Provided by Anne Burrell

Categories     side-dish

Time 45m

Yield 4 servings

Number Of Ingredients 8

2 pounds white new potatoes, cut in half
Kosher salt
Extra-virgin olive oil
8 bacon slices, cut into lardons
1 onion, cut into 1/4-inch dice
1/2 cup chicken stock
1/4 cup apple cider vinegar
1 bunch fresh chives, finely chopped

Steps:

  • Toss the potatoes in a medium saucepan, cover generously with water and season generously with salt. Bring the pot to a boil and reduce to a simmer until the potatoes are fork tender, about 20 minutes. Drain and reserve.
  • Coat a large straight-sided saute pan lightly with olive oil. Toss in the bacon and bring the pan to a medium heat. When the bacon is brown and crispy, toss in the onions and cook them until they are very soft and aromatic, 7 to 8 minutes. Add the stock and vinegar. Toss in the potatoes when they are still warm and cook until the liquid has absorbed into the potatoes. Taste and season with salt if needed. Toss in the chives and serve warm or at room temperature.

SUNNY'S WARM GERMAN POTATO SALAD

Categories     side-dish

Time 55m

Yield 4 to 6 servings

Number Of Ingredients 13

1 pound red bliss or creamer potatoes
1/2 teaspoon mesquite liquid smoke
2 cloves garlic, smashed
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
1 red bell pepper
8 strips bacon, chopped
1/4 cup apple cider vinegar
2 tablespoons sugar
1 1/2 teaspoons whole-grain mustard
Dash of hot Hungarian paprika
1/2 cup gently chopped fresh curly parsley
4 scallions, finely chopped

Steps:

  • In a large pot, add the potatoes, liquid smoke, garlic, a nice pinch of salt, a few grinds of pepper and water to just cover. Bring to a boil, then lower to a simmer. Cook until the potatoes are fork-tender all the way through, about 15 minutes. Drain in a colander and rest the colander over the top of the empty pot to allow the heat to dry the potatoes. Once cool enough to handle but still warm, cut the larger potatoes in quarters and the others in half to make all the same general bite size. Some may not need to be cut at all. Add to a large mixing bowl.
  • If using a gas stove, place the pepper directly over a medium flame and allow to char on one side, then rotate until the entire pepper is black and charred. If you don't have a gas stove, roast the pepper on a baking sheet under the broiler or at the highest temperature of your oven. Carefully watch to rotate the pepper and char on all sides. Remove to a resealable plastic bag and close, allowing it to steam for 5 minutes to loosen the skin. Once cool enough to handle, remove the seeds and charred skin and chop the pepper. Set aside.
  • In a large pan on medium heat, add the bacon and cook, stirring, until crisp, about 8 minutes. Remove with a slotted spoon to a plate, leaving the fat in the pan. Add the vinegar, sugar, mustard, paprika, a pinch of salt and a few grinds of pepper to the still-hot pan. Cook at a rolling simmer until the sugar and salt dissolve, about 2 minutes. Add the potatoes and toss until they soak up the vinegar mixture.
  • Transfer the potatoes back to the large bowl. Add the red peppers, bacon, parsley and scallions and toss. Pour into a serving bowl and serve warm or cold.

COLD GERMAN POTATO SALAD

Cold German Potato Salad image

This is one of those true German recipes. My dear MIL is a "true" German. Trying to get measurements from her is like pulling teeth. I have made this for DH for 34 years now. I still throw it together without measuring so today while preparing it I tried to eyeball the amounts. Hope it works for you and that it is enjoyed. There is no sugar included like most potato salads. DH does like mayo on the side.

HOT GERMAN POTATO BACON SALAD

Hot German Potato Bacon Salad image

I absolutely adore this salad. I like it enough I will actually eat bacon! Based on the way my MIL makes German Potato salad, this is probably not vinegary enough to be authentic, but I love it just the way it is. I hope you like it too.

AUTHENTIC GERMAN POTATO SALAD

Authentic German Potato Salad image

This is my mother's recipe. Everyone, German or not, loves it. It is easy to double the recipe as well. I often bring it to potlucks, and we also have it at home on special occasions. There are usually no leftovers, but if there are, they don't last long!

BACON POTATO SALAD

Bacon Potato Salad image

This is my favorite non-German bacon potato salad. What makes it special is that the potatoes are seasoned while they're warm so they soak up all the great flavors before you finish the salad. The use of lemon juice really brightens the dish, but you could always use vinegar if you prefer. This is an older recipe from Emeril Lagasse which, surprisingly, contains no extra bacon grease!

LOU'S GERMAN POTATO SALAD WITH BACON

Lou's German Potato Salad With Bacon image

This is an easy to make German-style potato salad which my late father made - influenced by his mother's German roots. When I make this for pot luck events, I have to make extra because everyone wants to take some home. To make it creamier, you can add more mayo as desired - but be sure to balance it off with and equal amount of vinegar.

Provided by The_Mick

Categories     Potato

Time 1h20m

Yield 1 gallon, 16 serving(s)

Number Of Ingredients 10

5 lbs potatoes (gold or red varieties preferred)
1 lb sliced bacon
1 large baseball sized sweet onion (makes 1-2 cups sliced)
2/3 cup mayonnaise
2/3 cup apple cider vinegar
2 teaspoons prepared mustard
2 teaspoons sugar
1 teaspoon celery seed
1 tablespoon cooking oil (or spray equivalent)
4 hard-boiled eggs (optional)

Steps:

  • Peel and cut potatoes into 3/4 inch cubes and place in a pot with enough to COLD water to cover potatoes. Heat the pot of potatoes and boil until the potatoes become soft (test with a fork), but don't overcook. Continue with the remaining steps while the potatoes are cooking. When done, drain the potatoes into a colander then place them in a very large bowl.
  • Spray a large frying pan with spray-oil or spread cooking oil across its surface so bacon won't burn before releasing it own fats. Cut the bacon into 1-1.5" pieces, place them in the frying pan and sauté them at medium high heat with stirring.
  • Dice the onion into bite sized pieces (1-2 cups) and, when the bacon begins to curl significantly (or begins to get crisp if you like crisp bacon), add the onion to the pan and sauté with occasional stirring until the onion becomes translucent and the bacon reaches the desired level of crispness. (Note: if you prefer raw onion, simply set it aside and add it in the last step).
  • In the large bowl, sprinkle the potatoes with the sugar and celery seed. Dollop the mayonnaise and mustard over the bowl's contents.
  • Add the bacon, bacon fats, and onion mixture to the bowl. If there's too much bacon fat for your liking, add just 2 tablespoons of it to the bowl - it has a great effect on the final flavor/texture. Cut eggs, if used, into bite sized pieces, crumble the yolks, and add them to the bowl.
  • Stir the mixture together with a large spoon (a fork with promote mashing the potatoes) until all the ingredients a mixed sufficiently.
