1 cup ground pecans
3 tablespoons butter, melted
2 (1 gram) packets Splenda® no calorie sweetener
½ teaspoon coconut extract
½ cup heavy cream
2 (1 gram) packets Splenda® no calorie sweetener
1 (.6 ounce) package sugar-free lime-flavor Jell-O®
⅓ cup boiling water
⅓ cup cold water
2 (8 ounce) packages cream cheese, cut into pieces and softened
½ teaspoon coconut extract
2 tablespoons ground pecans

Steps:

  • In a medium bowl, mix together 1 cup ground pecans, butter, 2 packets sweetener, and 1/2 teaspoon coconut extract. Press firmly into bottom and up sides of an 8 inch pie plate; refrigerate until firm.
  • In a small bowl, whip the heavy cream with 2 packets sweetener until soft peaks form. Set aside.
  • In a large bowl with high sides, mix the gelatin with boiling water until all the gelatin has dissolved. Then stir in the cold water. With an electric mixer, slowly beat in the cream cheese. After all cream cheese is added, stir in remaining 1/2 teaspoon coconut extract, and beat at high speed until smooth. Carefully fold in the whipped cream. Use a spatula to scrape mixture into the pie pan and spread around. Sprinkle remaining 2 tablespoons ground nuts on top. Refrigerate several hours or overnight to allow gelatin to set thoroughly.

Steps:

  • In a large mixing bowl, combine your cookie crumbs, sweetener, and melted butter and mix together, until combined. Transfer into a 9-inch pie dish and refrigerate.
  • In a large mixing bowl, beat together the cream cheese until smooth. Add the condensed milk and lime juice and beat until combined. Add the heavy cream and beat everything together until thick and creamy.
  • Transfer the filling onto the chilled pie crust and refrigerate overnight, to thicken.
  • Once set, prepare the topping. Beat together the heavy cream with the powdered sweetener until light and fluffy. Spread over the top of the pie and add sliced limes, to decorate.

Steps:

  • Pulse all the crust ingredients together in a food processor until cream cheese has been evenly incorporated into almond flour.
  • Using the back of a tablespoon, press crust mixture into 9 inch pie pan. If dough is too sticky, try using plastic wrap or a small pastry roller.
  • Bake crust at 350F for about 10-12 minutes. Allow to cool on rack.

1/4 cup Golden Flax Meal
1 tablespoon Swerve
3 ounces Butter (melted)

7 fluid ounces Heavy Cream

Steps:

  • Preheat fan forced oven to 170C/340F.
  • Combine almond meal, flax meal and Swerve and mix well.
  • Add the melted butter and mix well.
  • Pour mixture into the base of a 9in spring form pan and press into the base and at least 1in up the sides.
  • Bake the crust for 12 minutes, or until golden and firm. Set aside to cool.
  • Reduce the oven temperature to 150C/300F.
  • Whisk together the eggs and sugar free sweetened condensed milk in a stand mixer on medium speed.
  • Drop the speed to low and slowly pour in the lime juice, and then the cream and the lime zest.
  • Pour the mixture into the cooled base and bake in the oven for 35-40 minutes, until there is only a slight wobble in the center.
  • Leave the pie at room temperature for 20 minutes to rest before placing in the fridge for at least 2 hours to cool.
  • Slice into 16 pieces and enjoy. We recommend serving it with a dollop of softly whipped cream.

1 teaspoon cinnamon
1/2 cup zero calorie sweetener
1/4 teaspoon salt

1/2 cup fresh key lime juice (See notes for what "key limes" are. Key limes are small, this was 1 pound of key limes for me.)
6 oz cream cheese (Softened)
1 cup plain Greek yogurt (I use full fat. You can also use sour cream.)
3/4 cup zero calorie sweetener (See notes.)
1 1/2 teaspoons unflavored gelatin (See notes.)
1/2 tablespoon key lime zest (See notes.)

