FETTUCINI WITH LOBSTER MUSHROOMS AND HEIRLOOM TOMATO SAUCE
Steps:
- In a medium sauté-pan or saucepan, heat the butter and olive oil over medium heat and add the shallot and garlic.
- Apply a touch of salt and pepper and sauté for about 5-7 minutes, or until just turning golden in color.
- Add the white wine and bring to a boil, reduce and simmer until reduced by half, about 10 minutes.
- Place the grated tomatoes, basil leaves, thyme, and a touch more salt and pepper.
- Bring to a boil, reduce, and simmer for 30 minutes.
- Drain the sauce through a sieve and be sure to take some time to really push through with a wooden spoon to get all of the delicious juices through (draining the sauce is totally optional, you could go more of a rustic route here if you please).
- Place the sauce back on the heat and bring to a light simmer, then add the heavy cream.
- Lightly stir until it is all blended and unified, then taste for seasoning.
- Cover and keep on the lowest heat setting to stay warm until it's ready to use.
- Bring a large pot of water to a boil, salt, and add the pasta. Cook to just under al dente.
- In a sauté pan add the garlic, butter, oil, and thyme, and let sit on a low heat for 5-10 minutes so all of the flavors can infuse.
- When ready to cook the mushrooms, bring up to a medium-high heat. Add the mushrooms and sauté for 5-10 minutes, taste to make sure they are cooked to your liking, then add salt and pepper to taste.
- When the pasta is just under al dente drain and place in the heirloom tomato sauce.
- Add a heaping of freshly grated parmesan cheese and mix everything together.
- Bring the sauce up to a medium heat and finish cooking the pasta in the sauce.
- When ready to serve, mix in the basil leaves with the pasta, saving a little to garnish.
- Plate your pasta and add cheese to taste; then add the wonderful lobster mushrooms and garnish with basil.

- Fill a large pot with about 4 quarts of water. Set the burner to high and boil. Add frozen ravioli to boiling water for 6-8 minutes, stirring occasionally (very gently). The ravioli are done when they float to the top of the water.
- At the same time you are boiling the water, heat a large skillet with the olive oil. Add onions and mushrooms and sauté until tender, about 3 minutes. Add the Marsala wine and bring to a boil.
- Boil for 2-4 minutes, adding salt and pepper to taste. Stir in cream and milk and simmer for 5 minutes until heated.
- Serve in a recessed pasta plate. Pour a generous amount of creamy marsala wine sauce mixture over 3-4 ravioli and serve HOT.
- **Optional: Serve ravioli on a bed of bowtie pasta for a heartier serving, or substitute the ravioli for thin chicken breasts. Saute the chicken for 15 minutes before the mushrooms, then follow the recipe from there.

- Melt the butter in a medium saucepan over medium heat. Slowly cook and stir mushrooms in the butter until tender. Mix in lobster meat. Cook until opaque. Remove mushrooms and lobster from saucepan and set aside.
- Reduce heat to low. Place flour in pan. Cook and stir approximately 2 minutes, then stir in chicken broth, heavy cream and pepper. Simmer 5 to 10 minutes, or until thickened.

- Heat 2 tablespoons of the butter in large skillet over medium heat until melted. Add the red pepper and shallots and gently cook until the shallots soften, about 3 minutes. Add the mushrooms and season with salt and pepper. Cover and cook for 10 minutes, then take off the cover and cook until the mushrooms are golden brown, another 10 minutes. Add the thyme and garlic and cook until fragrant, then deglaze with the wine and cook until the alcohol scent dissipates, another 2 to 3 minutes. - Place tails in a pot of boiling water and pre-cook for 2 minutes.
- Remove from pot and ice down to stop the cooking process.
- After the lobster has rested in the ice for 15 minutes, remove meat from the tails, cut into large chunks.
- Set aside meat.
- Save tail shells for presentation.
- In a large skillet, melt butter.
- Sauté garlic and shallots for 3 minutes.

- Plunge the lobsters headfirst into a large quantity of boiling salted water. Cook for 5 minutes and drain. Pierce the lobsters between the eyes and suspend them head down so that they drain further.
- Cut off the claws and tail sections of the lobsters. Crack the shells and remove the meat in whole pieces. Cut the tail lengthwise into 4 equal- size pieces. Leave the claw meat intact.
- Meanwhile, combine one-quarter cup of the white wine, the cream, the vermouth, 1 tablespoon of shallots and one-half teaspoon finely minced garlic. Bring to a boil and let cook until the sauce is reduced to about three-quarters of a cup.
- Cut the scallions on the bias into 1 1/2-inch lengths. Cut the celery on the bias into quarter-inch widths.
- Heat the butter in a casserole and add the remaining 4 teaspoons chopped shallots and the remaining quarter teaspoon minced garlic. Add the scallions, celery, lobster pieces and remaining wine. Heat briefly. Pour the sauce over all and bring to a boil. Let simmer until the lobster meat is thoroughly hot. Add the cayenne pepper, salt, pepper, lemon juice and chopped dill.
- Arrange 3 or 4 corn cakes on each of four plates. Arrange 2 lobster tail pieces and 1 claw in the center. Spoon an equal portion of the sauce over each serving. Garnish each serving with a dill sprig.
