HEALTHIER SWEDISH MEATBALLS
This recipe is a healthier take on a classic Swedish meatballs dish without sacrificing the elegance or taste. No one will ever know from tasting this dish that it is a lighter, healthier version.

Steps:
- Preheat the oven to 350 degrees F (175 degrees C).
- Heat olive oil in a pan over medium-high heat. Saute onion in the hot oil until transparent, 5 to 7 minutes. Remove from heat and let cool.
- Combine ground sirloin, ground pork, bread crumbs, onion, egg, milk, garlic powder, salt, pepper, and 2 dashes Worcestershire sauce in a bowl. Form into 1-inch meatballs. Place onto a baking sheet.
- Bake in the preheated oven until no longer pink in the centers, about 20 minutes.
- Pour 4 cups beef broth, soy sauce, rosemary, and remaining Worcestershire sauce into a large skillet. Bring to a simmer.
- Pour remaining beef broth into a measuring cup and whisk in cornstarch. Pour mixture into the sauce and stir until thickened. Add meatballs to the sauce and stir in Greek yogurt. Top with parsley and serve.

SIMPLE LOW-FAT TURKEY MEATBALLS
An adaptation from my boyfriend's Greek grandmother's recipe. So simple, even I (a non-cooker) can make them and they still taste great!

- Beat egg in large bowl.
- Add all remaining ingredients.
- Mush together well using your hands.
- Form into 1/2 inch balls.
- Heat small amount of olive oil (about 1 tsp to keep this recipe low-fat) in skillet.
- Put half the balls into the skillet and cook until browned evenly on outside.
- Remove and add remaining balls.
SIMPLE LOW FAT MEATBALLS.
I got this recipe from a Women's Health magazine. They suggest you add Cajun seasoning to these since they are supposed to be an appetizer. Also, their nutritional information is that these have 20 calories each, .5 fat grams, and 3 grams of protein. Not a significant source of sodium, carbs, or fiber.

- Preheat oven to 375°F.
- Dice tenderloin into one inch cubes.
- In a blender, add all ingredients and pulse about 16 times until well mixed and evenly ground.
- Roll into 32 meatballs.
- Place on baking pan and spritz with Olive oil.
- Bake for about 10 minutes or until juices run clear and they are no longer pink.
- **Note: I am saying this makes 32 servings for nutritional ease of understanding. However, I would say if people eat about four each, then you would really get 8 servings.

- Heat oven to 200C/180C fan/gas 6. Line a baking sheet with foil and brush with 1 tsp oil. Mash the lentils in a bowl with the back of a fork to break down a bit, but not completely. Stir in the pork, rosemary, mustard, garlic, some pepper to generously season, and mix well with the fork to distribute the lentils evenly. Divide the mixture into 4. Form each quarter into 5 small balls - to give you 20 in total - squeezing the mixture together well as you shape it. Lay the meatballs on the foil and roll them around in the oil to coat all over. Bake for 15 mins until cooked and lightly browned. Remove (leave the oven on) and set aside.
- While the meatballs cook, heat 2 tsp of the oil for the sauce in a large non-stick frying pan. Tip in the shallots and garlic, and fry on a medium heat for 3-4 mins until softened and tinged brown. Pour in the remaining 1 tsp oil, lay the tomatoes in the pan so most of them are cut-side down (to help release the juices), raise the heat and fry them for 3-4 mins or until the tomatoes are starting to soften and release their juices. Don't stir, or they may lose their shape. Splash in 125-150ml water so it all bubbles, and gently mix in the tomato purée. Lower the heat and simmer for 2 mins to create a juicy, chunky sauce. Season with the chilli flakes, oregano, pepper and a pinch of salt, and give it a quick stir, adding a drop more water if needed - you want it thick enough to coat the meatballs.
- Pour the sauce into a casserole dish, add the meatballs and spoon the sauce over them to coat. Cover with foil and bake for 10 mins while you cook the spaghetti.
- Boil a large saucepan of water. Add the spaghetti, stir and bring back to the boil. Cook for 10-12 mins, or following pack instructions, until al dente. Drain well, season with pepper and serve with the meatballs, sauce and a light sprinkling of oregano.
