My mother-in-law got this recipe from a community school cookbook. It's so simple and all of my frinds make it now. Once you taste it you'll be sharing it with all of your friends.

2 lbs beef stew meat, cut in 1 1/2 inch chunks
2 medium onions, quartered
3 stalks celery, cut in large chunks
4 carrots, cut in 1 1/2 inch pieces
2 large potatoes, cut in 1 1/2 inch pieces
1 cup tomato juice (V-8 recomended)
1/4 cup tapioca
1 tablespoon sugar
1 tablespoon salt
1/4 teaspoon pepper
1/2 teaspoon dried basil
1/2 cup dry red wine (burgundy recommended, or omit wine and use 1 cup water)
1/2 cup water

Steps:

  • Preheat oven to 300°F
  • Mix together all ingredients, except potatoes, in a large Dutch oven casserole; cover and cook for 3 hours.
  • Add potatoes and cook for additional 1 hour.

ORIENTAL BEEF STEW

Stew with a different twist! Although you wouldn't think from reading the ingredients in this recipe that it has a ton of flavor, it does. Be sure and enjoy it over some freshly steamed rice. If you want the sauce a little thicker, you could add a teaspoon or two of cornstarch mixed with a little water to this dish shortly before its finished baking. I think pork or chicken could be used in this dish in place of the beef -- I would imagine the baking time might be shorter.

1 1/2 lbs lean beef, cubed
4 stalks celery, cut into 1 pieces (if stalks are large, 3 will probably be sufficient)
1 large onion, sliced
1 medium bell pepper, sliced
1 (3 -4 ounce) can mushrooms, undrained
1 -2 carrot, sliced (optional)
3 tablespoons soy sauce

Steps:

  • Brown beef in a little hot oil.
  • Place in casserole dish with remaining ingredients.
  • Cover. Bake in 350 oven for 2 hours.
  • Serve over hot rice.

3 tablespoons all-purpose flour
1 1/2-2 lbs lean stewing beef (cubed round or your preferred cut)
2 -3 tablespoons cooking oil
3 1/2 cups beef broth (or 3 cups beef broth plus 1/2 cup dry red wine)
1 medium onion, sliced
2 garlic cloves, minced
1/2 teaspoon dried basil, crushed
1/2 teaspoon dried thyme, crushed
2 1/4 cups peeled cubed potatoes
2 cups carrots, sliced thickly
1 cup sliced celery (optional)
2 cups sliced green beans (OR 1 1/2 cups peas)
salt and pepper

Steps:

  • Place flour in a plastic bag, add a few pieces of beef at a time shaking well to coat.
  • Heat oil in a Dutch oven or large sauce pan.
  • Add meat and onions, brown meat well.
  • Add beef broth (and wine if using), garlic, basil and thyme.
  • Bring all to a boil, reduce heat, cover and simmer for 1 1/4- 1 1/2 hours (or until meat is tender).
  • Add potatoes, carrots and celery, cover pot, and simmer for about 20-30 minutes (or until potatoes are almost done).
  • Add green beans (or peas) and simmer 10-15 minutes more.
  • Add salt and pepper to taste.

1 lb stewing beef
1 lb red potatoes
500 g carrots
2 onions
1 swede
2 leeks
100 g mushrooms
2 stalks celery
beef suet
flour
water

Steps:

  • Peel and chop all vegetables.
  • Brown steak in a large stockpot.
  • Add water to cover.
  • Add all vegetables.
  • Pour over gravy granules.
  • Aimmer for 2 hours.
  • Make dumplings by combining 2oz suet, 4oz plain flour and a little water. Separate into small balls and roll in flour. Add to top of stew half an hour before end of cooking. They are ready when well risen.
  • This recipe freezes very well and is a weekly meal in our home.

  • Bake at 300 degrees for five hours.
  • Do not peek.

Traditional British beef stew, done the low fat way, based on a recipe my mother in-law cooks, although I don't think she puts tomato puree in it, I just think it adds a depth of flavour.

600 g braising steak, cubed
2 carrots, chopped
1 leek, sliced
2 parsnips, sliced
8 teaspoons gravy, granules (heaped)
1 bouquet garni
1 tablespoon tomato puree
1/2 teaspoon sugar
salt and pepper
1 cup frozen peas

Steps:

  • Put the steak into the crock pot.
  • Put vegetables and some water into a pan and bring to the boil.
  • Simmer for approx 8 minutes.
  • Drain the vegetables, reserving the cooking water, and add the veg to the crock pot.
  • Add the cooking water from the vegetables to the gravy granules, use enough to make the gravy thick but not gloopy.
  • Add the tomato paste, bouquet garni, sugar, worcestershire sauce and saly and pepper to the gravy mixture, stir and add to the crock pot.
  • Cook for 30 minutes at high temperature then 7 hours at low temperature.
  • Add the peas to the crock pot, cook for a further 30 minutes and serve.
