This cheesy loaded cauliflower casserole recipe needs just 10 minutes prep. All the flavors of a loaded baked potato, without the carbs. Easy & delicious!

1 large head Cauliflower ((cut into small florets))
2 tbsp Unsalted butter ((melted))
Sea salt
Black pepper
2/3 cup Sour cream
1/4 cup Heavy cream
2 cloves Garlic ((minced))
1 1/2 cup Cheddar cheese ((shredded, divided))
6 tbsp Bacon bits ((cooked, divided))
1/4 cup Green onions ((chopped, divided))

Steps:

  • Preheat the oven to 450 degrees F (232 degrees C).
  • In a large bowl, toss the cauliflower florets with butter. Season with sea salt and black pepper.
  • Transfer the cauliflower to a small 1.5 quart (1.4 L) casserole dish in a single layer. (Line the pan unless it's glass or stoneware. If there's too much cauliflower to fit in a single layer, roast on a larger baking sheet instead.) Roast in the oven for 15-20 minutes, until crisp-tender.
  • Meanwhile, in the same bowl, whisk together the sour cream and heavy cream, until smooth. Stir in the minced garlic, half of the cheddar cheese, half of the bacon bits, and half of the green onions. If desired, season sauce with sea salt and black pepper. (Don't oversalt - it will get more salty as the cheese melts later.)
  • When the cauliflower is done roasting, take it out and leave the oven on. Add the cauliflower to the bowl and mix with the sauce.
  • Return the cauliflower mixture to the casserole dish. Top with remaining cheese and bacon bits.
  • Bake for 5-10 minutes, until the cheese melts. Top with remaining green onions.

1 large head cauliflower, cut into florets
½ cup sour cream
½ cup mayonnaise
1 clove garlic, minced
½ teaspoon salt
¼ teaspoon ground black pepper
2 cups shredded Colby-Monterey Jack cheese, divided
1 (8 ounce) package baby bella mushrooms, roughly chopped
6 tablespoons chopped fresh chives, divided

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Grease a 9x13-inch baking dish.
  • Place turkey bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on paper towels and crumble.
  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add cauliflower, cover, and steam until tender, 15 to 20 minutes.
  • Combine sour cream, mayonnaise, garlic, salt, and black pepper in a large bowl; add cauliflower, 1/2 of the bacon, 1 cup Colby-Monterey Jack cheese, mushrooms, and 3 tablespoons chives and mix well. Transfer mixture to the prepared baking dish and top with remaining bacon and cheese.
  • Bake in the preheated oven until bubbling and cheese is melted, about 20 minutes. Sprinkle remaining chives over casserole.

Yummy substitute for potatoes, side dish or my family liked it so much I think we could make it a meal. I mixed all ingredients together in the baking dish and skipped the extra dishes and I left out the mushrooms and decreased the amount of chives but when I entered the recipe I entered it just as I found it on facebook. My family is still raving about this dish.

6 -8 slices cooked bacon, crumbled
6 tablespoons chopped chives
1/2 cup mayonnaise
1/2 cup sour cream
2 cups colby-monterey jack cheese or 2 cups cheddar cheese
8 ounces sliced mushrooms (optional)

Steps:

  • Preheat oven to 425.
  • In a large pot boil water and cook cauliflower for 8-10 minutes, drain and let cool.
  • In a large bowl combine sour cream, mayonaise, 1/2 of crumbled bacon, 3 TBS chives, 1 cup cheese, mushrooms and caulflower, mix well.
  • Place mixture in baking dish and cover with remaining 1 cup of cheese and bacon.
  • Bake for 15-20 minutes until cheese is melted. Top with remaining chives and serve.

2 lb cauliflower florets, cut in bite-size pieces
1 box cream cheese, softened (8 ounces)
1/2 c sour cream
1 1/2 c sharp cheddar, finely shredded
1 1/2 c Monterey jack cheese, finely shredded
1/2 tsp garlic powder
1/2 tsp onion powder
6 slice crispy cooked bacon, coarsely chopped
1/4 c chopped fresh chives (reserve one tablespoon for the top)
salt and pepper, to taste

Steps:

  • 1. Steam cauliflower until fork tender; approximately 10 minutes. Drain well in colander.
  • 2. Preheat oven to 425 degrees. Grease 9 x 13 inch baking dish.
  • 3. In a large bowl combine cream cheese, sour cream, cheddar cheese, Monterey Jack, garlic powder and onion powder. Mix until creamy and smooth. Gently stir in cauliflower, 1/2 of the bacon and chives. Season with salt and pepper to taste.

6 slices bacon, cut 1/2-inch thick
2 medium heads cauliflower, cut into bite-size florets (3 to 4 pounds total)
Kosher salt and freshly ground black pepper
6 ounces cream cheese, at room temperature
2 cups shredded Cheddar
4 scallions, white and light green parts only, thinly sliced
2/3 cup sour cream

Steps:

  • Preheat oven to 425 degrees F.
  • Cook the bacon in a medium nonstick skillet over medium heat, stirring occasionally, until brown and crispy, 6 to 7 minutes. Transfer to a paper towel-lined plate. Reserve 2 tablespoons of the bacon drippings.
