1 roasted red pepper (from a jar or roast one yourself)
30ml olive oil
50g walnuts , toasted, plus extra to serve
1 small garlic clove
100g linguine or spaghetti
parmesan or vegetarian alternative, grated, to serve

Steps:

  • Blitz the roasted red pepper with the olive oil, walnuts and garlic in a food processor, season well and set aside.
  • Bring a pan of salted water to the boil, add the pasta and cook for 1 min less than the pack instructions and drain, reserving a ladleful of cooking water. Tip the pasta back into the pan, along with the reserved cooking water and red pepper sauce, and return to the heat to warm through. Tip the pasta into a bowl and top with the parmesan and some chopped toasted walnuts. Season and serve.

3 tablespoons extra-virgin olive oil
2 large red bell peppers (14 to 16 ounces), stemmed, seeded, cut into 1/3-inch cubes
16 Kalamata olives, pitted, quartered
3 large garlic cloves, pressed
1/4 teaspoon (generous) dried crushed red pepper
1 1/4 cups chopped fresh basil, divided
1 cup finely grated Parmesan cheese plus additional for passing
1 tablespoon white balsamic vinegar

Steps:

  • Cook pasta in large pot of boiling salted water until just tender but still firm to bite. Drain, reserving 1 cup cooking liquid.
  • Meanwhile, heat oil in large nonstick skillet over medium-high heat. Add bell peppers, olives, garlic, and crushed red pepper. Sauté until bell peppers are tender, 4 to 5 minutes. Add pasta, 1/2 cup reserved pasta cooking liquid, 1 cup basil, 1 cup cheese, and vinegar. Toss until sauce coats pasta, adding more reserved cooking liquid by 1/4 cupfuls if dry, about 1 minute. Season to taste with salt and pepper. Transfer to bowl. Sprinkle with remaining 1/4 cup basil and serve, passing additional cheese.

1 red bell pepper, finely chopped

1 8-ounce bottle clam juice
1 pound fresh lump crabmeat, picked over
1/4 cup finely chopped fresh parsley
1/3 cup pine nuts, toasted
Freshly grated Parmesan cheese

Steps:

  • Melt butter in heavy large skillet over medium heat. Add bell pepper; cover and cook 2 minutes. Add garlic and crushed red pepper; cover and cook 2 minutes. Increase heat to high, add wine and boil 2 minutes. Set aside.
  • Cook pasta in large pot of boiling salted water until just tender but still firm to bite, stirring occasionally. Drain pasta, reserving 1/2 cup cooking water.
  • Return pasta to pot. Add clam juice, 1/2 cup cooking water and bell pepper mixture. Cook over high heat until pasta absorbs half of liquid, about 2 minutes. Add crab and toss until heated through, about 1 minute. Mix in parsley. Season to taste with pepper. Divide pasta among bowls. Sprinkle with pine nuts. Serve, passing cheese separately.

3 large red bell peppers, seeded, cut into thin strips
2 tablespoons minced garlic
8 tablespoons olive oil
1 1/2 pounds linguine
1 1/2 cups chopped onions
3/4 cup coarsely chopped walnuts (about 6 3/4 ounces), toasted
1/3 cup chopped fresh parsley
1 1/2 cups freshly grated Parmesan cheese
Additional freshly grated Parmesan cheese

Steps:

  • Combine bell peppers, garlic and 6 1/2 tablespoons oil in large bowl. Season to taste with salt and pepper. Cover and let stand at room temperature 2 hours. (Can be made 1 day ahead. Refrigerate.)
  • Cook linguine in large pot of boiling salted water until tender but still firm to bite, stirring occasionally. Drain.
  • Meanwhile, heat 1 1/2 tablespoons oil in heavy large skillet over medium-high heat. Add onions; sauté until tender and brown, about 6 minutes. Add bell pepper mixture; sauté 4 minutes. Add pasta to skillet and toss to coat. Transfer to large bowl. Add walnuts, parsley and 1 1/2 cups cheese; toss to coat. Serve, passing additional Parmesan cheese separately.

Creamy Linguini With Chicken, Zucchini and Red Bell Pepper image

A tasty pasta dish with a lightened up cream sauce and filling ingredients. I originally got this recipe from Recipe4Living and it was considered a budget dish. I've changed it up a few times to make it to our liking and included chicken and peppers. I have also changed the creamy sauce recipe to make it lighter then the original. Not hard to do, but definitely helps in reducing calories!

