LOADED ITALIAN SAUSAGE AND PEPPERS SUBS
These Italian Sausage and Peppers Sub sandwiches are loaded with sausage, peppers, onions and vegetables in marina sauce and topped with melted fresh mozzarella cheese. Ready in about 20 minutes, they're a quick and easy weeknight meal.

Steps:
- Heat olive oil in a large skillet over medium heat.
- Add onions, carrots and peppers and sauté for three minutes.
- Add sliced Italian sausage to the pan and sauté for 3 or 4 minutes, until the sausage is lightly browned.
- Add mushrooms to the pan and sauté for 2 minutes, until softened.
- Add RAGÚ® Simply Chunky Marinara Pasta Sauce to the skillet, reduce heat and simmer until heated through, about 5 minutes.
- While the sauce mixture is simmering, preheat the broiler to low and lightly toast the sub rolls.
- Remove rolls from oven and set the top halves of the rolls on plates.
- Top the bottom halves of the bread with sausage and vegetable mixture. Add mozzarella cheese slices on the top of each sandwich.
- Return to the broiler until cheese has melted. Watch the oven closely, as it will only take a few minutes for the cheese to melt under the broiler.
- Remove the sandwiches from the oven and transfer to plates. Top each sandwich with the other half of a roll and serve.

- Preheat the oven to 400 degrees F. For easy clean up, line a large, rimmed baking sheet with parchment paper.
- Arrange the cut sausage, bell peppers, and onions in the center of the pan.
- Drizzle with the olive oil and red wine vinegar, then sprinkle with the garlic, salt, basil, oregano, black pepper, and red pepper flakes. Toss to combine, then arrange in a single layer.
- Bake for 25-35 minutes, until the peppers are as tender as you like, tossing once halfway through. Remove from the oven and serve hot.

- In a small skillet, cook sausage over medium heat until browned. Let stand until cool enough to handle. Cut into 1/2-in. slices. - Seed wax peppers if desired; cut wax and bell peppers into 2-in. pieces. In a large skillet, saute peppers and onions in oil until tender. Stir in the tomatoes, tomato paste, water, garlic, bay leaves and seasonings; heat through., Meanwhile, in another large skillet, brown sausages. Transfer to an ungreased 13-in. x 9-in. baking dish. - Preheat oven to 350 degrees then line a baking sheet with foil, spray with nonstick spray, and set aside.
- Heat a large skillet over medium-high heat. Spray with nonstick spray then add sausages cut side down and sear until golden brown, 5 minutes. Flip then sear for 1 more minute. Transfer sausages to prepared baking sheet then set aside.
- Turn heat down to a touch above medium then add oil. Once hot, add bell peppers and onion, season with seasoned salt and pepper, then saute until vegetables begin to soften and get a little bit of color, 5 minutes. Add mushrooms then saute until all the vegetables are tender, adding more seasoned salt and pepper after the mushrooms release their liquid. When the vegetables have a few minutes left, add garlic then saute until very fragrant. Add balsamic vinegar then stir to combine.
- Scoop vegetables on top of seared sausages then sprinkle cheese on top. Bake for 10-12 minutes or until cheese is fully melted then serve.
