1 (8 ounce) package linguini pasta
2 tablespoons butter
½ pound fresh mushrooms, sliced
½ cup butter
2 cloves garlic, minced
1 (3 ounce) package cream cheese
2 tablespoons chopped fresh parsley
¾ teaspoon dried basil
⅔ cup boiling water
½ pound cooked shrimp

Steps:

  • Bring a large pot of lightly salted water to a boil. Add linguini and cook until tender, about 7 minutes. Drain.
  • Meanwhile, heat 2 tablespoons butter in a large skillet over medium-high heat. Add mushrooms; cook and stir until tender. Transfer to a plate.
  • In the same pan, melt 1/2 cup butter with the minced garlic. Stir in the cream cheese, breaking it up with a spoon as it melts. Stir in the parsley and basil. Simmer for 5 minutes. Mix in boiling water until sauce is smooth. Stir in cooked shrimp and mushrooms; heat sauce through.
  • Toss linguini with shrimp sauce and serve.

16 ounces dry spaghetti
1 tablespoon olive oil
2 to 3 cloves garlic, (minced)
8 ounces cream cheese, (room temperature, cut into cubes)
¼ cup grated parmesan cheese
⅔ cup cooking water, (plus more if needed)
salt and fresh ground pepper, (to taste)
cracked black pepper, red pepper flakes, and/or chopped fresh parsley, (for garnish, optional)

Steps:

  • Cook spaghetti according to the directions on the package. Do not drain it yet.
  • In the meantime, heat olive oil in a large skillet set over medium heat.
  • Add garlic to the oil and cook for 30 seconds, or until fragrant. Do not burn the garlic.
  • Increase heat to medium-high; add cream cheese to the skillet and ⅔ cup of the cooking pasta water.
  • Whisk the cream cheese and water until well combined.
  • Whisk in the parmesan cheese; taste for salt and pepper and adjust accordingly. If needed, add more water to reach desired sauce consistency.
  • Drain the spaghetti and return the spaghetti back to the cooking pot.
  • Add the cream cheese sauce to the spaghetti; stir until combined.
  • Garnish with a crack of black pepper , red pepper flakes, and/or chopped parsley.
  • Serve and enjoy!

I found a similar recipe in our local newspaper, but it did not have the taste and flavor that I feel did it justice. So, I made numerous additions and came up with this tasty, delicious recipe.

1 cup small penne pasta
1 cup tri-color spiral pasta (rotini vegetable pasta)
2 tablespoons vegetable oil
1 tablespoon salt
1 tablespoon extra virgin olive oil
1 tablespoon butter
1/2 cup chopped small onion
2 large garlic cloves, chopped small
1 cup chopped chopped button mushroom
1/2 cup finely chopped sweet red pepper
1/2 cup finely chopped green pepper
2 tablespoons pesto sauce (I use 2 cubes of homemade frozen pesto)
1/3 cup Philadelphia Cream Cheese (herb and vegetable)
1 teaspoon dried basil or 2 tablespoons of finely chopped fresh basil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)

Steps:

  • In a large cooking pot or pasta pot, fill 3/4 full with hot water and bring to boil.
  • Add 2 tablespoons of vegetable oil and 1 tablespoon of salt and penne and rotini pasta.
  • Bring to boil and continue to cook uncovered for about 20 minutes or until el dente.
  • Meanwhile, in a large frying pan on medium-high heat add olive oil and butter.
  • Add onions and garlic and cook for 3 minutes, stirring often, but do not burn.
  • Add mushrooms, sweet red pepper, green pepper and stir fry for 4 minutes.
  • Add pesto, basil, salt, pepper and red pepper flakes, mix well to blend.
  • When pasta is cooked, drain well but reserve 1/2 cup of cooking water.
  • Add pasta and 1/4 cup of pasta water to the mixture in the frying pan and stir well to coat.
  • Add the cream cheese and stir well to coat the pasta.
  • Reserve the remaining 1/4 cup of pasta water to be used later if necessary.
  • Serve pasta immediately.
  • Refrigerate any unused portions. Cover with plastic wrap.
  • To re-warm the next day. Press parchment paper into a frying pan. Using scissors, cut the protruding parchment paper level with the top of the frying pan.
  • Add 1/4 cup of pasta water and the pasta and
  • stir to blend.
  • Cover the frying pan with a lid and heat the pasta on medium heat for about 5 minutes, stirring occasionally.
  • Serve hot.

3 shallots, minced
2 cloves garlic, chopped
1/4 teaspoon red pepper flakes

2 cups tomato puree
1/4 cup heavy cream
1 pound linguine
1/4 cup freshly grated parmesan cheese, plus more for garnish
1 cup baby arugula, roughly chopped
1/4 cup fresh tarragon, roughly chopped
1/2 cup fresh basil, roughly chopped, plus more for garnish
1 cup frozen peas, thawed
2 1 1/2-pound lobsters, steamed, meat removed and roughly chopped

Steps:

  • Heat a large straight-sided skillet over medium heat. Add the olive oil and bacon and cook 8 minutes, or until the bacon is beginning to crisp. Add the shallots, garlic and red pepper flakes and cook an additional 3 minutes, or until fragrant. Add the salt, tomato puree and heavy cream and stir to combine. Reduce the heat to low and simmer 5 minutes.
  • Bring a large pot of salted water to a boil. Cook the linguine 1 minute less than the suggested cooking time, about 10 minutes.
  • Using tongs, remove the pasta from the water and add directly to the pan with the sauce. Sprinkle the cheese directly on the naked pasta and then toss to coat in the sauce. Add up to 1 cup of pasta water, as needed, to loosen the sauce. Stir in the arugula, tarragon, basil, peas and lobster and simmer an additional minute, or until everything is heated through. Garnish with additional parmesan and basil, if desired.

Steps:

  • Cook the pasta following pack instructions. Reserve 100ml of the water and drain the pasta in a colander.
  • Meanwhile, heat the oil in a frying pan on a medium heat and fry the garlic and spinach for 3 mins until wilted. Add the soft cheese and heat until melted. Stir in most of the parmesan, then add the shredded chicken, peas and some of the pasta water. Bring to the boil and bubble for 2-3 mins until the chicken and peas are completely heated through.

2 tsp olive oil
1 garlic clove, finely sliced
100ml white wine
2 tbsp reduced-fat crème fraîche
juice ½ lemon (or to taste)
2 handfuls (150g) raw peeled prawns
small bunch chives, finely chopped

Steps:

  • Cook the pasta. Meanwhile, heat the oil in a pan and gently fry the garlic for 2 mins. Tip in the wine and bubble over a high heat for 1 min, then lower the heat and stir in the crème fraîche and lemon juice. Season to taste with salt and plenty of black pepper.
