If desired, this vegetable side dish turns into a wonderful creamy soup just by adding more cream to the dish.

2 1/2 cups frozen chopped spinach
1 tablespoon olivio spread (I am following South Beach, so adjust to your preference) or 1 tablespoon Smart Balance butter spread (I am following South Beach, so adjust to your preference)
2 (21 g) wedges laughing cow light spreadable cheese with garlic and herbs
1/4 cup reduced-fat cheddar cheese
1/4 cup light cream
salt and pepper

Steps:

  • In small saucepan, cover and cook Spinach until tender on medium to low heat.
  • Add next 4 ingredients and stir until bubbly.
  • By adding a bit more cream or milk, this turns into a wonderful creamy soup!
  • Enjoy!

1/2 tablespoon chicken fat
2 1/2 ounces sweet onions
6 ounces Baby Spinach
1/2 tablespoon garlic
2 ounces cream cheese
1 tablespoon heavy cream
1 pinch salt

Steps:

  • Some prefer to cut the spinach into smaller pieces, I prefer to keep leaves and stems intact. Dice onions. Heat chicken fat in pan over medium heat, add onion. Saute until translucent, stirring often. Pile spinach on top and cover for no more than five minutes, watching closely. When wilted add cream cheese and melt. When melted add garlic and heavy cream. Simmer until flavors melt and liquid reduces to desired consitancy.

1/3 cup diced onion
2 cups water
1 chicken bouillon cube
6 cups fresh spinach
1/4 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup butter
1 pint heavy whipping cream

Steps:

  • combine water, onions, garlic powder, salt, pepper, bouillon cube and spinach (I grabbed 6 large handfuls) in saucepan until it starts to come to a boil.
  • Then add butter.
  • Once butter melts add in heavy whipping cream.
  • Cook for a few more minutes until spinach is desired tenderness.
  • If you would like put spinach in food processor or blender to make it smaller pieces.

1 tablespoon low-fat sour cream
1 tablespoon low-fat cream cheese
1/2 teaspoon garlic powder
1/2 teaspoon onion salt

Steps:

  • Bring 3 cups water to a boiling a saucepan.
  • Add spinach leaves.
  • Boil until leaves a re limp.
  • Put leaves into a strainer and press until most of the liquid is gone.
  • In a separate saucepan add leaves and rest of ingredients. Mix thoroughly until hot and bubbling.

2 (7 ounce) boxes broccoli or 2 (7 ounce) boxes one bunch chard leaves, stems chopped and cooked with the leaves
1 (8 ounce) package reduced-fat cream cheese (more or less, depending on how creamy you like your vegetables)
1 tablespoon butter or 1 tablespoon olive oil
1/2 onion
2 garlic cloves
1 teaspoon lemon pepper
salt
3 dashes fresh nutmeg (3 gratings)
1/2 cup grated parmesan cheese

Steps:

  • Microwave spinach addording to package directions and drain the spinach well.
  • Meanwhile, finely chop the onion and garlic and saute them in the oil.
  • Lower the heat, add the spinach, the cream cheese and the seasonings and stir until the cream cheese melts.
  • Turn the mixture into a microwaveable- or oven-proof dish and top with the parmesan cheese.
  • Heat until cheese melts and serve.
  • If any is left over- stir in a beaten egg and top with cheese - microwave until just firm.
