LOW CARB LUXURY'S CAULIFLOWER RICE PUDDING
A really yummy low carb version of rice pudding. If you grate the cauliflower fairly fine this tastes more like rice but either way it is decadently rich and delicious. I am posting it here because I've never seen another recipe like this one and every time I restart low carb eating I'm afraid that it will have disappeared. From the site "Low Carb Luxury" which I highly recommend for interesting recipes. Makes 4 high calorie but tiny servings.

Steps:
- Mix 1/4 cup of cream with sweeteners, extracts, spices, and cauliflower. Heat in microwave for 1 1/2 minutes. Let stand for 15 minutes.
- Beat egg yolks with 1/4 cup of cream; set aside.
- Pour remainder of cream in sauce pan, add cream cheese and cook on medium heat, stirring constantly, until thickened.
- Add cauliflower mixture and egg mixture to pan and stir to rethicken.
- Pour into 4 small ramekins or pudding dishes and refrigerate 1-3 hours.
- Serve and enjoy!

Steps:
- Simmer vegetables/meat in the butter and bouillon until cooked.
- Make shirataki rice: open packages and rinse WELL. Dry with paper towels. Chop into rice size with food processor.
- Add shirataki to pan.
- Add cheeses and melt.
- Spice to taste.
- Stir and let flavors mix for a few minutes.
- Enjoy!

- Put cooked rice, sugar, milk, vanilla, butter and raisins in a pot. Simmer until milk is absorbed, about 30 minutes. Add evaporated milk and continue to simmer and stir until absorbed, about 15 minutes. Add cinnamon and stir.
- Spoon into serving dish and top with fat free whipped cream, if desired.

- Combine all ingredients together in a blender and blend until almost smooth.
- Pour into six 6-ounce custard cups (ramikins) and sprinkle each with cinnamon.
- Place the cups in a baking dish and pour hot water in the pan around the cups to reach 1 inch up sides of custard cups.
- Bake at 350°F for 35 minutes.
- Serve warm or chilled.

- Pulse the cauliflower florets in a food processor and pulse until chunky. Place in a glass bowl, cover and microwave for 3 - 4 minutes. Squeeze out the water using a muslin cloth or fine tea towel. Place in a bowl and fluff with a fork.
- Preheat the oven to 150C/300F and butter a 10 x 8 x 2 inch baking dish. (You can use smaller if you prefer.).
- Place the cream, almond milk, half the nutmeg and vanilla in a pan and heat until hot, but not boiling. About 2 minutes.
- Mix the egg yolks, arrowroot (or xanthan gum) and 3 tbsp of sweetener together in a bowl using a hand balloon whisk. Add a little of the hot milk and whisk again to combine. Add the rest of the cream mix slowly, whisking continuously. Place back on the hob to thicken. About 2.5 minutes. Stir through the cauliflower rice.
