LOUISIANA CRUNCH CAKE
Steps:
- Preheat oven to 350 degrees F.
- Thoroughly grease and dust your bundt pan.
- Sift your dry ingredients together and keep on the side in a separate bowl. Beat your butter by itself for a good five minutes to get a super thick and fluffy texture. Add in your sugar and cream on medium speed for another two minutes.
- One at a time, add your eggs, allowing each to fully incorporate before adding the next. Gently mix through the sour cream and vanilla. Add your sifted dry ingredients in four to five additions, alternating with the buttermilk, and gently fold through to incorporate.
- Sprinkle the remaining 1/4 cup sugar over the base of your pan, followed by the coconut flakes. Pour your batter into the bundt pan, scraping your bowl clean.
- Bake for 50-60 minutes, checking with a wooden skewer after 50 minutes. (If your skewer is wet, bake until it comes out clean, checking every five minutes.)
- Leave your cake to cool for 10 minutes before turning out.

- Mix all the ingredients together. Yes, add the frosting to the cake batter!
- Pour into a well-greased bundt pan.
- Bake at 350F for 45 minutes (depending on your oven, cook until toothpick comes out clean).
- Let cool in cake pan for 5 minutes.
- Invert on a cooling rack and leave in pan for 5 minutes.
- Remove the cake from the pan.
- Cool completely.
- Dust with powdered sugar to serve or you can wrap tightly in plastic wrap and freeze until needed.

THE BEST LOUISIANA CRUNCH CAKE EVER

Steps:
- 1. Preheat oven to 350 Degrees Fahrenheit.
- 2. Sift together cake flour, salt, baking powder and soda. Set aside.
- 3. In a large separate bowl, beat butter until very fluffy (approx. 5 minuets) then add 2 cups of sugar. Continue to beat until light and fluffy (approx. 2 more minutes).
- 4. Beat in eggs, one at a time, making sure that each egg is thoroughly blended before adding the next egg.
- 5. Mix in sour cream and vanilla extract.
- 6. Blend in some of the dry ingredients followed by some of the buttermilk in alternates. This is a way to ensure that the ingredients are being thoroughly blended together -- For example; add dry mixture followed by buttermilk, dry mixture, buttermilk dry mixture -- so on and so forth -- DO NOT OVER BEAT OTHERWISE CAKE WILL BECOME HARD AS A BRICK ONCE FINISHED BAKING!
- 7. Grease a bundt cake pan. I used a non stick angle food spring formed tube pan. If you do not have a non stick pan, be sure to grease your pan and dust with flour! Add in 1/4 cup of sugar to the bottom of pan and about 3 inches up the sides, tapping the pan to ensure even distribution. Leave excess sugar in pan. Sprinkle coconut flakes to the bottom of the pan. Scrape batter into the bundt pan and spread evenly.
- 8. Bake for about 50 minutes to an hour or until a wooden skewer inserted comes out clean (if it comes out wet, bake another 10 minutes or so, if it comes out crumbly, you over baked the cake).
- 9. Let cake cool for about 10 minutes, then carefully remove from pan, making sure that the sugary coconut side is faced upward. Use a knife to scrape the sides if cake becomes stuck. (this step is very important otherwise your cake will continue to bake and will become very dry and completely stuck in the pan).
- 10. Drizzle glaze over the crunchy top portion of cake. Please use my Vanilla Almond Glaze recipe to complete this cake!

This cake was born on the bayou. It has a caramel-pecan sauce that soaks into the cake.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch pan.
- In a large bowl, sift together flour, 1 1/2 cup sugar, salt and baking soda. Add eggs, pineapple, and juice. Mix at low speed until well blended.
- Pour batter into prepared pan. Bake in preheated oven until a tester comes out clean, 30 to 35 minutes. Have the topping ready when the cake comes out of the oven.
- To Make Topping: In a saucepan, combine milk, 3/4 cup sugar, and margarine. Bring to a boil and cook for 2 minutes, stirring constantly. Add pecans and coconut and combine. Remove from heat.
- When cake comes out of the oven, pour on the topping and carefully spread on while cake is still hot.

- Mix crabmeat, peppers, onions, eggs, pepper sauce and 1/2 cup cracker crumbs. Refrigerate 1 hour or until firm. Meanwhile, refrigerate combined dressing and mustard.

LOUISIANA CRAWFISH CAKES
Steps:
- Heat oil in sauce pan and sweat onions and peppers for 1 minute. Add garlic and crawfish tails and heat through. Add Worcestershire sauce, crystal hot sauce, salt and L.A. spice. Remove from heat and let cool. Beat eggs in stainless bowl and add crawfish mixture. Fold in Parmesan and 1 cup bread crumbs. Combine all ingredients and form into 5-ounce patties. Dust cakes with additional bread crumbs. Heat crawfish cake through in broiler. Place corn puddding in center of plate. Place heated crawfish cake on top. Zig-zag cilantro cream over entire plate. Top cake with parsley sprig.

- Sautee' onions and mushrooms until soft.
- prepare brown gravy mix as directed on package.
- Serve hot on a hamburger bun.
- Place onions/mushrooms on top of burgers, then cheeses, then pour on desired amount of gravy.
- Add condiments as desired.
- This is also great with lettuce/ tomatoes/ pickles.

- Warm a heavy-bottomed Dutch oven or a cast-iron skillet over medium heat for 2 minutes, then add the butter. When it has melted, add the onions and cook, stirring occasionally, until soft and translucent, about 20 minutes.
- Add the celery, bell pepper, and bay leaf and cook, stirring occasionally, until the vegetables are very soft with no bite remaining, about 20 minutes. Taste a piece of bell pepper—if the vegetables are ready, there should be no more crunch to it.
- Add 1/2 cup (120 ml) of the cream, stir, and reduce the heat to low. Cook until most of the cream has reduced, about 8 minutes, then add the remaining1/2 cup (120 ml) cream and simmer until the liquid has completely reduced and thickened to the consistency of a paste, 20 to 30 minutes. (It’s important to reduce the liquid as much as possible, or the mix will be watery.) Turn off the heat, transfer the mixture to a large bowl, and let cool.
- While the mixture is cooling, put your crabmeat in a large bowl and use your fingers to carefully pick through it and remove any crab shells: Take a little crab at a time and lightly rub it between your fingers—you should be able to feel bits of shell. Go through the meat before using.