2 tablespoons olive oil
2 zucchini, diced
1 large red pepper, diced
2 garlic cloves, minced
1/2 teaspoon salt
1/4 teaspoon crushed red pepper flakes
2 teaspoons parsley
12 ounces linguine, cooked
1/2 lb chicken, cooked and cut into bite size pieces
1/2 cup 2% low-fat milk
1/2 cup parmesan cheese

Steps:

  • Heat oil in large skillet over medium heat. Add diced zucchini, diced red pepper and minced garlic to hot oil. Season with salt and red pepper flakes. Cook, turning occasionally, until zucchini and red pepper are slightly browned on each side, about 20 minutes. Meanwhile, bake chicken in shallow glass baking dish at 350 degrees for 25 minutes and bring a large pot of generously salted water to boil. Cook pasta until al dente, about 8 to 10 minutes. Drain, and set aside. Stir 2% milk into zucchini and red pepper, and simmer until it is reduced by about half, about 10 minutes. Cut chicken into bite sized pieces. Add chicken and pasta to skillet, and stir well. Mix in 1/2 cup of parmesan cheese. Sprinkle parsley over top and toss.

2/3 cup whipping cream
1/2 cup dry white wine

9 ounces fresh linguine
1/4 cup toasted pine nuts

Steps:

  • Heat oil in heavy large skillet over medium-high heat. Add peppers; sauté until crisp-tender, about 4 minutes. Add green onions and sauté 2 minutes. Transfer vegetable mixture to bowl. Add cream and wine to same skillet and simmer until mixture thickens, about 3 minutes. Mix in cheese and all but 1 cup vegetable mixture. Simmer sauce 2 minutes to blend flavors; season with salt and pepper.
  • Meanwhile, cook pasta in large pot of boiling salted water until just tender but still firm to bite, stirring occasionally. Drain, reserving 1/2 cup cooking liquid.

PARMESAN AND PEPPER PASTA

I like to eat this pasta after it's been refridgerated - it helps bring out the flavors and kick that the red pepper olive oil adds. However, it's still good when it's hot! *By the way - I had to guess on the number of servings and the size. Usually I use half of this amount and it makes two fairly generous servings!

1 (12 ounce) box of tri-color pasta (I use Barilla rotini, but regular penne or whole wheat penne work just as well!)
2 quarts water
1 dash salt
1/2 raw red pepper
1/2 raw orange bell pepper
1/2 raw yellow pepper
1 red vine tomatoes
2 teaspoons garlic powder
1 teaspoon salt
2 teaspoons pepper
1 1/2 tablespoons red pepper olive oil
4 tablespoons red pasta sauce (any flavor will do, I use Bertolli olive oil & garlic)
3 tablespoons parmesan cheese
2 tablespoons pesto sauce
1/2 tablespoon oregano
1/2 tablespoon basil
1 dash pepper

Steps:

  • Bring water to a rolling boil and add a dash of salt and the pasta.
  • While the pasta cooks for 8-10 minutes (depending on desired firmness), chop peppers into small chunks. Chop the tomato into about 16 different segments - any smaller, and they will get lost when you mix all the ingredients together.
  • Sprinkle peppers and tomato with garlic powder, salt, and pepper.
  • Remove pasta from heat, drain water, and empty into a different container. Set aside.
  • Using the same pot (this makes sure you get the most flavor, so don't switch pots), put in half a tablespoon of red pepper olive oil and let it coat the bottom. Dump in half of the chopped peppers; stir them in the oil to make sure they are coated.
  • Let the peppers cook for about 5 minutes (or until tender), stirring occasionally to make sure they aren't sticking to the bottom. Then empty them into the container with the pasta.
  • Add another half tablespoon of red pepper olive oil to the pan, let it coat the bottom, and let the other half of the peppers cook for about 5 minutes. Then empty them into the pasta container as well.
  • Add the last half tablespoon of red pepper oil to the pan and let it coat the bottom. Add the tomato chunks. Let them cook for 2-3 minutes.
  • Pour the pasta and peppers back into the pot with the tomatoes and stir.
  • Add pasta sauce, parmesan cheese, and pesto. Mix until the pasta is evenly coated.
  • Add oregano, basil, and pepper. Mix.
  • Refrigerate until cold or eat it now! :).
  • It will keep for several days if refrigerated in a tupperware container.

1/4 cup olive oil
1 large onion, chopped
3 cups sliced mushrooms
1 (15 ounce) jar roasted red peppers
2 (12 ounce) packages penne pasta
1 (12 ounce) container shredded parmesan cheese
salt, to taste
pepper, to taste
onion powder, to taste
garlic, to taste

Steps:

  • Heat olive oil on medium to high heat in large skillet or wok.
  • Add mushrooms, onions and all seasonings and saute for 15 to 20 minutes (Stir-fry style).
  • Meanwhile, slice roasted red bell peppers as desired.
  • Add the peppers to onions and mushrooms and continue to saute for another 5 minutes.
  • Cook pasta and drain.
  • Toss contents of skillet in with pasta and the parmesan cheese (I always serve more parmesan in a separate bowl as well).
