EASY TWO BEAN BEEF CHILI
Easy two bean beef chili is a quick and easy recipe that your family will love. It's so hearty and is full of great Tex-Mex flavor.

Steps:
- Heat oil in large skillet over medium high heat.
- Once hot, add ground beef and start breaking it up with a spoon.
- After the beef is broken up and is starting to brown, add the onion and garlic.
- Continue cooking until beef is cooked through and the onion is soft and translucent.
- Stir in both cans of beans and the crushed tomatoes.
- Add salt, pepper and the spices, stirring until well combined.
- Bring mixture to a bubble.
- Reduce heat to low, cover and simmer for at least 15 minutes to allow flavors to develop.
- Serve with desired toppings.

- Season meat with adobo. Brown in hot oil in large saucepan on medium heat; drain. Add onions, peppers and garlic; cook 5 min. or until tender, stirring occasionally.
- Stir in chili powder and cumin; cook 2 min. Stir in all remaining ingredients except cheese. Bring to boil; simmer on low heat 30 min., stirring occasionally.
- Serve topped with cheese.

- Place all of the ingredients, except the corn, in a saucepan and cook over medium heat until the chili begins to boil. Cover, reduce heat to low, and simmer for 20 minutes, stirring occasionally.

Steps:
- Pour tomatoes into a large stockpot over medium heat.
- Heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Transfer beef to the stockpot.
- Cook and stir chorizo in the same hot skillet over medium-high heat until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Transfer chorizo to the stockpot.
- Heat oil in the same skillet over medium-high heat. Saute onions and garlic until very well cooked and translucent, 7 to 10 minutes. Add cumin and chili powder and cook for about 3 minutes more. Transfer onions to the stockpot with lime juice, salt, and black pepper. Stir black beans, pinto beans, and kidney beans into the pot.
- Heat the skillet over medium-high heat and lightly saute bell peppers, about 5 minutes. Add to the stockpot.
- Add corn to the stockpot and season with additional salt and pepper. Add hot sauce to taste and simmer for 30 minutes more. Sprinkle cilantro on top and serve.

SPICY RED BEAN CHILI
Great for a really cold winter day, this will surely warm you up! Red beans cooked in a rich, spicy tomato sauce.

Steps:
- 1. Put oil in a medium saucepan and let it heat for a few minutes on medium/high heat. Add cumin seeds and let it cook for about 30 seconds, then add onions and let it soften.
- 2. Once onion is soft and a little transluscent add garlic paste and ginger paste and let it fry for about 30 seconds.
- 3. Now add all the spices- turmeric, garam masala powder, salt and crushed red chilli. Cook until you can smell the spices (for about 40 sec.)
- 4. Add tomatoes, green chillies, and cook until tomatoes are soft (taste a little if its not spicy enough then add some more green chillies, add more salt to taste).
- 5. Add the red beans and stir with all thespices. Add about ¼ cup water and cover the pan. Cook on medium low heat for 10-15 min keep checking every 5 min to make sure the heat is not too high.
- 6. After 10-15 min are up with a wooden spoon crush the beans (not completely all of them, just slightly so the crushed ones can create a paste).
- 7. Add more water if its too dry as you crush and taste for salt add more if needed.
- 8. Top with cilantro before serving .Served with warmed pita bread or dinner roll is best or with cucumbers sticks, salad and feta cheese.

- add tomatoes and garlic, cook for about 10 minutes, then stir in white wine and vegetable stock.

- Brown ground sirloin with Worcestershire in pan, drain any fat. Remove ground beef and add to 2 quart pot along with tomatoes and tomato sauce and start heating while sauteing onions and peppers until soft. Combine remaining ingredients except beans in 2 quart pot, cover and simmer for 2 hours. Add red beans 10 minutes before serving.
