SPINACH FETA EGG WRAP
This is my not-quite-as-healthy knock-off of a wrap at a popular coffee shop. Use butter instead of coconut oil if you want and try tomato- and basil-flavored feta cheese. To make it healthier use just egg whites and low-fat feta cheese.

Steps:
- Warm tortilla in a large skillet over medium heat.
- Melt coconut oil in a separate skillet over medium-high heat. Saute spinach and tomato in hot oil until spinach wilts, about 1 minute. Add eggs and scramble until almost set, about 2 minutes. Sprinkle feta cheese over eggs and continue cooking until cheese melts, about 1 minute more.
- Transfer scrambled egg mixture to warm tortilla in the large skillet; top with diced tomato. Roll tortilla and leave in skillet long enough for wrap to hold its shape, about 30 seconds.

Steps:
- Warm the olive oil in a small pan and add the spinach. Cook for 1-2 minutes until the spinach has darkened and wilted and then remove from heat.
- Add the spinach to a small bowl along with the cream cheese, sun dried tomatoes, oregano, salt and pepper. Mix everything together and taste to season if needed.
- Lay the prepared egg wrap out on a flat surface. Spread the cream cheese mixture across the surface and sprinkle the feta over the top.
- Roll the wrap to close. You can enjoy as is or wrap up to save for later. To warm up the filling: secure the ends of the wrap with a couple of toothpicks and then place on a small/medium skillet over a medium low heat. Cook each side for 30-60 seconds to warm through and enjoy.
- These wraps can keep up to 2 days.

- Crack the eggs into a bowl, add the sea salt and chopped onions and blend together with a wire whisk.
- Melt 3 tablespoons of butter in a frying pan, and then add the egg mixture, tipping the pan to make sure the egg mixture covers the bottom of the pan.
- Cook on medium heat, until the underside is lightly browned, and then add the spinach and the crumbled feta cheese.
- Lift one side of the omelet with a spatula and fold it in half.
- Reduce the heat, and cook until the inside of the omelet is cooked (less than a minute or so).
- Use a spatula to slide the omelet onto a plate and serve!

- Pre-heat oven to 190 degrees celcius.
- Cook spinach until tender. Drain, rinse with cold water, squeeze dry and roughly chop.
- Beat together soured cream and eggs, stir in feta cheese, chives and season with salt and pepper. Add spinach and pine nuts and sultanas if your are using them.
- Pour into a ceramic dish, sprinkle with parmesan and bake for 30-35 minutes until firm and golden brown.
