cool for 1 or 2 minutes, then pour over the vegetables, tossing well to combine. Refrigerate 4 hours or overnight.
  • Just before serving, toss with the lime juice and a few grinds of black pepper. Taste and add salt if needed.

For the Seafood Boil Seasoning
1 cup salt
2 tablespoons celery seeds
2 tablespoons ground coriander
3 to 4 bay leaves
2 tablespoons ground mustard
1 tablespoon ground cayenne pepper
1 tablespoon white pepper
1 tablespoon thyme
1 tablespoon red pepper flakes (crushed)
1 teaspoon ground allspice
1/2 teaspoon ground cloves
For the Stew
6 quarts water
1/2 cup homemade seafood boil seasoning (or Old Bay seasoning)
1 1/2 to 2 pounds small red potatoes (or round whites, scrubbed)
1 to 1 1/2 pounds smoked sausages (such as kielbasa, andouille , or smoked chorizo)
6 ears of corn
1 1/2 pounds shrimp (large or jumbo, in the shell)

Steps:

  • Gather the ingredients.
  • Combine all of the seafood boil seasoning ingredients in a bowl and mix together.
  • Alternatively, put all of the ingredients into a small jar with a lid and shake.
  • Gather the ingredients.
  • Put the water in a large stockpot . Stir the crab boil seasoning or Old Bay into the water and bring it to a boil over high heat.
  • Meanwhile, cut the potatoes into halves or quarters if large; you can leave them whole if they are small.
  • Slice the sausage into 1 1/2- to 2-inch pieces.
  • Shuck the corn and break each ear into halves or thirds.
  • When the water comes to a full boil, add the potatoes and boil for 5 minutes.
  • Add the sausage and continue boiling for 12 minutes.
  • Add the corn and continue boiling for 1 minute.
  • Add the shrimp and continue boiling for 2 minutes.
  • Use a hand-held strainer or pour into a colander and drain well.
  • Turn out onto a surface covered with newspaper, brown paper, or several layers of paper towels and serve.
  • Enjoy.

4 teaspoons chile-garlic sauce
