Low-carb egg, and cheese veggie muffins perfect for on the go. You can make them ahead and reheat in the microwave a few seconds. A great change from the usual low-carb bacon and eggs!

cooking spray
4 slices thick-cut bacon, diced
½ (12 ounce) package frozen chopped spinach, thawed and drained
4 mushrooms, chopped
¼ green bell pepper, chopped
2 slices onion, chopped
1 pinch salt and ground black pepper to taste
6 eggs
1 tablespoon heavy whipping cream
1 ¼ cups shredded Colby-Jack cheese, divided
½ teaspoon salt
¼ teaspoon ground black pepper
1 pinch onion powder
1 pinch garlic powder

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray 12 muffin cups with cooking spray.
  • Cook and stir bacon in a skillet over medium-high heat until crisp, about 10 minutes. Transfer bacon to a bowl, reserving bacon grease in the skillet.
  • Combine spinach, mushrooms, green bell pepper, onion, salt, and ground black pepper to taste in the skillet with bacon grease; cook and stir until softened, about 5 minutes. Transfer vegetable mixture to a bowl and place in the freezer to cool, about 5 minutes.
  • Whisk eggs and cream together in a bowl; stir in 1 cup Colby-Jack cheese, 1/2 teaspoon salt, 1/4 teaspoon ground black pepper, onion powder, and garlic powder. Add cooled vegetables and bacon to egg mixture and mix gently.
  • Scoop 1/4 cup egg mixture into each muffin cup; top each with remaining Colby-Jack cheese.
  • Bake in the preheated oven until egg cups are set, about 20 minutes.

12 strips sugar-free bacon (about 10 ounces)
2 red potatoes, sliced 1/8 inch thick, rounded ends discarded
1 small red bell pepper, finely chopped
12 large eggs
2 tablespoons chopped fresh chives
Hot sauce, for serving

Steps:

  • Preheat the oven to 400 degrees F. Wrap 1 piece of bacon around the inside of each cup of a 12-cup muffin tin to create rings. Put 1 slice of potato on the bottom of each cup and divide the bell pepper pieces among the cups.
  • Bake until the fat starts to render from the bacon (it will bubble in the bottom of each cup) and the bacon begins to crisp and turn light brown on the top edges, 10 to 12 minutes.
  • Remove the tin from the oven and crack an egg into each cup, making sure the yolk is inside the bacon ring. Continue baking until the bacon is crisp, the egg whites are cooked through and the yolks are still runny, about 10 minutes longer. Run an offset spatula around the edges and remove to a platter. Sprinkle with the chives and serve with hot sauce if desired.

Number Of Ingredients 8

4 slices bacon, chopped
1/4 cup onion, chopped
1 cup fresh button mushrooms, chopped
2 cups baby spinach, chopped
10 large eggs
1/4 cup 2% milk
1/3 cup cheddar cheese, shredded (mild or sharp depending on your taste)
salt and pepper to taste

Steps:

  • In a skillet, place bacon and cook on medium heat until it browns. Then, drain the fat and remove the bacon.
  • Chop the bacon, onions, mushrooms and spinach.
  • Then add onions to the skillet for 1-2 minutes until soft.
  • Add in your mushrooms and let them cook 1-3 minutes until their tender. Then add in spinach for about a minute. Then add your bacon and remove from heat.
  • Spray a muffin pan with non-stick spray.
  • Evenly distribute the bacon & vegetables in the skillet into the muffin cup. It should be about 1/2 full.
  • Then, in a separate bowl whisk your eggs, cheese, and milk together. Season with salt & pepper.
  • Pour that mixture into each muffin cup until each is about full - leaving just enough room for them to rise.
  • Bake at 375 for about 20-25 minutes or until the egg cups have risen and are slightly brown.
  • Then remove from the pan and enjoy warm!

I'm trying to go low-carb, and I found this recipe on Recipegal.com. It's so easy to make and tastes great! We use cheddar as nobody likes swiss cheese but me. It originally calls for a quiche pan, but I just used a 9-inch pie pan with great results! I also sprayed it with non-stick canola cooking spray, instead of the butter as the recipe originally called for.
