GARLIC AND ONION CHALLAH BREAD

Garlic and Onion Challah Bread image

Provided by Molly Yeh

Categories     side-dish

Time 4h

Yield 2 loaves

Number Of Ingredients 12

2 packets (about 4 1/2 teaspoons) active dry yeast
1 1/2 cups warm water
1/4 cup plus 1 teaspoon sugar
6 1/2 cups flour, plus more for dusting (or sub in up to 2 1/2 cups whole wheat flour)
2 teaspoons kosher salt
2/3 cup flavorless oil, like canola or vegetable, plus more for the bowl
5 large eggs
1/4 cup butter, melted
1/2 onion, finely chopped
4 cloves garlic, minced
1 tablespoon honey
Flaky salt, for topping

Steps:

  • In a medium bowl, combine the yeast, warm water and 1 teaspoon of the sugar and give it a little stir. Let it sit for about 5 minutes, until it becomes foamy on top.
  • Meanwhile, in a large bowl or the bowl of stand mixer fitted with a dough hook, mix together the flour, kosher salt and remaining 1/4 cup sugar. In a separate medium bowl, whisk together the oil and 4 of the eggs.
  • When the yeast is foamy, add it to the dry mixture immediately followed by the egg mixture and stir to combine. Knead, either by hand on a floured surface or with a dough hook, adding more white flour as necessary (but resist any urge to add too much!), until you have a smooth and slightly sticky dough, 7 to 10 minutes.
  • Transfer the dough to an oiled bowl, cover it with plastic wrap and let it sit at room temperature until it has doubled in size, about 2 hours. It will take slightly longer if you're using whole wheat flour. Alternatively, you can stick it in the refrigerator overnight and then let it sit at room temperature for about an hour before shaping.
  • Line a baking sheet with parchment paper. Divide the dough into 6 pieces. Roll out each piece into a large strip, 1/2 to 1/4 inch thick and about 3 inches wide. Brush down each center with melted butter. Down the center, add the chopped onions and garlic. Roll each piece to seal in the onion mixture. Braid 3 of the pieces together, tucking the ends underneath to seal. Repeat with the remaining 3 pieces to make a second loaf. Place on the lined baking sheet and cover loosely with plastic wrap. Allow to rest for 30 minutes.
  • Preheat the oven to 350 degrees F.
  • Whisk together the honey and remaining egg in a small bowl. Brush the bread top with the mixture and sprinkle with flaky salt.
  • Bake until golden brown and not doughy in the center, about 35 minutes, but start checking at 28 minutes. Allow to cool slightly before serving.

NO YEAST CHEESE, GARLIC AND HERB BREAD

No Yeast Cheese, Garlic and Herb Bread image

A bread made without yeast with swirls of herb and pockets of cheese throughout. Slices well and especially great toasted!

Provided by Nagi | RecipeTin Eats

Categories     Bread

Time 50m

Number Of Ingredients 11

4 tbsp fresh herbs (, finely chopped (I used a mix of dill, rosemary, parsley and thyme) (Note 1))
2 tbsp olive oil
5 oz / 150g block cheese ((cheddar or tasty), cut into 2mm / 0.1" thick slices (about 10 to 12 slices) (Note 2))
Butter for greasing
2 1/4 cups plain flour
2 tsp baking powder
1/2 tsp baking soda
1 tsp salt
1 1/4 cups buttermilk ((See Note 3 for substitute))
2 eggs
2 small garlic cloves (, crushed)

Steps:

  • Preheat oven to 180C/350F.
  • Grease a bread tin (21 x 11 cm / 8" x 4") or small cake tin with butter.
  • Mix the herbs and olive oil in a small bowl.
  • Sift the Dry Ingredients into a bowl.
  • Combine the Wet Ingredients into a bowl and whisk to combine.
  • Make a well in the centre of the Dry Ingredients. Pour the Wet Ingredients in and mix until just combined.
  • Pour 1/3 of the batter into the bread tin. Dollop half the herbs across the top then use a knife to "swirl" it into the batter up and down, and also turning the batter over (refer photo below).
  • Use half the cheese slices and push them randomly into the batter. Push some all the way in and leave some poking out of the batter.
  • Pour the remaining batter over the top. Dollop and swirl the remaining herbs, then randomly wedge in the remaining cheese, pushing most of it below the surface of the batter. Even out the surface.
  • Bake for 30 minutes, or until the top is golden. Remove from oven and cover with foil, then bake for a further 15 to 20 minutes (total baking time of 45 to 50 minutes). Check to make sure the centre is cooked by inserting a skewer - it should come out clean.
  • Turn the bread out onto a cooking rack. Allow to cool for at least 10 minutes before cutting.

EASY CHEESE AND ONION BREAD

Easy Cheese and Onion Bread image

I was searching for a quick bread recipe without all the time and work it takes to knead dough and then wait for it to rise. I searched Food Network.com and found a recipe for "Beer Bread". Although simple and fast to make, I did not like the taste of it. So I altered the ingredients and experimented a bit and after just two trys, I came up with this version. I was so pleased with it....I felt compelled to share it with others who like me, want a quick homemade bread that everyone will love! Make sure your oven is the required temperature. Let cool before slicing otherwise it will crumble and fall apart. When slicing, use a very sharp knife and saw gently while pressing down to get the best results. This bread is great with stews, chili, heartly soups, and open faced turkey or beef sandwiches. Very filling!

  • Dice the onion half into small chunks. Saute the diced onions in a frying pan with a small amount of butter or vegetable oil until golden brown.
  • Unplug bread machine & remove bread pan. Pour the milk & softened butter into the bread pan first and then add the other ingredients. Place the bread machine yeast in last and the yeast should not touch the liquid, salt or the hot sautéed onions (until the bread machine is turned on and the ingredients start to be mixed together by the bread machine). You can create a little hole or ditch in the top of the flour and place the yeast in this hole in order to keep the yeast separate for the salt, etc.

  • In a small saucepan over medium-low heat, combine about 3/4 of the garlic, all of the onion, and all of the butter. Allow the butter to melt, then simmer until the onions have caramelized and the butter is golden, about 30 minutes, stirring often. Let cool for 3-5 minutes.
  • Add the butter mixture and the remaining fresh garlic to a food processor and pulse until mostly smooth. Add the herbs, salt, and red pepper flakes, and pulse until combined. Be sure not to over-process, you want the herbs to be well-distributed but not processed to a paste. Taste and adjust seasonings as necessary. Set aside.
  • Halve the ciabatta and place on a large baking sheet. Spread the garlic-onion-herb butter evenly over the cut sides of the bread. Sprinkle with parmesan cheese.
