EASY CAJUN DIRTY RICE RECIPE (ONE POT!)
This quick and easy homemade Dirty Rice recipe only requires 8 simple ingredients; plus it's made entirely in one pot and it can be ready in 30 minutes or less! This Cajun rice is bursting with robust flavors - it's overflowing with two types of sausages, tender-crisp vegetables, deeply flavorful Creole spices and fresh herbs! Steps:
- Brown pork sausage: In a Dutch oven or high-sided large skillet, heat the oil over medium-high heat. Add the pork sausage and cook, undisturbed for 2 minutes. Use a spatula to flip the pork over and season with salt and pepper. Continue to cook, undisturbed for an additional 2 minutes. Use a wooden spoon to stir and break the pork up into large crumbles. Cook the crumbled of pork 1 more minute undisturbed. Use a large, slotted spoon to remove the sausage to a paper towel-lined plate and set aside. (Note: Pork will continue to cook in next steps)
- Brown the andouille: Add the andouille sausage to the pan. Cook, undisturbed for 2 minutes. Stir and continue to cook, stirring occasionally, until the andouille is well caramelized about 2 additional minutes. Use a large, slotted spoon to remove the andouille sausage to a separate paper towel-lined plate and set aside. (Note: If you have a lot of fat in the pan, drain off or blot all but 1 tablespoon of fat from the pan before proceeding with the next step.)
- Add vegetables + seasonings: Reduce the heat to medium and add the bell peppers, onion and celery. Cook, stirring occasionally, until the vegetables are softened, about 6-8 minutes. Add the garlic, Cajun seasoning and cayenne. Season with ½ teaspoon of salt and ¼ teaspoon of pepper. Cook until fragrant, about 30 seconds to 1 minute.
- Add the rice + broth: Return the pork sausage to the pan. Add the rice, broth and bay leaf (if using). Stir everything together, using the back of your spoon to gently scrape up any brown bits stuck to the bottom of the pan.
- Boil, Simmer, Cover and Cook: Bring the mixture to a boil over medium-high heat and then immediately reduce the heat to maintain a simmer. Cover the pan and simmer for 20-22 minutes, or until the rice is cooked and tender.
- Let steam off heat then add andouille: Remove the pan from the heat and let sit COVERED for 5 minutes. Remove the cover. Remove and discard bay leaf. Fluff the rice with a fork and stir in the andouille. Taste and adjust for seasoning with salt and pepper.
- Serve: Garnish with green onions and parsley. Serve and enjoy!

- Rinse beans, and then soak in a large pot of water overnight.
- In a skillet, heat oil over medium heat. Cook onion, bell pepper, garlic, and celery in olive oil for 3 to 4 minutes.
- Rinse beans, and transfer to a large pot with 6 cups water. Stir cooked vegetables into beans. Season with bay leaves, cayenne pepper, thyme, sage, parsley, and Cajun seasoning. Bring to a boil, and then reduce heat to medium-low. Simmer for 2 1/2 hours.
- Stir sausage into beans, and continue to simmer for 30 minutes.
- Meanwhile, prepare the rice. In a saucepan, bring water and rice to a boil. Reduce heat, cover, and simmer for 20 minutes. Serve beans over steamed white rice.

CAJUN DIRTY RICE & RED BEAN PIES
I used to make with chicken gizzards but now it is ground chicken and toned down quite a bit. Kids like refried beans. You can add veges you like and eliminate the ones you don't like. This can be made ahead and frozen. Any type smoked sausage can be used.

- In large mixing bowl, add beans with juice, drained tomatoes,margarine,salt,cumin, dry mustard and optional Tabasco sauce.
- Mash and beat until beans are mush. Then add instant potato flakes and mix in with a spoon. The mashed beans & tomatoes should be spreadable and not juicy. If they are, add 1 tsp potato flakes to the mixture.
- Spray Pam into two deep dish pie pans.
- Divide mixture between the two pans.
- Spread with back of spoon and press against the sides forming a pie crust in both pans; set aside.
- In large deep frying pan add the following:
- 10 slices of bacon, smoked sausage, chicken, onion. If turkey bacon is used and there is no fat or grease, add the vegetable oil. Do not add the oil if regular bacon is used.
- Stir on medium heat until all is browned.
- Add chopped peppers, thyme, celery seed, garlic. Stir until mixed and slightly sautéed.
- Add flour and mix for a roux.
- Add saved tomato juice.
- Add hot water, chicken base, bay leaves, and salt. Stir.
- Add 2 cups rice. Mix in and cover and simmer for 20 minutes.
- White rice is cooking, preheat oven 425°F.
- Place the pie crusts in oven and bake 8 to 10 minutes. Remove from oven and set aside.
- Turn oven to 375°F.
- Remove bay leaves.
- In small bowl, whisk together flour and milk. Stir into the rice mixture quickly and blend.
- Pile the meat,vegetable rice mixture into the pie pans.
- Bake for 25 minutes. Set aside for 10 minutes to set.
- Cut in 8 wedges per pie. Serve each slice with shredded cheese if desired.
- Note: If you make ahead and freeze, bake bean crust first and then fill and freeze.
- Allow extra 10 to 15 minutes oven time.

