3 cups oil for frying
1 cup sifted all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
¼ teaspoon white sugar
1 egg, lightly beaten
½ cup milk
1 tablespoon shortening, melted
1 (12 ounce) can whole kernel corn, drained

Steps:

  • Heat oil in a heavy pot or deep fryer to 365 degrees F (185 degrees C).
  • In a medium bowl, combine flour, baking powder, salt and sugar. Beat together egg, milk, and melted shortening; stir into flour mixture. Mix in the corn kernels.
  • Drop fritter batter by spoonfuls into the hot oil, and fry until golden. Drain on paper towels.

Fritters are a pleasing side dish. The sugar can be adjusted if you like things a bit sweeter. The recipe calls for deep frying them, but I have also done them in a skillet with just enough oil to cover the bottom of the pan.

  • In a bowl, combine egg& milk.
  • Stir in corn& oil.
  • Combine flour, sugar, salt& baking powder; add to egg mixture; stir just until mixed.

  • Fry until golden& cooked through, about 4-5 minutes.
  • Drain in paper towels.
  • Serve hot with warm maple syrup.

Celebrate summer with a quick and easy recipe for corn fritters that can be made with fresh or frozen corn kernels.

1 cup all-purpose flour
1 Tablespoon sugar
1 teaspoon baking powder
2 large eggs, lightly beaten
3/4 cup heavy cream
Vegetable oil, for frying
Sliced scallions, for serving
Sour cream or garlic aioli, for serving

Steps:

  • In a large bowl, stir together the corn kernels, flour, sugar, baking powder, 1/2 teaspoon salt and 1/4 teaspoon pepper.
  • Stir in the eggs and heavy cream until the batter is well-combined.
  • Line a plate with paper towels. Coat the bottom of a large sauté pan with vegetable oil and place it over medium-high heat. Once the oil is hot, scoop 2- to 3-tablespoon mounds of the corn batter into the pan, spreading it lightly into a flat, circular shape. Cook the fritters for 2 to 3 minutes, then flip them once and cook them an additional 3 minutes until they're golden brown and cooked through. Transfer the fritters to the paper towel-lined plate, season them immediately with salt and repeat the cooking process with the remaining batter, adding more oil to the pan as needed.
  • Garnish the corn fritters with scallions and serve them with sour cream or garlic aioli for dipping.

2 ears corn, cooked (or 1 cup/250 mL frozen corn kernels, thawed and drained)
1/4 cup fine cornmeal
1/4 cup whole wheat flour
1 teaspoon salt

3/4 cup cheddar cheese, grated
2 green onions, chopped
1 egg
1/4 cup milk
1 tablespoon olive oil

Steps:

  • Carefully slice corn kernels from leftover cobs and set aside. Then, in a medium bowl, whisk together cornmeal, flour, salt and baking soda. Add cheddar cheese and stir, then mix in corn niblets and green onion. In a separate small bowl, combine egg and milk, and whisk until frothy. Add to corn mixture and combine well.
  • Heat oil in a large frying pan over medium heat. To form patties, scoop batter 1/3 cup (75 mL) at a time and place in hot pan (a dry measure or ice cream scoop works well). Flatten patties slightly with the back of a large spoon; each should be about the size of a hamburger. Fry 5 to 6 minutes, turning halfway through cooking time, until patties are golden brown on both sides.

1/4 cup flour (, plain / all purpose)
1/4 cup cornflour / cornstarch
1/4 tsp baking soda ((or 3/4 tsp baking powder))
1 egg
2 tbsp milk ((any type))
2 cups fresh corn kernels (, raw (2 cobs) (canned or frozen also fine - Note 1))
1/2 cup parmesan (, finely grated)
3/4 cup green onions (, sliced)
1/2 cup coriander/cilantro (, roughly chopped (sub more green onion))
1/2 cup vegetable oil
Oil spray
Avocado sauce
Sour cream, ketchup ((don't judge until you've tried it!))

Steps:

  • Preheat oven to 120°C / 250°F and set a wire rack on a baking tray.
  • Place flour, cornflour and baking soda in a bowl, mix to combine.
  • Add egg and milk, mix until incorporated (batter will be lumpy and thick).
  • Add corn, parmesan, green onions and coriander. Mix until all the corn is evenly coated in batter.
  • Add enough oil into the skillet so it just covers the base. Heat over medium high heat.
  • Spray the underside of a spatula with oil (so batter won't stick when you flatten).
  • Place 1/4 cup batter into skillet (ice cream scooper with lever is handy), then flatten to 1cm thick. Repeat with 2 or 3 more, but don't crowd the skillet.
  • Cook 3 minutes until deep golden and crisp, then flip and cook the other side for 2 - 3 minutes.
  • Transfer to rack and keep warm in oven. Repeat with remaining fritters, using more oil as necessary.
  • Serve with sauce of choice for dunking!

