Steps:
- Pour enough oil in a heavy large saucepan to reach the depth of 3 inches. Heat the oil over medium heat to 350 degrees F.
- Stir the eggs, risotto, Parmesan, and 1/2 cup of the bread crumbs in a large bowl to combine. Place the remaining breadcrumbs in a medium bowl. Using about 2 tablespoons of the risotto mixture for each, form the risotto mixture into 1 3/4-inch-diameter balls. Insert 1 cube of mozzarella into the center of each ball. Roll the balls in the bread crumbs to coat.
- Working in batches, add the rice balls to the hot ail and cook until brown and heated through, turning them as necessary, about 4 minutes. Using a slotted spoon, transfer the rice balls to paper towels to drain. Season with salt. Let rest 2 minutes. Serve hot.
- Bring the broth to a simmer in a heavy medium saucepan. Add the porcini mushrooms. Set aside until the mushrooms are tender, about 5 minutes. Keep the broth warm over very low heat.
- Melt the butter in a heavy large saucepan over medium heat. Add olive oil. Add the onions and saute until tender, about 8 minutes. Add the white mushrooms and garlic. Using a slotted spoon, transfer the porcini mushrooms to a cutting board. Finely chop the mushrooms and add to the saucepan. Saute until the mushrooms are tender and the juices evaporate, about 5 minutes. Stir in the rice and let it toast for a few minutes. Add the wine; cook until the liquid is absorbed, stirring often, about 2 minutes. Add 1 cup of hot broth; simmer over medium-low heat until the liquid is absorbed, stirring often, about 3 minutes. Continue to cook until the rice is just tender and the mixture is creamy, adding more broth by cupfuls and stirring often, about 28 minutes (the rice will absorb 6 to 8 cups of broth). Stir in the peas. Mix in the Parmesan. Season with salt and pepper, to taste.
LOBSTER RISOTTO
Steps:
- Cut lobster by piercing the middle of the skull and continue to cut through to the tail. Clean the inside thoroughly.
- Saute 1 of the onions and the garlic together in olive oil for 2 to 3 minutes.
- Add the lobster halves and cook 2 to 3 minutes or until the lobster turns a light red color. Remove the lobster. Pull the meat out of the shell, roughly chop and place in the refrigerator. Return the shells to the pan. At this time, deglaze the pan with 2 1/2 cups of the white wine. Add the cream and let cook uncovered until the cream reduces to 3 cups and turns a light red/orange color, about 1 hour 30 minutes. Remove the shells.
- Saute the remaining onion in a saucepan in olive oil for 3 minutes, or until transparent. Add the arborio rice and stir for 1 minute. Deglaze with the remaining 1/2 cup white wine and cook until wine is almost completely absorbed.
- Pour in enough water to just cover the rice. Cook until al dente, about 15 minutes. Add the rice to the lobster sauce and cook down for 15 minutes, or until the rice is creamy and tender. Season with salt and pepper.
- To serve, spoon desired amount of risotto and place the lobster on top. Garnish with parsley.

- To make the risotto: Heat the oil and butter is a large enamel pot on the stove. Add shallots, salt and pepper and saute until lightly browned. Add the rice and stir, cooking until lightly toasted about 3-4 minutes. Add the white wine while stirring. Add the lemon juice. With the heat on medium high, begin adding the seafood stock a little at a time, and continuously stirring, until all the stock has been used and the rice is al dente and creamy. Turn off heat, and mix in the parmesan cheese. Check seasoning and adjust if needed.
- Spread the risotto in a single layer on a baking sheet sprayed with baking spray. Sprinkle the peas on top. Cover with saran wrap and refrigerate for a few hours, or overnight.
- To make the Saffron Aioli: :Place 8-10 threads of saffron in 1 tablespoon of hot water in a small mixing bowl. Let steep for 5 minutes. Add salt, black pepper, lemon juice, olive oil, dijon mustard and mayonnaise and combine thoroughly. Cover and keep chilled until ready to serve to allow the flavors to blend.
- To make the arancini:: Melt the butter in a pan, and warm the diced lobster meat. Set aside to cool in a small bowl.
