BAKED BALSAMIC BRUSCHETTA CHICKEN
This Baked Balsamic Bruschetta Chicken is a delicious low carb main dish made in one pan in under 30 minutes! Juicy chicken breasts, fresh tomatoes, parmesan, and balsamic glaze.

Steps:
- Preheat your oven to 400 degrees Fahrenheit.
- Add the chicken breasts to a bowl along with the olive oil, balsamic vinegar, salt, pepper and garlic. Set aside for a few minutes.
- In a separate bowl, mix the chopped tomatoes, garlic, basil, parmesan and salt and pepper together until everything is combined.
- Heat a large oven-safe skillet over medium-high heat and add a small drizzle of olive oil. Add the chicken pieces (don't add all the liquid yet!) once the skillet and the oil is hot and brown the chicken pieces on both sides for about 4-5 minutes per side.
- Once the chicken has browned, pour in the leftover marinade over the chicken and bake for about 20-25 minutes or until the chicken breasts reach an internal temperature of 74 degrees Celsius (165 Fahrenheit).
- Remove the chicken from the oven and top with the cherry tomato mixture, along with a drizzle of balsamic glaze or balsamic vinegar, and some more grated parmesan cheese.

I haven't tried this recipe yet,it looks good to me. I'm trying more low carb recipes,and decided to put a few of them in here,so I could keep track of them,and other low carbers can try them!

Steps:
- Rinse and dry chicken.
- Mix all seasonings in small bowl.
- Place chicken in large bowl.
- Drizzle chicken with olive oil and rub with seasoning mix.
- Cover and refrigerate overnight.
- Preheat oven to 450 degree.
- Spray heavy roasting pan with cooking spray.
- Place chicken in pan, bake 10 min.
- Turn chicken over,stirring in 3 to 4 Tbs.
- water,if drippings stick.
- Bake 10 more min.
- If pan is dry,stir in 1 to 2 Tbs.
- water to loosen drippings.
- (I'd cook this chicken longer,at least 30 min. total.) or until chicken is browned,and no longer pink in center.
- Drizzle Balsamic over chicken in pan.
- Transfer chicken to large plate.
- Stir pan drippings,drizzle over chicken.

- Heat the olive oil in a large frying pan. Add the chicken tenders to the hot pan and sprinkle with the salt and pepper. Cook for about 4 minutes on each side until they are 160 on a meat thermometer. Transfer to a serving platter.
- Turn the heat to medium-high and add the balsamic vinegar and sundried tomatoes. Cook until reduced by half. Add the chicken back to the pan and coat with the balsamic glaze. Transfer back to the serving platter and top with basil.

- Preheat oven to 400˚F (200˚C).
- Cut sweet potatoes into medium julienne.
- Spread sweet potatoes evenly onto parchment paper-lined baking tray.
- Season with olive oil, pepper, and salt.
- Bake for 20 minutes. Set aside.
- Trim asparagus and cut into pieces diagonally.
- Spread evenly on the baking tray next to the sweet potatoes. Season with olive oil, pepper, and salt.
- Season chicken with pepper and salt. Place on top of the veggies.
- Bake for 15 minutes or until the internal temperature of the chicken reaches 165˚F (75˚C).
- While chicken is baking, reduce balsamic vinegar, white wine vinegar, olive oil, lemon juice, garlic, pepper, and salt in a small saucepan for 5-7 minutes until the sauce slightly thickens.
- Distribute veggies and chicken into four containers.
- Pour the sauce reduction onto the chicken.
- Can be refrigerated up to 4 days.

- In a nonstick skillet, heat 1 teaspoon of the oil.
- In a bowl, mix 2 tablespoons of the vinegar, the mustard and garlic.
- Add the chicken and coat both sides with the mixture.
- Transfer the chicken and mixture to the skillet; saute until cooked through, about 3 minutes per side.
- Transfer to a plate and keep warm.
- In the skillet, heat the remaining teaspoon of oil.
- Saute the mushrooms about a minute; add the broth/wine, thyme and remaining tablespoon of vinegar.
- Cook stirring until the mushrooms are deep brown, about 2 minutes longer.
- Serve the chicken, topped with the mushrooms.
