1 medium onion, diced
2 carrot stalks, diced
2 celery stalks, diced
14 oz can diced tomatoes
5 cups beef stock
2 Tbsp sugar-free ketchup
1 Tbsp mustard
1 bay leaf
1 tsp fresh parsley, chopped
1/2 tsp thyme
1 tsp salt
1 tsp pepper
1 cup riced cauliflower

Steps:

  • In a medium frying pan, cook beef.
  • Add all ingredients to a large stock pot and bring to a boil.
  • Simmer for 30 minutes.
  • Reduce temperature to low and cook for an additional 30 minutes.
  • Serve with 90 second keto mug bread.

2 tablespoons healthy fat such as butter, lard, or ghee
2 pounds ground beef
1 onion, diced
1 teaspoon celery seed ((optional))
1 28oz can diced tomatoes
8 cups bone broth
2 carrots, sliced
1 green bell pepper, chopped
1-1/2 cup green beans and/or asparagus, cut into 1-1/2" pieces
2 cups spinach (packed)
4 garlic cloves
salt & pepper, to taste (*)

Steps:

  • On medium-high heat, melt your choice of fat in a thick-bottom soup pot.
  • Add onions and cook until translucent. Add ground beef and cook for approximately 10 minutes, breaking up the meat.
  • Add celery seed, diced tomatoes, broth, and carrots and bring to a boil. Reduce heat to medium and continue to cook for 10 minutes or until carrots are tender.
  • Add bell peppers and green beans or asparagus and cook for another 5 minutes.
  • Turn off heat, add spinach, garlic and check for salt and pepper. Adjust if necessary. Stir to combine well.
  • Enjoy immediately but is also great for leftovers. Store in refrigerator up to 7 days.

2 tbsp avocado or olive oil
1 large onion
4 stalks celery
3 cloves garlic
1 ½ lbs ground beef
1 tsp sea salt
½ tsp ground black pepper
1 ½ tsp dried basil
1 tsp dried thyme
¾ tsp oregano
1 tsp parsley
½ head cauliflower
1 red pepper
1 green pepper
1 tbsp monk fruit / erythritol sweetener
¼ cup organic tomato paste
800 ml can organic diced tomatoes
½ lb green beans
8 cups beef broth or bone stock

Steps:

  • Soup pot
  • Cutting Board and Knife
  • Garlic press
  • Wash your veggies, then heat a soup pot on medium heat with a touch of oil. Chop up the onion, red pepper, green pepper and celery, and add each to the pot once the oil is hot. Cook until the onion is translucent, stirring the veggies frequently.
  • Mince the garlic with a knife or garlic press and add it to the pot with the ground beef, salt, pepper, basil, thyme, oregano and parsley. Stir well and then cook until the ground beef is no longer pink.
  • In the meantime, chop cauliflower into small pieces, trim the ends off of the green beans and chop them into 1" pieces. Once the beef is no longer pink, stir in the cauliflower, sweetener, tomato paste, diced tomatoes and green beans. Pour in the beef broth or bone stock until the ingredients are completely submerged in stock, about 8 cups.
  • Bring to a boil, reduce to a simmer and cook for 30 minutes, until the cauliflower is soft. Serve hot and enjoy!

2 lbs lean ground beef
1 lb bacon
2 cups celery
2 cups onions, chopped
1/2 cup carrot, sliced
2 teaspoons basil
6 cups chicken broth
2 cups broccoli, broken into small pieces
2 cups cauliflower, broken into small pieces
1 lb cheddar cheese, grated
3 cups heavy cream (for lower fat, use half 'n half or non-fat half 'n half)
1/2 teaspoon pepper
1/2 teaspoon salt
1/2 cup sour cream (for lower fat, use lite or non-fat)

Steps:

  • Brown the hamburger in a Dutch Oven, then drain the meat and set aside.
  • Brown the bacon, in the same Dutch Oven, drain it, and then return both the bacon and hamburger to the pot. Add the celery, onions, and carrots. Saute until the vegetables are just tender.
  • Add basil, broth, broccoli, cauliflower and cook until vegetable are just tender.
  • Then add the cheese, heavy cream, pepper, and salt and stir until the cheese melts.
  • Turn off heat and add the sour cream.

2 lbs hamburger or 2 lbs bulk sausage
1 cup celery, diced
4 ounces mushrooms, sliced
1 Lipton beefy onion soup mix
4 tablespoons flour
2 cups beef broth or 2 cups water
1 pint sour cream

Steps:

  • Brown the hamburger over medium high, until there is no pink remaining and then add the celery and mushrooms, stirring and continuing to cook for 2 more minutes. Stir in the flour and let it simmer on low for a couple of minutes, allowing the flour to turn a light golden brown.
  • Add the soup mix and beef broth to the ground beef mixture. Stirring continually as it thickens. Once it has thickened remove from heat and add the sour cream, stirring until the sour cream is well blended and the mixture re-thickens.
  • Serve over cooked (slightly mashed cauliflower or low carb noodles) or, if you are not counting carbs over rice or mashed potatoes.
