ALMOND BUTTER COOKIES

These Almond Butter Cookies are the tastiest I've tried and make a great addition to your regular cooking baking.

Number Of Ingredients 11

2 1/2 c flour
1/2 tsp baking powder
1/2 tsp baking soda
1 tsp salt
16 Tbs (2 sticks) unsalted butter, softened but still cool
1 c brown sugar
1 c granulated sugar
1 c almond butter
2 large eggs
2 1/2 tsp vanilla
1 c almonds, ground to resemble coarse breadcrumbs

Steps:

  • Line baking sheet with parchment paper or spray with nonstick cooking spray.
  • Preheat oven to 350 degrees F.
  • Combine flour, baking soda, baking powder, and salt. Set aside.
  • Beat butter until creamy.
  • Add sugars beating until fluffy, approximately 3 minutes.
  • Scrap the bowl as necessary.
  • Beat in almond butter until incorporated.
  • Beat in vanilla and then eggs, one at a time.
  • Gently stir in the dry ingredients (I switched to the paddle on my kitchen aid mixer).
  • Add ground almonds and stir until just incorporated.
  • Roll cookies into 2 Tbs sized balls.
  • Place on baking sheets and press each ball twice with a fork to make a crisscross design.
  • Bake cookies for 10-12 minutes.
  • Edges should be slightly browned and the cookies puffed.
  • Cool on sheets for 4 minutes before transferring to a cookie cooling rack.

Need to bring cookies to a pot luck were one girl could not have flour and one could not have peanuts. Tweeked an old recipe to fit everyones needs. Hope you like it.

1 cup almond butter
1 cup Splenda Sugar Blend for Baking
1 large egg, beaten
1 teaspoon baking soda
Splenda Sugar Blend for Baking, for rolling cookies in

Steps:

  • Preheat oven to 350* and line cookie sheets with parchment paper.
  • Beat together almond butter and sugar in a large bowl with an electric mixer until smooth.
  • Add beaten egg and baking soda to almond butter mixture and beat until well combined.
  • Roll 1 teaspoon of dough into a ball and roll in sugar then place on cookie sheet.
  • Place dough balls one inch apart on cookie sheet and either leave as little balls (which is how we like them) or flatten with tines of fork making a cross pattern.
  • Bake until slightly puffed and a golden pale, about 10 minutes, careful not to over cook.
  • Cool cookies on parchment paper about 2 minutes and then transfer with spatula to rack to cool at least 10 more minutes.

1 cup crushed almonds
1 cup butter, softened
7 tablespoons white sugar
½ teaspoon vanilla extract
½ teaspoon almond extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix all-purpose flour, almonds, butter, sugar, vanilla extract, and almond extract in a large bowl until well blended.
  • Roll the dough into walnut-sized balls and place 2 inches apart onto ungreased baking sheets.
  • Bake in preheated oven until golden brown, about 15 minutes.

My favorite butter cookie. They're delicate in form and flavor. So simple, they're great for beginner bakers. Tiny little cookies can be sandwiched with a favorite jam if you like. They're so tender you'll lose a few in the process but the pieces taste good too.

1 cup unsalted butter, softened
1/2 cup sugar
3/4 cup blanched ground almonds (about 1/3 cup whole almonds)
2 cups flour
confectioners' sugar, for dusting

Steps:

  • Combine all ingredients except confectioners' sugar and mix with fingertips until dough forms a solid ball.
  • Divide dough in half and shape each half into a 1 1/4" log.
  • Wrap each in plastic wrap and chill until firm, about 1 hour.
  • Preheat oven to 350°.
  • Slice logs into very thin 1/8" thick cookies and bake on ungreased cookie sheet for 10-12 minutes or until very lightly browned.
  • Remove from cookie sheet immediately and cool on wire rack.
  • The cookies are very fragile so handle carefully.
  • Dust with powdered sugar and store in shallow, airtight container so there's not too much weight on the bottom cookies.
  • Cookies can be kept for at least two weeks.

1/2 cup butter, softened
1/2 cup shortening
6 ounces almond paste
1-1/3 cups sugar
1 large egg, room temperature
2 cups all-purpose flour
1 teaspoon baking soda

Steps:

  • In a large bowl, cream the butter, shortening, almond paste and sugar until light and fluffy. Beat in egg. Combine flour and baking soda; gradually add to the creamed mixture. , Roll into 1-in. balls. Place 2 in. apart on ungreased baking sheets. Bake at 400° for 8-10 minutes or until lightly browned. Remove to wire racks to cool.

50g whole almond
100g soft butter
2 tbsp caster sugar
1 tbsp dark rum
140g-175g plain flour , plus extra for rolling out
icing sugar , to serve (about 100g)

Steps:

  • Heat oven to 170C/150C fan/gas 3 and roast the almonds for 5-10 mins until they are a pale golden colour. Cream together the butter, sugar, rum and a pinch of salt, then add the flour until the dough just comes together - it will be soft. Roughly chop the almonds and add them to the dough. Carefully roll out the dough on a well-floured surface to a 4-5mm thickness and cut out small cookies roughly 3-4cm across. Freeze the cookies on a baking sheet for 20 mins to harden.
  • Bake the cookies in the oven for about 20 mins until just set - they will still be very pale. Lay out on a wire rack and dust icing sugar on both sides while they are still warm, being careful not to break them as you turn them. The icing sugar will melt. When they are cool, sprinkle them extremely generously with more icing sugar so that they are completely white. Store in an airtight container for up to 2 days, or freeze for up to 2 months.
