SIMPLE CABBAGE SALAD



Simple Cabbage Salad image

Cabbage maintains a nice crunch when it's tossed with an easy dressing in this simple cabbage salad recipe. This easy salad is perfect for fall when cabbage is at its sweetest.

2 tablespoons lemon juice
2 tablespoons extra-virgin olive oil
2 tablespoons chopped fresh flat-leaf parsley
1 tablespoon Dijon mustard
1 tablespoon honey
1 teaspoon garlic powder
½ teaspoon salt
½ teaspoon ground pepper
8 cups shredded green cabbage (from 1 small head)

Steps:

  • Whisk lemon juice, oil, parsley, mustard, honey, garlic powder, salt and pepper together in a large bowl. Add cabbage and toss to coat; let stand for 10 minutes. Toss again; serve immediately or refrigerate for up to 1 hour before serving.

Louis Dressing... (So Don't Peek!) :-) image

This is pretty much a Seafood Louie minus the lettuce and seafood! My best friend's mom used to make this dressing in the galley of their boat while the crab pots were being pulled up! It's the best Louie (thousand island) dressing I've ever had. I like having it around when I have the craves for a Louie but not the time, because pretty much everything's in there but the lettuce and the shrimp or crab!

1/2 cup mayonnaise
2 tablespoons whipping cream
2 tablespoons chili sauce (such as Heinz)
2 tablespoons green bell peppers, chopped
2 tablespoons scallions, chopped
2 hard-boiled eggs, chopped
2 tablespoons black olives, chopped
2 tablespoons pickles, chopped (I use bread and butter pickles) (optional)
salt and pepper, to taste

Steps:

  • Mix mayo, whipping cream, and chili sauce together.
  • Add all remaining ingredients.
  • Refrigerate.

I love this cabbage salad from my dear friend Lois! It is a salad with so many variations in the dressing's that you can make for this salad I will include some ideas in my notes.

1 green cabbage head (small)
1 red cabbage head (small)
1/2 cup sour cream
1/2 cup mayonnaise (Hellmans)
1/8 cup apple cider vinegar (Bragg's)
1 tablespoon rice vinegar
1 teaspoon sugar (to taste)
1 teaspoon salt (Kosher)
1 teaspoon pepper (cracked)

Steps:

  • chop cabbages red & green in thin slices set aside in refrigerator.
  • mix next four ingredients together taste dressing to see if you want to add the sugar.
  • mix cabbage with dressing to desired taste and salt and pepper to taste.
  • Dressing if any leftover, will keep for a couple of days refrigerated.
  • Note: if you do not have dressing ingredients on hand blend a sour cream base dressing with a white vinegar or be creative use what you like! The 1/8 cup of apple cider vinegar may be rice vingar, as to how much of the apple cider vinegar you use is up to taste. DH likes the rice vinegar better. I use the apple cider vinegar for health reasons.
