Vegetable oil
1 tablespoon kosher salt plus 1 1/2 teaspoons
3/4 pound linguine
3 tablespoons unsalted butter
2 1/2 tablespoons good olive oil
1 1/2 tablespoons minced garlic (4 cloves)
1 pound large shrimp (about 16 shrimp), peeled and deveined
1/4 teaspoon freshly ground black pepper
1/3 cup chopped fresh parsley leaves
1/2 lemon, zest grated
1/4 cup freshly squeezed lemon juice (2 lemons)
1/4 lemon, thinly sliced in half-rounds
1/8 teaspoon hot red pepper flakes

Steps:

  • Drizzle some oil in a large pot of boiling salted water, add 1 tablespoon of salt and the linguine, and cook for 7 to 10 minutes, or according to the directions on the package.
  • Meanwhile, in another large (12-inch), heavy-bottomed pan, melt the butter and olive oil over medium-low heat. Add the garlic. Saute for 1 minute. Be careful, the garlic burns easily! Add the shrimp, 1 1/2 teaspoons of salt, and the pepper and saute until the shrimp have just turned pink, about 5 minutes, stirring often. Remove from the heat, add the parsley, lemon zest, lemon juice, lemon slices, and red pepper flakes. Toss to combine.
  • When the pasta is done, drain the cooked linguine and then put it back in the pot. Immediately add the shrimp and sauce, toss well, and serve.

Quick and easy to make, this is a hit for a dinner party or just a quick family dinner. Already cooked salad shrimp works great! I also occasionally substitute chicken for the shrimp for another great flavored dish!

1 ½ pounds cooked fresh shrimp
6 tablespoons butter
1 tablespoon minced garlic
1 cup heavy whipping cream
½ cup chopped parsley
3 tablespoons chopped fresh basil
½ teaspoon dried thyme
¾ cup grated Parmesan cheese
salt to taste
ground black pepper to taste
1 (16 ounce) package linguini pasta

Steps:

  • Cook pasta until al dente according to package directions.
  • While linguine is cooking, melt butter or margarine in a large skillet. Add garlic, and saute briefly to release flavor. Add cream; heat just to boiling, stirring frequently. Lower heat, and stir in shrimp, parsley, basil, and thyme. Continue cooking until shrimp are just heated through. Do not overcook shrimp! Remove sauce from heat.
  • Drain the pasta, and toss lightly with the sauce. Toss again with cheese, and salt and pepper to taste. Serve immediately.

3/4 pound linguini
2 tablespoons olive oil
2 garlic cloves, minced
1 pound large shrimp, peeled and deveined
1/3 cup freshly squeezed lemon juice
1/2 cup white wine
1 bunch asparagus stalks, trimmed
Salt and freshly ground black pepper
1 cup freshly chopped flat-leaf parsley
1 container cherry tomatoes, halved

Steps:

  • Bring a large pot of water to a boil. Add the linguini and cook according to the directions on the box. Drain, reserving 1 cup of the cooking water.
  • Meanwhile, heat the olive oil in a large skillet over a medium-high flame. Add the garlic and saute for 1 minute. Add the shrimp and cook for 3 to 4 minutes, until the shrimp turn pink. Remove the shrimp from the pan and set aside. Add the lemon juice, white wine, and the reserved cup water to the skillet. Let simmer until the liquid is reduced by about half. Salt and saute the asparagus. Cut into 1-inch pieces. Return the shrimp to the pan and stir in the parsley. Add the drained linguini to the shrimp mixture, tossing to combine. Add asparagus and tomatoes. Season with salt and pepper, to taste.

1 lb frozen shrimp
1/2 lb linguine
4 garlic cloves, fresh, finely chopped
14 1/2 ounces Italian-style diced tomatoes
1/2 fresh lemon

  • Defrost shrimp under cold running water 3-5 minutes. Pat Dry.
  • Cook pasta according to package directions.
  • While pasta is cooking, heat 2 tablespoons of olive oil on low in large skillet.

1/2 cup olive oil

1/4 thick piece fresh ginger, peeled
pinch of crushed red pepper
salt to taste
1 tablespoon fresh lemon juice
1 cup dry white wine
2 tablespoons chopped fresh flat-leaf parsley
1 pound linguini noodle

Steps:

  • 1 Rinse the shrimp and pat them dry. Cut each shrimp into 1/2-inch pieces. 2 Pour the oil into a skillet large enough to hold all of the cooked pasta. Add the garlic, ginger, and crushed red pepper. Cook over medium heat until the garlic is golden, about 2 minutes. Add the shrimp and a big pinch of salt. Cook, stirring, until the shrimp are cooked through, about 2 minutes. Add the lemon juice and wine and bring to a simmer. Cook 2 minutes. Stir in the parsley. Remove from the heat. 3 Bring at least 4 quarts of water to a boil in a large pot. Add 2 tablespoons of salt, then the pasta. Stir well, gently pushing the pasta down until it is completely covered with water. Cook over high heat, stirring frequently, until the pasta is al dente, tender yet still firm to the bite. I saw this recipe made on 30 Minute Meals. These shrimp and scallops in the light tomato broth are delicious. I've even made this without the saffron (with a touch more garlic and spice) and it was still full of flavor. I substitute vegetable broth for the chicken, but feel free to add it back if you prefer.

1 lb sea scallops
1/4 cup flour, seasoned with
salt and pepper
1 tablespoon extra virgin olive oil
2 tablespoons butter
2 cloves garlic, chopped
1 large shallot, finely chopped
1/2 teaspoon crushed red pepper flakes
1 cup dry white wine
1 cup vegetable stock or 1 cup fish stock (or chicken if you prefer)
1 (14 ounce) can diced tomatoes with juice
1/4 teaspoon saffron thread
1 lb large shrimp, peeled and deveined
12 leaves fresh basil, shredded or torn
1 lemon, zest of

Steps:

  • Lightly coat the sea scallops in flour.
  • Preheat a large skillet over medium high heat.
  • Add oil and butter.
  • When butter melts into oil, add scallops.
  • Brown scallops 2 minutes on each side, then remove from pan.
  • If the pan looks a little dry, add an additional drizzle of olive oil to the pan, then add the garlic, shallots, and crushed red pepper flakes.
  • Reduce heat, and saute garlic and shallots 2 minutes, stirring constantly.
  • Add wine to the pan and free up any bits that are stuck to the pan.
  • Reduce wine about a minute, then add stock, tomatoes and saffron threads.
  • When liquids come to a bubble, add shrimp and cook 3 minutes.
  • Return scallops to the pan and cook shrimp and scallops 2 to 3 minutes longer.
  • Transfer shrimp and scallops to a serving dish and top with basil and lemon zest.
  • Serve with crusty bread to enjoy the juices.
