3 Minute Chocolate Cake in a Cup image

This recipe is delicious and unbelievably quick. A great recipe for whipping up with the kids for instant results. I use whole wheat flour and half coconut oil/half canola oil. Microwave manditory. Source unknown.

4 tablespoons flour
4 tablespoons sugar
2 tablespoons cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
1 dash vanilla
1 dash salt (optional)
1 dash baking powder (optional)

Steps:

  • Put all ingredients in a large mug and mix well.
  • Microwave for 3 minutes.
  • You will see cake rise, but it will fall when you take it out of the microwave. Microwave times may vary. If it looks done 15 or so seconds earlier, take it out.
  • Eat, but be careful, it's HOT!

1 tablespoon cocoa powder
1/4 teaspoon baking powder
5 (1 g) packets Splenda sugar substitute
2 teaspoons melted butter
1 tablespoon water
1 egg

Steps:

  • Blend the flour, cocoa, baking powder, splenda together in a Pyrex two-cup baking dish.
  • Add water, melted butter and egg and blend together thoroughly with a fork.
  • Cover with plastic wrap and cut a small vent in the top to vent.
  • Microwave on HIGH for 1 minute or until a knife comes out clean.
  • Cool a bit and eat warm with whipped cream.

Steps:

  • In a small bowl, beat egg with fork and add in the rest of the ingredients until.
  • a smooth batter is formed.
  • Pour into a cup which will hold 8 ounces. You could use a coffee mug.I Pammed it.Microwave for one minute.
  • The carb count would depend on the sweetener. You could use Davinici syrup.I don't think it would affect the texture of the cake.But, without the sweetener, you would have .7 carb for the egg and 2 NET carbs for the cocoa powder.About 3 net carbs in all.then add the sweetener carbs.

A wonderful yet low carb chocolate cake for the entire family to enjoy. It was my birthday on the 8th of march and for a dinner celebration on the 9th at my family's house, I really wanted to indulge in a nice dessert. One I could share with the entire family but that didn't leave me feeling like a cheater. Therefore, I took out my favorite cakes cookbook and adapted it to a low carb successful formula. I hope you like it. This makes a very dense cake so you probably won't need to eat more than one piece. The carb amount on this one is higher than my other recipes, but hey, It's my party and I'll indulge if I want to.

100 g almond flour
1 tablespoon instant coffee powder
3 big eggs
2 tablespoons artificial sweetener (or to your taste)
60 g dark chocolate
60 g dry coconut powder
2 -3 drops vanilla essence
1 teaspoon baking powder, and salt to match it
175 g cream cheese
15 ml Amaretto
2 tablespoons artificial sweetener (or to your taste)
2 tablespoons soft butter

Steps:

  • Preheat over to 190 degrees Celsius.
  • Separate the whites from the yolks and beat the whites stiff.
  • In the bowl with the yolks add the sweetener, melted chocolate, coffee powder, baking powder, vanilla essence, ground coconut and almond flour.
  • Gently fold in the egg whites. This will give the cake it's height and make your dough more moist.
  • Bake for about 25minutes at 190°C Check while it's cooking because all ovens are different.
  • Afterwards let the cake cool and in the meantime we can make the filling.
  • Mix the cream cheese with the sweetener, soft butter and add the Amaretto. I would suggest putting it in the fridge to harden. This will make the smearing a lot easier.
  • Now you can assemble the cake. Cut your cake in half horizontally, making two nice flat discs.Generously add the cream cheese filling and put both halves back together. Don't push them down, you want the extra height.

6 (1 g) packets Splenda sugar substitute (up to 10 packets)
1/4 teaspoon cream of tartar
1 (8 ounce) envelope sugar-free hot cocoa mix
1 tablespoon cocoa powder
1 tablespoon chocolate protein powder
1/4 cup soy flour

Steps:

  • Preheat oven to 350°F.
  • Beat egg whites with cream of tartar until soft peaks form.
  • Add 3 packets of splenda and beat until stiff but not dry.
  • In a separate bowl, whisk together yolks and remainder of Splenda (adjust to desired sweetness) and 1/2 package of the hot cocoa mix.
  • Add 1/2 Tbsp cocoa and mix well.
  • Blend a spoonfool of the white mixture into the yolk mixture.
  • Pour the yolk mixture over the whites and sift the remaining cocoa mix, cocoa powder, protein powder and soy flour over this.
  • Fold all of this together lightly.
  • spoon into a small bundt pan or loaf pan that has been sprayed with Pam.
  • Bake at 350° for 20 minutes or until firm, careful not to overbake.

1 teaspoon baking powder
1/4 teaspoon salt
4 eggs
1/4 cup butter or 1/4 cup margarine
1 teaspoon vanilla
1 cup sugar (or sugar substitute)
1/2 cup water
1/4 cup erythritol (optional)

Steps:

  • Heat oven to 350. Grease an 8 inch round or springform pan.
  • Process pecans until they are the texture of meal.
  • Process the rest of the dry ingredients.
  • Add the wet ingredients and process until blended.
  • Pour into the pan and bake.
  • Bake for about 25 minutes (check with toothpick and leave in longer if needed).
  • Cool and Slice.
