Tender chicken and vegetables in a savory chicken broth.

8 chicken thighs (about 1 1/2 pounds, diced)
2 tablespoon olive oil
2 carrots (diced)
1 small onion
2 stalks celery (diced)
5 tablespoons flour (divided)
½ teaspoon rosemary
½ teaspoon thyme
¼ teaspoon sage
salt and pepper (to taste)
1 ½ cups potatoes (peeled and diced)
1 ½ cups sweet potatoes (peeled and diced)
½ red pepper (finely diced)
¼ cup white wine
4 cups chicken broth (or chicken stock)
1 cup green beans (or peas)
½ cup heavy cream

Steps:

  • In a large pot or dutch oven, brown chicken in 1 tablespoon olive oil (it doesn't have to be cooked through). Remove from pot and set aside.
  • Cook onion, carrot and celery in remaining olive oil for about 3 minutes or until onion is slightly softened. Stir in 3 tablespoons of flour, seasonings and salt & pepper to taste. Cook over medium heat about 2 minutes.
  • Add potatoes, sweet potatoes, red pepper, white wine, browned chicken and broth. Bring to a boil, reduce heat and simmer covered for 30 minutes.
  • Remove lid and stir in green beans and cream. Thicken if desired (below) and simmer an additional 10 minutes uncovered.
  • To thicken: In a mason jar combine remaining 2 tablespoons flour and 1 cup water or broth. Shake very well (ensure there are no lumps) and add a little at a time to boiling stew to reach desired consistency.

My boys love chicken fried steak any which way it comes served. We have had many an argument over what is the correct name; chicken fried or country fried. To me they are the same! I have included the gravy recipe as well, no chicken fried steak would be complete without it ! The original recipe came from a Texas cookbook, but I have changed it up a bit. Serve with a big pot of mashed potatoes and plenty of bread and butter for dipping!

1 1/2 lbs round steaks, cut into 4-6 pieces, tenderized (sirloin works well too)
1 1/2 cups flour
1 teaspoon salt
1 1/2 teaspoons pepper
3 eggs, beaten
1/2 cup half-and-half or 1/2 cup milk
oil (for frying)
6 tablespoons pan drippings or 6 tablespoons bacon grease
6 tablespoons flour
3 cups hot milk
salt and pepper

Steps:

  • Combine flour, salt and pepper in pie plate.
  • In another pie plate, combine eggs and milk.
  • Dredge meat in flour mixture, shaking off excess flour.
  • Dip steak into egg mixture and dredge again in flour.
  • Heat 1/2 inch oil in a heavy skillet.
  • Place steaks in skillet and fry until golden brown on both sides.
  • To make gravy, remove steaks to warm oven. (I use my toaster oven for this step).
  • Remove all leftover oil except for 6 T. and the brown bits.
  • Add flour to skillet.
  • Cook and stir until flour begins to brown.
  • Add hot milk and whisk until thickened.
  • Season with salt and pepper and pour over warm steaks.

2 tablespoons olive oil
2 stalks celery, cut into bite-size pieces
1 carrot, peeled, cut into bite-size pieces
1 small onion, chopped
Salt and freshly ground black pepper
1 (14 1/2-ounce) can chopped tomatoes
1 (14-ounce) can low-salt chicken broth
1/2 cup fresh basil leaves, torn into pieces
1 tablespoon tomato paste
1 bay leaf
1/2 teaspoon dried thyme leaves
2 chicken breast with ribs (about 1 1/2 pounds total)
1 (15-ounce) can organic kidney beans, drained (rinsed if not organic)

Steps:

  • Heat the oil in a heavy 5 1/2-quart saucepan over medium heat. Add the celery, carrot, and onion. Saute the vegetables until the onion is translucent, about 5 minutes. Season with salt and pepper, to taste. Stir in the tomatoes with their juices, chicken broth, basil, tomato paste, bay leaf, and thyme. Add the chicken breasts; press to submerge.
  • Bring the cooking liquid to a simmer. Reduce the heat to medium-low and simmer gently uncovered until the chicken is almost cooked through, turning the chicken breasts over and stirring the mixture occasionally, about 25 minutes. Using tongs, transfer the chicken breasts to a work surface and cool for 5 minutes. Discard the bay leaf. Add the kidney beans to the pot and simmer until the liquid has reduced into a stew consistency, about 10 minutes.
  • Discard the skin and bones from the chicken breasts. Shred or cut the chicken into bite- size pieces. Return the chicken meat to the stew. Bring the stew just to a simmer. Season with salt and pepper, to taste.
  • Ladle the stew into serving bowls and serve with the bread.
  • Serving suggestion: crusty bread.