CLASSIC CAJUN DIRTY RICE
Steps:
- Gather the ingredients.
- In a large saucepan over high heat, bring the chicken broth to a boil.
- Add the chicken gizzards to the broth and reduce the heat to low; simmer for 30 minutes.
- Remove the gizzards with a slotted spoon and grind or chop them very finely. Reserve the broth.
- Add the bacon drippings or oil and 2 tablespoons of the butter to a Dutch oven or flameproof casserole over medium heat. Once the oil and butter mixture is hot, add the ground pork and ground or chopped gizzards.
- Cook, stirring frequently until browned.
- Lower the heat. Add the onions, celery, bell pepper, garlic, salt, pepper, paprika, and cayenne. Stir and continue cooking until the vegetables are tender, 5 to 7 minutes.
- Add the rice and reserved broth and then quickly bring to a boil. Heat the oven to 250 F.
- Stir, cover, and reduce the heat to low. Simmer for 15 minutes, or until the rice is tender.
- Melt the remaining 2 tablespoons of butter in a skillet and sauté the minced chicken livers for 3 minutes.
- Toss the minced chicken livers with the rice, taste for seasoning, and adjust with more salt and pepper as needed.
- Cover the pan and place it in the preheated oven for 10 minutes.
- Fluff with a fork. Serve and enjoy.

DIRTY RICE
This is a cajun classic. Dirty rice is basically a rice pilaf that is called dirty because it's cooked with minced chicken livers or gizzards. Don't run away now! The rice doesn't taste like liver, it just deepens the flavor of the rice and the crispy bits are so small you won't really notice them. You have a choice of using green bell peppers or jalapenos, depending on your heat tolerance. Enjoy!

- Cook the rice according to the package instructions, but use chicken broth for one third of the cooking liquid. So, for example, if the package says to use 3 cups of water for 1 1/2 cups of rice, use 2 cups of water and 1 cup of chicken broth. Once the rice has finished cooking, remove from heat and let sit for 5 minutes. Turn the rice out onto a sheet pan and drizzle 1 tablespoon of olive oil over it. Mix to combine and let cool.
- While the rice is cooking, mash and finely chop the chicken livers, or purée briefly in a blender. In a large pan that can eventually hold the rice plus everything else, put 1 tablespoon of oil plus the bacon in and cook over medium-low heat until the bacon is crispy.
- Add the ground pork and increase the heat to high. Allow the meat to brown before stirring. As soon as the pork starts to brown, add the final tablespoon of oil and add the celery, jalapeños, and onions. Brown them all over medium-high heat. You may notice the bottom of the pan getting crusty. Keep it from burning by lowering the heat if needed. Add the minced liver and cook for a few minutes more.
- Add the remaining cup of chicken broth and deglaze the pan by scraping the bottom of the pan with a wooden spoon. Add the Cajun seasoning and turn the heat to high. Boil away most of the chicken stock and then add the cooked rice. Toss to combine.
- Turn off the heat and add the green onions. Toss once more to combine and serve hot.

This version of dirty rice can be made with your favorite meatless ground burger or veggie ground burger. Cooking time does not include the brown rice which should be made according to box instructions.

- In a dry skillet, brown the flour, stirring constantly, until light brown in color (patience pays off in flavor later).
- In a separate skillet, saute the onion, celery and bell pepper, in 3 tablespoons of oil for 10 minutes, stirring constantly. Add to the flour and mix well.
- Brown the mushrooms in 3 teaspoons of oil. Add the veggie burger crumbles and brown well with the mushrooms for 10 minutes. Add to the onion and flour mixture and saute for another 10 minutes. Add the water and simmer for 10 minutes, stirring often. The mixture should be fairly thick. Add the remaining ingredients, mix well.

- Place kidney beans in large pot. Add enough water to pot to cover beans by 2 inches. Bring to boil. Remove pot from heat. Cover and let beans stand 1 hour to soften. Drain. Return beans to same pot. Add 7 cups water and chicken broth. Bring to boil. Reduce heat to medium-low and simmer until beans are tender, about 1 hour. Drain beans, reserving 2 cups of cooking liquid.
- Heat vegetable oil in heavy large skillet over medium-high heat. Add 2 cups onions and saute' until beginning to soften, about 4 minutes. Add sausage, bell pepper, celery, and garlic. Reduce heat to medium and saute' until vegetables are tender, about 10 minutes. Stir in beans, reserved 2 cups cooking liquid, 1 teaspoon salt, 1/2 teaspoon black pepper, paprika, and cayenne. Reduce heat to low; simmer until liquid thickens slightly, about 15 minutes.
- Meanwhile, combine remaining 2 3/4 cups water, rice, butter, bay leaf, thyme, and remaining 1/2 cup chopped onion, 1 teaspoon salt and 1/4 teaspoon black pepper in a large saucepan. Bring to simmer over high heat. Cover, reduce heat to low and cook until rice is tender and water is absorbed, about 20 minutes. Remove from heat and let stand covered 10 minutes.
- Spoon kidney beans into bowls. Top with rice and serve.