Steps:

  • Place a skillet on medium high heat. When hot add the almond flour.
  • Stir for 2-4 minutes to toast the almond flour until it's golden and fragrant. This adds flavor.
  • Add the toasted almond flour to a 9.5 inch pie plate, along with the cinnamon, sweetener, and salt. Stir to combine.
  • Gradually add in the butter and mix to combine.
  • Press the crust into the bottom of the pie plate.
  • Microwave the lime juice for 30-45 seconds. (You want the lime juice warm, but not piping hot). Then combine the warm juice with the gelatin. Stir and ensure the gelatin is dissolved. This may take a few minutes.
  • Add the cream cheese, sweetener, lime zest (see notes), and Greek yogurt to a bowl or stand mixer. Beat until smooth using a hand mixer or standing mixer.
  • Add in the lime juice/gelatin. Mix well. Taste the filling to ensure it suits your taste. Make adjustments as necessary. Add more lime zest or sweetener if necessary.
  • Pour the filling into the pie crust.
  • Chill for a minimum of 2-3 hours until set. I prefer to freeze it for an hour and a half. Upon freezing I place the pie on the counter for 10 minutes and then slice into it.

I really enjoy the results of the South Beach Diet, but there's only so long I can take eating cheese, meats or salads, sometimes you just need something sweet - and not another Jell-O cup. The consistency of the filling of this dish is so thick and flavorful, you won't know it's a substitute and with some borrowed tips from member, CinLin, for the low carb crust plus a few added twists, you won't even miss the graham cracker crust. You can also mix up the flavorings for both the filling and the crust to create a lemon cheesecake, a chocolate mousse pie, or whatever you're craving! Additionally, please note I erred on the side of smaller servings, so if you have more than two mouths to feed, I would double the recipe.

1 (3 ounce) box sugar-free lime gelatin (I only use 1/2)
1 (8 ounce) box neufchatel cheese (softened)
1 lime, juice and zest of
1 cup unblanched sliced almonds
4 tablespoons butter, melted
2 g Splenda sugar substitute (or 2 individual packets)
2 tablespoons sugar-free Cool Whip
1 lime (to garnish)

Steps:

  • Start with the crust.
  • Preheat oven to 350°F.
  • In a food processor add the cup of raw almonds, pulse until it is the size of sand granules (not too fine!).
  • Add in the 2 packets of Splenda and the 4 tablespoons of melted butter.
  • Pulse until it is well mixed and a workable paste.
  • Spray a small, square baking dish (I actually prefer a metal pan as it has the tendency to crisp the nuts better) with cooking spray and with a spatula, add in the mixture and pat until evenly spread.
  • Put in oven for 10-12 minutes; broil on top for another 1-2 minutes. Be careful that it doesn't burn; it should be a toasted brown.
  • Once done, take out of oven and put in the freezer.
  • For the filling:.
  • In a food processor, add 1/2 package of lime Jell-O; follow the directions on the box and then pulse in the food processor until well mixed.
  • Add in 1 juice of lime as well as some zest from the peel.
  • Add in the softened Neufchatel cheese.
  • Pulse until well-mixed, should be a thick liquid mixture.
  • Add the filling on to your crust and smooth until even.
  • I prefer to put it back into the freezer for about 1 hour and then either enjoy as a frozen treat or take it out for a few minutes to soften, but you can also just put it in the fridge for a few hours to set.
  • Garnish with sliced lime and sugar-free cool whip and serve!
  • (You can also substitute the lime Jell-O for lemon Jell-O for a cheesecake variation or chocolate Jell-O pudding for a chocolate mousse pie--minus the lime, of course).