Huey's recipe for Lone Star Chicken Stew, from a NicheDigitalMedia dvd, Sambal oelek is Indonesian in origin and is a salty paste made from ground chillies and vinegar. Way too hot for my tastes. If you don't like your food hot and spicy, omit it and use instead some of your favourite herbs. And if you are using it, be careful not to add too much salt!

vegetable oil, for sauteing
2 medium onions, diced
1 red bell pepper, diced
1 medium carrot, diced
2 celery ribs, diced
1 teaspoon sambal oelek
1 teaspoon dried oregano
6 -8 boneless chicken thighs, cut into chunks
1 cup chicken stock
2 (400 g) cans diced tomatoes (400g = approximately 13 ounces, just under)
2 (420 g) cans cannellini beans, drained and rinsed (420g = approximately 13 ounces, just over)
2 tablespoons balsamic vinegar
sea salt, to taste (may not be needed at all if you're using the sambal oelek)
fresh ground black pepper, to taste
1/2 cup fresh coriander, chopped
1 cup sour cream, to serve (low-fat is fine)
1 cup tasty cheese, grated, to serve

Steps:

  • Heat oil in a - preferably non-stick - pan and sauté the onion, red bell pepper, carrot and celery until they begin to soften; add the sambal oelek and oregano and chicken pieces and cook, stirring regularly, so that the chicken and vegetables are well-coated with the sambal oelek and oregano, for about five minutes until the surfaces of the chicken pieces are well sealed.
  • Add the stock, tomatoes, beans, balsamic vinegar and seasonings; simmer covered for 20-25 minutes, stirring now and again, adding more stock if necessary; stir in the coriander.
  • Garnish with the sour cream and grated cheese.

1 tbsp olive oil
1 bunch spring onions , sliced, white and green parts separated
1 small swede (350g), peeled and chopped into small pieces
400g potatoes , peeled and chopped into small pieces
8 skinless boneless chicken thighs
1 tbsp Dijon mustard
500ml chicken stock
200g Savoy cabbage or spring cabbage, sliced
2 tsp cornflour (optional)
crusty bread or cheese scones, to serve (optional)

Steps:

  • Heat the oil in a large saucepan. Add the white spring onion slices and fry for 1 min to soften. Tip in the swede and potatoes and cook for 2-3 mins more, then add the chicken, mustard and stock. Cover and cook for 35 mins, or until the vegetables are tender and the chicken cooked through.
  • Add the cabbage and simmer for another 5 mins. If the stew looks too thin, mix the cornflour with 1 tbsp cold water and pour a couple of teaspoonfuls into the pan; let the stew bubble and thicken, then check again. If it's still too thin, add a little more of the cornflour mix and let the stew bubble and thicken some more.
  • Season to taste, then spoon the stew into deep bowls. Scatter over the green spring onion slices and serve with crusty bread or warm cheese scones, if you like.

Cook this creamy, comforting stew to serve with our smashed mini jacket potatoes. This warming one-pot with chicken, peas and leeks is perfect for a special family meal

3 leeks , halved and finely sliced
2 tbsp olive oil , plus extra if needed
1 tbsp butter
8 small chicken thighs
500ml chicken stock
1 tbsp Dijon mustard
75g crème fraîche
200g frozen peas
3 tbsp dried or fresh breadcrumbs
small bunch of parsley , finely chopped

Steps:

  • Tip the leeks and oil into a flameproof casserole dish on a low heat, add the butter and cook everything very gently for 10 mins or until the leeks are soft.
  • Put the chicken, skin-side down, in a large non-stick frying pan on a medium heat, cook until the skin browns, then turn and brown the other side. You shouldn't need any oil but if the skin starts to stick, add a little. Add the chicken to the leeks, leaving behind any fat in the pan.
  • Add the stock to the dish and bring to a simmer, season well, cover and cook for 30 mins on low. Stir in the mustard, crème fraîche and peas and bring to a simmer. You should have quite a bit of sauce.
  • When you're ready to serve, put the grill on. Mix the breadcrumbs and parsley, sprinkle them over the chicken and grill until browned.

Add the chicken drumsticks and breasts in a single layer, season with salt and pepper and cook the chicken over moderately high heat, turning once, until golden brown, about 7 minutes total; transfer the chicken to a plate. Add the mushrooms to the pan and cook until lightly browned, about 3 minutes. Using a slotted spoon, transfer the mushrooms to a small bowl.
  • Add the potato, carrot, onion, garlic and butter to the skillet and cook until the vegetables are lightly browned, about 4 minutes. Stir in the flour. Pour in the wine and bring to a simmer, scraping up any browned bits from the bottom of the pan. Add the stock, thyme, bay leaf and chicken along with any accumulated juices and bring to a boil. Cover and simmer over moderately low heat until the potato and carrots are tender and the chicken drumsticks are cooked through, about 15 minutes. Discard the bay leaf and thyme. Stir in the heavy cream and the reserved mushrooms and season with salt and pepper. Sprinkle with the parsley and serve.
