LOW CARB PULLED PORK
Tender, juicy pulled pork made in the slow cooker! The seasoning is so good, but feel free to swap in chicken broth for the beer if you prefer.

Steps:
- Add the pork shoulder to a large slow cooker.
- In a small bowl, stir together the parsley, cumin, garlic powder, onion powder, salt, and paprika. Rub mixture into the pork being sure to coat all sides.
- Pour the beer into the bottom of the slow cooker.
- Cover slow cooker and cook on low for 8 hours or high for 4 hours. Pork is ready when it easily shreds with a fork.
- Shred the pork and stir the meat into the juices in the bottom of the slow cooker.
- Serve immediately or keep warm in the slow cooker until ready to eat.

- For the pulled pork:.
- In a small bowl, combine the onion powder, garlic powder, salt, pepper, paprika, allspice, celery salt, cloves, and mustard powder. Mix well. Rub the spice mixture all over your pork. Add the water to a large crock pot. Place the spice rubbed pork in the pot and cover. Cook on high for four hours, or until tender and falling apart. Remove the meat from the crock pot, leaving the juices behind. Shred the meat with clean hands, or use two forks to "pull" it apart.
- For the sauce:.
- Skim the solids and visible fat from the top of the liquid and discard. Add all of the sauce ingredients to the remaining liquid in the crockpot, whisking until smooth. Cover and cook on high for about 10 minutes or until slightly thickened. Add the meat back to the sauce and stir until fully coated. Serve hot.

- Mix all sauce ingredients (everything except the bay leaf and the pork roast) until smooth. If you have extra time, marinate the pork in the sauce overnight or for several hours before cooking.
- Place pork into a large pot and cover with sauce. Add bay leaf, and about 1 quart water. Bring mixture to a boil and simmer, covered, turning frequently, for 2 hours or until the meat pulls apart easily with a fork.
- Remove from heat and cool pork in the sauce. After meat cools, remove it from the sauce and shred it into small pieces. Set aside.
- Reduce the sauce by about two thirds. Add the shredded pork back to the sauce. Add additional salt, if desired. Remove bay leaf before serving.