2 whole Eggs

olive oil or avocado oil for cooking

Steps:

  • Place grated zucchini in the middle of a paper towel. Squeeze out as much of the moisture as you can.
  • Place drained zucchini with all other remaining ingredients except oil in a medium bowl.
  • Mix to combine everything.
  • In a large skillet, warm your cooking oil over medium heat. Once the oil is hot, use a heaping tablespoon to portion the fritter batter into the hot pan.
  • Cook for 2-3 minutes or until the fritter starts to turn golden brown. Flip, gently press down to flatten the fritter a bit and cook for another 2 minutes or until cooked through.
  • Remove from pan and enjoy warm with sliced avocado, sour cream or dipping sauce of choice.

1 cup all-purpose flour

¼ cup shredded Parmesan cheese

Steps:

  • Place 2/4 cup of sweet corn into a blender with the all-purpose flour, eggs, and shredded Parmesan cheese.
  • Blend the mixture on high for 10 seconds.
  • Get a chopping board, and chiffonade the parsley and chives, and set aside.
  • Pour the mixture into a mixing bowl, then add 3/4 cup of sweet corn, followed by the salt, paprika, chopped chives, and chopped parsley.
  • Mix everything together with a spoon until it's well incorporated.
  • Get a lined air fryer tray, spray the olive oil spray on the parchment paper, and place 3 corn fritters onto the tray. Then, spray more olive oil on top of the corn fritters.
  • Bake the corn fritters for 12 minutes, turning them over at 6 minutes.

1/2 cup all-purpose flour
1/4 cup cornmeal
1/2 teaspoon baking powder
1 teaspoon granulated garlic
3/4 teaspoon salt
Fresh cracked pepper (, to taste)
1/2 cup + 1 tablespoon soy milk (, unsweetened (or any non-dairy milk))
1 cup corn (, unsalted canned or frozen (*see note))
1/2 cup red bell pepper (, diced)
2 green onions (, thinly sliced)
grapeseed oil (for frying (or any high smoke point oil) )

Steps:

  • Prepare a paper towel-lined plate or tray and set aside.
  • To a large bowl, add the flour, cornmeal, garlic, baking powder, salt and pepper. Whisk to combine well.
  • Add the milk and whisk until combined. The batter should be thick, but if looks dry, add a few teaspoons of milk or oil to moisten.
  • Add the corn, bell pepper and green onions. Fold with a spatula to combine.
  • Heat up a Large Non-Stick Skillet over medium heat for 1-2 minutes. When hot, drizzle oil on the bottom of the pan to coat.
  • Using a Large Cookie Scoop (or 1/4 measuring cup filled 3/4 the way), scoop about 3 tablespoons of batter out and into the pan (you should hear the batter sizzle). Gently press down the mound to flatten. Repeat in a clockwise pattern until you run out of room. Don't crowd the pan or they won't crisp well.
  • Cook fritters for 2-4 minutes or until golden brown. Using a spatula, check under the first fritter you placed to see if it's ready, then flip and repeat on the other side. Check the rest in the same clockwise direction and flip when ready. The other side will likely cook faster so keep an eye on them. If the pan is smoking, turn down the heat.
  • Place fritters on paper towel-lined plate to absorb excess oil. Repeat method until all batter is gone. Serve with dip and enjoy!

2 c 2 c fresh corn, with "milk" from cob (approx. 4 ears)
1 Tbsp chives (heaping)
1 large jalapeno, finely minced
1 tsp salt
1/4 tsp ground black pepper
1 tsp louisiana seafood seasoning (or cajun/creole seasoning)
1 tsp white sugar (optional)
2 large eggs
1 Tbsp sour cream
3/4 c all purpose flour
1 tsp baking powder
2 Tbsp real bacon bits
1 c shredded sharp cheddar cheese
canola oil for frying (or your fave neutral oil)

Steps:

  • 1. In mixing bowl, combine corn, chives, jalapeno, salt, pepper, louisiana seasoning and sugar (if using.)
  • 2. Add eggs and sour cream; mix well to combine.
  • 3. Add flour and baking powder; mix well.
  • 4. Add bacon bits and cheese; mix well.
  • 5. Into skillet, pour about one inch of oil. Bring oil up to frying temperature over medium/medium high heat.
  • 6. Cooking in batches of about 5 at a time, drop corn mixture from a large tablespoon into hot oil, quickly flattening a bit with the back of the spoon. Brown until golden on both sides (watch closely because it only takes about 2 minutes or so per side.) Drain on paper towels.
  • 7. Serve hot or warm. Refrigerate leftovers. Reheat in toaster oven or air fryer.

  • Scoop out the flesh of the avocado, then add to a second medium bowl and roughly mash with a fork. Add the reserved pinch of garlic and season with salt and pepper. Mix well, then set aside.
  • SPICY! The spice blend is hot, use less if you are sensitive to heat. In a large bowl, combine the sweetcorn, shredded Cheddar cheese, remaining spring onion, remaining coriander, the Mexican Fiesta spice blend (see ingredients), plain flour, egg and milk. TIP: Lift out some of the mixture with a spoon, if it's too wet and doesn't hold its shape, add a little more flour!