1 pinch salt
14 oz cans of coconut milk, chilled overnight
½ cup lime juice, from about 2 limes
⅓ cup honey
2 limes, zested

Steps:

  • Line an 8-inch (20 cm) square baking dish with parchment paper to hang over the edges.
  • Make the crust: in a medium bowl, combine the almond flour, coconut oil, honey, cinnamon, and salt. Mix with a spatula until smooth.
  • Transfer the crust to the baking dish. Use a spatula to smooth the crust into a thin, even layer covering the bottom of the pan. Set aside.
  • Make the filling: open the cans of coconut milk and use a spoon to scoop the thick cream at the top of the can into a medium bowl. Set aside the remaining liquid for another use, such as in smoothies, soups, or sauces.
  • Beat the coconut cream with a hand mixer until very fluffy, about 5 minutes.
  • Add the lime juice and honey. Continue to beat until smooth and fluffy, about 2 minutes.
  • Pour the filling over the crust and use a spatula to smooth out the top.
  • Top with the lime zest.
  • Freeze for at least 2 hours, until the filling has set.
  • Grab the parchment on both sides and lift the frozen bar from the baking dish. You may need to use a knife to release the edges or turn the dish upside down on a cutting board and tap on the bottom to release the block.
  • Quickly cut the block into 16 2-inch (5-cm) square bars.

A truly flaky low carb pie crust recipe perfect for sweet pies or a savory quiche. My gluten-free crust is nicer than a press-in crust and has a great flavor.

1 1/2 cups almond flour
3 tbsp oat fiber ((or 1/3 cup Sukrin Sesame Flour))
1/4 tsp salt
5 tbsp unsalted butter, (cold and cubed)
1 large egg white ((mixed with 1 tsp water))
2 tbsp low carb powdered sugar

Steps:

  • Preheat oven to 350 F and place the rack in the middle position. Place a 9- inch pyrex pie plate in the freezer. Mix egg white with water.
  • Measure the dry ingredients into the bowl of a food processor and pulse to combine. Add the cubed cold butter and pulse until the butter is pea-sized. Drizzle the egg white around the bowl of the crust ingredients and pulse until the dough comes together.
  • Remove the dough to a piece of cling film and shape into a disc (see pictures), wrap and refrigerate for at least 30 minutes or for several days.
  • Place a new piece of cling film on the counter. Unwrap the pie crust dough and place it on the center. Place another piece of cling film on top of the dough. With a rolling pin, and starting at the center, roll the dough away from yourself. Give the dough a quarter turn and roll away from your self again. (If the cold dough crumbles a bit, don't worry, the rolling will warm it up and it will press back together.) Do this several times, flipping the whole pie crust over and proceeding with the other side until you have a 12 inch round disc. Place the crust in the freezer for 3-5 minutes or the refrigerator for 15 minutes.
  • Remove the pie plate from the freezer and place on your work surface. Remove the rolled crust from the freezer or refrigerator and peel-off the top piece of cling film. If the dough is stiff as a board, let it sit for a minute on the work surface.
  • Invert the dough on top of the pie plate and remove the remaining cling film. The dough should begin to slowly slump into the plate. Help the process along by gently lifting the edge of the crust with one hand and very gently pressing it into the plate with the other. Patch any tears.
  • Remove excess pie crust by cutting it away with a small sharp knife. Gather the excess crumbs and distribute them along the top edge of the pie plate, taking the time to build a rim. Flute the edge and dock the dough (poke holes all over with a fork). If the dough becomes too soft to work with, pop it into the freezer for a few minutes.
  • Place the dough onto the middle of the rack and bake for 15 minutes or until it's a nice golden brown. Let cool completely before filling. If not using right away, wrap tightly in cling film and keep in the fridge until ready to use. Will also freeze. Thaw in the refrigerator to prevent condensation and sogging.
  • NOTE: If you are baking a filling in the pie crust, like a quiche, DO NOT dock the dough. Place it into the freezer to become firm before filling and baking. The sesame flour version is a tad more delicate than the Oat Fiber version.
  • This crust serves 8 at 1.75 NET CARBS per serving.

  • 1. Preheat the oven to 350°F. 2. Combine the almond flour, confectioner's sweetener together in a bowl. Whisk the vanilla essence into the melted butter and add to the almond flour, mixing well. 3. Press the mixture down into a medium-size, round springform tin (7-inches in diameter) compacting down in a firm, even layer. 4. Bake in the oven for 10-12 minutes, then remove and allow to cool completely. 5. Combine the cream cheese, confectioner's sweetener, lime EO, the zest, and lime juice in a bowl.
